Recipe video above. Barbecue pork ribs made in the oven! It's easy, the ribs are meltingly tender and it's packed full of flavour from the rub, braising the ribs in cider (see Note 1 for subs!) and the homemade barbecue sauce glaze! 2.5 tsp paprika powder
2 tsp garlic powder ((sub with onion powder))
1.5 tsp onion powder ((sub with garlic powder))
1 tsp cayenne pepper ((omit for not spicy))
1.5 tsp dried thyme
1.5 tsp dried oregano
1.5 tsp salt
0.5 tsp black pepper
2 - 2.5kg / 4 - 5lb pork ribs (2 racks)
3/4 cup sweet alcoholic apple cider (hard cider) (, or apple juice (Note 2))
1 tbsp olive oil
1/2 cup apple cider vinegar ((Note 3))
1 1/2 cups tomato ketchup ((or Aussie tomato sauce))
1/2 cup water ((or use remaining apple cider!))
1 1/2 tbsp molasses (, orginal (not blackstrap, Note 4))
1/3 cup brown sugar
2 tsp mustard powder
1 1/2 tsp garlic powder
2 tsp Worcestershire sauce
1 tsp salt
1 tsp black pepper
1 tsp Tabasco or cayenne pepper ((optional, for spiciness))

Steps:

  • Combine the Rub ingredients and rub onto both sides of the ribs (most on meaty side). Set aside to marinate for 20 minutes (or overnight).
  • Preheat oven to 160°C/320°F (all oven types).
  • Place ribs on a tray in a single layer. Pour apple cider underneath the ribs, cover with foil then bake for 1 hour 30 minutes or until the meat is pretty tender (Note 5).
  • Remove from oven, turn up to 180°C/350°F. Remove foil, drizzle with olive oil, then return ribs to oven for 15 minutes or until rub becomes nice and crusty.
  • Line a new tray with foil then baking / parchment paper (you'll thank me later).
  • Remove ribs from oven, transfer to lined tray. Pour any juices from tray over the ribs.
  • Flip ribs so the bonier side is up. Slather with Barbecue Sauce, then bake 10 minutes.
  • Remove from oven, then turn ribs over so the meaty side is up. Slather with Barbecue Sauce, bake 5 minutes. Repeat 2 or 3 more times until you've got a thick glaze on the ribs.
  • Cut ribs into individual or multiple rib portions and serve with remaining Barbcue Sauce!

4 to 5 lb pork back ribs or spareribs
5 bay leaves
1 1/2 tsp cracked peppercorn
1 1/2 tsp liquid smoke
1 1/2 tsp salt
1 c water
1 c ketchup
2 c mango puree
1/2 c brown sugar
1 Tbsp rice vinegar
1 Tbsp dijon mustard
1 tsp sweet chili sauce
1/4 tsp ground coriander
1/4 tsp cumin

Steps:

  • 1. Place ribs in a roasting pan.
  • 2. Combine bay leaves, peppercorns, liquid smoke, salt and water, pour over ribs. Cover tightly with foil.
  • 3. Bake for 45 minutes in a 350 degree oven for 45 minutes.
  • 4. Combine the remaining ingredients to make the mango barbecue sauce.
  • 5. Remove the ribs from the roasting pan, and place on rack of broiler pan.
  • 6. Baste frequently with the mango barbecue sauce, broil ribs in oven, 6 inches from broiler unit until browned on both sides.

4 teaspoons of adobo or salt
mashed garlic
2 tablespoons olive oil

For the mango sauce:
1 cup mango pulp
1/4 cup soy sauce
1/2 tablespoon grated ginger
1 teaspoon mashed garlic

Steps:

  • 1. Prepare the ribs. Mix all the seasoning ingredients and apply to the ribs. Let sit for at least 1 hour. 2. Heat oven to 350ºF. Place ribs in a oven pan and roast for 1 hour. 3. While ribs cook, prepare the sauce. In a saucepan, put all the ingredients and cook 3-5 minutes. 4. Apply sauce to ribs and place in the oven for 5-8 minutes more.

2 racks of baby back or St. Louis cut spare ribs
4 tablespoons dijon mustard
1/2 cup of your favorite rub with no sugar ((or equal parts kosher salt and coarse ground pepper))
For the spritz: add one cup apple cider vinegar and one cup water to a food safe spray bottle
1 tablespoon butter
1 tablespoon olive oil
1 small yellow onion, chopped
3 cloves of garlic, minced
1 jalapeño, stems and seeds removed, chopped
1 cup apple cider vinegar
3 oz tomato paste
½ teaspoon cayenne pepper
½ tablespoon smoked paprika
½ tablespoon dry mustard
½ teaspoon kosher salt
½ teaspoon ground black pepper
1 tablespoon Worcestershire sauce
½ teaspoon fresh lime juice
1 cup mango cubes (I use frozen)

Steps:

  • Preheat your smoker to 225 degrees, we use cherry wood. Add a water pan.
  • Prepare your ribs (can be done the night before) by removing any silver skin on the bone side of the ribs. Apply Dijon mustard and coat ribs and then apply dry rub liberally.
  • Place ribs on the smoker, bone side down, for approximately 90 minutes, allowing bark to set on ribs. Then for the next 90 minutes, spritz ribs every 15 minutes. Once bones start to show, it's time to wrap.
  • Remove ribs from the smoker and place in foil. Add a generous amount of your BBQ sauce by coating the ribs and then wrap meat side facing down. When wrapping, wrap tightly. Place back on smoker for 2 hours.
  • After hour 2, remove ribs and carefully open the foil. Gently coat both sides of the ribs with more sauce and place back on smoker with bone side facing down. This will tack up the sauce. Remove after 30 minutes to 1 hour or until the sauce looks like it has set.
  • Slice and enjoy.
  • In a large pot set to medium heat melt 1 tablespoon butter and 1 tablespoon olive oil and add the onions. Stir occasionally until the onions are soft (golden/starting to brown), and sweet to the taste (roughly 20 minutes). * you may need to adjust the heat and turn it down if they are browning too fast.
  • Next add the garlic and jalapeño and stir together for 2 minutes.
  • Add the apple cider vinegar, tomato paste, and mix.
  • Add your dry seasonings, Worcestershire and lime juice, and the mango cubes and bring to a simmer. Cook for 10 minutes, or until the mango cubes have softened.
  • Using a hand immersion blender, or countertop blender, blend your sauce until smooth and there are no chunks.
  • Taste and adjust seasonings to your preference.

2 racks British free-range pork baby back ribs
6 tbsp barbecue sauce
2 fat garlic cloves, crushed
2cm piece fresh ginger, grated
Grated zest and juice 1 lime
For the mango salad
1 red chilli, cut into chunks
1 garlic clove
Juice 2 limes
3 tbsp fish sauce
Splash groundnut oil1 tsp palm sugar (or demerara sugar)
1 tsp dried shrimp paste (from larger supermarkets, Asian grocers or http://amazon.co.ukamazon.co.uk)
1 large mango, thinly sliced1 large papaya, thinly sliced
1 shallot, thinly sliced100g salted peanuts, chopped
Bunch fresh coriander leaves, roughly chopped
Bunch fresh mint leaves, roughly chopped

Steps:

  • Heat the oven to 170°C/150°C fan/gas 3½. Rub a little oil on the ribs, then put on the roasting rack in a large roasting tin. Season with salt and pepper and pour 350ml water into the tin. Cover the tin tightly with foil, then cook for 2 hours until the meat is tender (see Make Ahead). Remove the ribs and leave to cool if making ahead.
  • When ready to serve, turn up the oven to 200°C/180°C fan/gas 6. Mix the barbecue sauce with the garlic, ginger, lime zest and juice. Put the cooked ribs on a foil-lined baking tray and brush generously all over with the barbecue sauce. Cook for 20 minutes until sticky and caramelised (or see Make Ahead).
  • For the mango salad, first make the dressing. In the small bowl of a food processor whizz together the chilli, garlic, lime juice, fish sauce, oil, sugar and shrimp paste. (Or finely chop the chilli and garlic and put in a bowl, then add the lime juice, fish sauce, oil, sugar and shrimp paste and mix well.) Toss the dressing in a serving bowl with the mango, papaya, shallot, chopped peanuts and herbs. Serve straightaway with the ribs.

1 boneless pork loin, trimmed
1 teaspoon olive oil
½ mango, peeled and diced
½ small shallot, peeled and thinly sliced

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine chili powder and cocoa powder in a bowl; sprinkle over both sides of pork loin.
