- Put the pork on a board and cut off the string if your pork has been rolled and tied. Slide a large sharp knife under the pork rind and fat, then lift it off completely. Set it to one side. Cut a hole about 4cm wide through the thickest part of the loin, or eye, of the pork. Preheat the oven to 190C/Fan 170C/Gas 5.
- Finely chop the sage and parsley leaves and put them in a bowl. Add the lemon zest, garlic, salt, and plenty of freshly ground black pepper. Press some of this herby mix into the hole in the pork and then spread the rest over the surface of the pork until well covered.
- Cover the meat with the pork rind - this will protect the pork and keep it moist as it cooks. Tie the joint at 2cm intervals with kitchen string to keep it together and place in a small sturdy roasting tin. Roast for 30 minutes per 500g, plus 20 minutes. A 1.25kg joint should take 1 hour 35 minutes, but check it is cooked throughout.
- When the pork is ready, move it to a warmed board ready to carve and cover it with foil and a couple of dry tea towels to keep it warm. Holding the roasting tin carefully with an oven cloth, tilt all the juices to one corner and skim off as much of that naughty fat as possible with a spoon and throw it out.
- To make the gravy, put the roasting tin on the hob over a medium head and add the apple juice and 50ml of the cold water. Stir well to lift the juices and sediment from the bottom of the pan. Simmer for a couple of minutes. Carefully strain the gravy through a sieve into a small saucepan and bring it back to a simmer. Mix the cornflour and the remaining cold water to make a thin paste. Stir this into the gravy and cook for 1-2 minutes more until thickened, stirring occasionally. Adjust the seasoning to taste.
- Remove the string from the pork and lift off the crackling and cut it up separately. Carve the pork and serve it without the crackling for anyone watching their weight! Pour the gravy into a jug to serve with the pork.

- Mix and combine dry ingredients.
- Rub the pork rib on all sides with dry mixture, let it sit for 15 minutes.
- In the meantime, heat an uncovered deep roasting pan (just a little bit bigger than the rib roast) in the oven preheated to 250°C
- Rub the meat with olive oil, place in a hot pan and bake, uncovered, for about 30 minutes until a golden-brown crust forms. Remove from the oven and from the baking pan, and reduce oven temperature to 150°C.
- Spread apple and onion slices on the bottom of the pan, add cider.
- Place the rib roast on apples and onions, tightly cover with a lid and bake for about 2 hours. Check, once or twice that there is enough liquid to prevent apples and onions from burning.
- When done, let the rib roast rest for 15 minutes, then gently pull apart with a fork (or fingers) from the bone and serve with the apple and onion sauce and mashed potatoes.

This is an easy one to make in a crock pot. The roast braises slowly, along with mushrooms, fennel, onions, and apples in apple cider. When it's fall-off-the-bone done, add some butter for a delicious, sweet and savoury gravy. Try to select a roast with 4 or 5 bones, and a good fat cap.

- Rub the roast on all sides with salt and pepper and sear in light olive oil in a skillet on all sides.
- While the meat is searing, quarter the onions and mushrooms. Core the fennel, then cut into eigths. Place most of the onions, fennel, and mushrooms in a layer on the bottom of the crock pot, reserving some to spread around the sides of the roast.
- Peel and core the apples. Set aside.
- After the roast is seared, nestle it into the veggies in the crock pot - fat side up, then spread the rest of the veg around the roast along with the apples.
- Deglaze the skillet with apple cider, then add the liquid to the crock pot.
- Cover, and cook on high for 3 to 4 hours.
- When the roast is fork tender, carefully remove it to a cutting board and tent with foil to rest.
- Using a slotted spoon, transfer the veggies to a serving bowl. I like to spread them around a mound of mashed potatoes.
- Pour the remaining liquid into a deep skillet over high heat, bring to a boil and reduce by at least a third.
- Lower the heat to medium; add the butter in chunks, stirring into the sauce as it melts.Finally, stir in corn starch slurry to thicken the gravy.

- Cut apple in half.
- Slice one half fairly thin and put on the bottom of a roaster.
- Place the pork roast on top of the sliced apples.
- Slice second half of apple thinly and put on top of the pork roast.
- Slice onion into rings and put on top and around the roast.
- Mix remaining ingredients and pour over the pork roast.
- Put pork roast into the oven at 325F.
- Every half hour or so baste the roast with the juices.
- Cook for as long as the roast is big.
- Take out and let rest approximately 15 minutes before cutting.

- Score rib-roast fat cap with the tip of a paring knife in opposite directions, to create a 1/2-inch crosshatch. Prick roast all over with knife tip at approximately 1-inch intervals, about 1 inch deep. Generously season with salt and pepper, rubbing it into meat with your hands. In a bowl, stir together mustard, soy sauce, chopped rosemary, and coriander and fennel seeds.
- Rub mixture all over pork. Let stand at room temperature at least 1 hour and up to 2 hours, or loosely cover and refrigerate up to 1 day (return to room temperature at least 1 hour before roasting).
- Preheat oven to 450°F. In a saucepan, combine potatoes and enough cold water to fully submerge them. Bring to a boil. Season with 1 tablespoon salt and boil until tender and easily pierced with the tip of a knife, 12 to 15 minutes. Drain and let cool slightly. Using a flattened palm or the bottom of a measuring cup, flatten potatoes slightly (but keep them intact).
- Transfer potatoes to a large roasting pan with onions and fennel. Toss with 2 tablespoons oil, season with salt and pepper, and spread in a single layer. Scatter rosemary sprigs over vegetables. Place marinated pork in center of pan, atop vegetables.
- Roast 15 minutes. Meanwhile, core and quarter apples and toss with remaining 1 tablespoon oil; season with salt and pepper. Reduce oven temperature to 350°F. Scatter apples into pan and continue cooking until vegetables are tender and a thermometer inserted in center of roast registers at least 135°F, 1 hour, 15 minutes to 1 hour, 45 minutes more, depending on size.
- Transfer pork to a carving board, loosely cover, and let stand 20 minutes; discard rosemary. Turn oven off and return vegetables to oven to keep warm. Carve pork and serve with vegetables and more mustard.

- Place the meat skin side up on a cutting board. With a sharp heavy knife, cut through the rind and fat to make a crosshatch pattern with 1-inch squares.
- With a thin sharp knife, make a small slit in each square. (This is where you will insert the cloves; you could insert them now, but I have found that all the handling is likely to break off most of the nice-looking tops of the cloves).
- Rub the meat with the salt and pepper.
- Place the meat in a baking dish.
- Cut 1 orange in half and squeeze the juice over the meat.
- Slice another orange and place the slices under and over the meat.
- Cover and refrigerate for 1 to 2 days, turning three or four times.
- Preheat the oven to 400°F.
- Discard the orange and place the meat fat side down in a roasting pan.
- Insert the sage between the cut ribs.
- Turn the meat skin side up. Cut the remaining orange in half and squeeze the juice over the meat.
- Cut the orange halves into smaller pieces and place them under the meat.
- Insert a clove in each of the slits in the fat.
- Cover the roast with foil.
- Place the roasting pan in the middle of the oven and roast for 45 minutes.
- Remove from the oven and reduce the temperature to 350°F.
- Remove the foil and Remove the meat from the pan and add potatoes and onions to the pan, making a foundation for the meat.
- Return the meat to the pan and place in the oven, this time setting it in the lower third of the oven; roast for about 1 hour.
- Move the pan to the middle of the oven. Increase the heat to 400° to 425°F and roast for about 20 minutes longer under frequent surveillance to produce a good crackling. If you have a top oven broiler, you could use it, but be very careful that you don't burn the roast.
- It is difficult to give the exact time for the crackling process, since that depends on the intensity of heat in your oven. If there is no sign of crackling after 10 minutes, gradually turn the heat up to 450°F.
- The crackling will be superb if it looks as if the rind is boiling and the fatty squares have started to separate.
- Remove and allow to cool slightly.
- Cut the meat into 2-rib sections and place on serving plates. The meat looks nice served with the cloves, but be advised that they should be removed before eating, as they are still quite strong-tasting.

- Pour out drippings and let fat rise to the top.
- Meanwhile, deglaze pan with a little water.
- Skim off 3 tbsps.
- of fat and put into saucepan.
- Toss out the rest of the fat.
- Add drippings to pan.
- Make a mix of the flour and a small amount of COLD chicken broth-- remember cold is good here.
- Put everything but the bourbon (or orange juice) and the orange peel into the saucepan.
- Bring to a simmer.
- Slowly, in a thin even stream, add the flour/broth mixture.
- Adjust for desired thickness.
- Remove from the heat add the bourbon or orange juice and the orange peel.
- Serve.
