SLOW-COOKER PORK RAMEN



Slow-Cooker Pork Ramen image

Forget the package you thought you knew: This slow-cooker ramen is satisfying and filled with rich flavor that a seasoning packet could never match, and is still easy to prepare. A boneless pork shoulder cooks in a broth enriched with ingredients like cremini mushrooms, green onions, gingerroot and garlic. Serve over ramen noodles with the toppings of your choice to customize your bowl!

2 tablespoons vegetable oil
2 lb boneless pork shoulder, trimmed of excess fat, cut into 6 equal sections
1 package (8 oz) sliced cremini mushrooms
1 large bunch green onions, sliced, white and green parts separated
1/8 teaspoon salt
2 tablespoons finely chopped gingerroot
6 cloves garlic, chopped
2 cartons (32 oz each) Progresso™ reduced sodium chicken broth
3 tablespoons soy sauce
3 packages (3 oz each) instant ramen noodle soup mix (discard seasoning packets or save for another use)
Toppings, such as chopped fresh cilantro, sliced jalapeño chile, if desired

Steps:

  • In 5-quart Dutch oven, heat 1 tablespoon of the oil over medium-high heat until hot. Add half the pork; cook 4 to 5 minutes, without moving, until browned and easily releases from the bottom. Turn and continue cooking 2 to 4 minutes or until browned. Transfer pork to 5- to 6-quart slow cooker; repeat with remaining pork.
  • Reduce heat to medium; add remaining 1 tablespoon oil to Dutch oven. Add mushrooms, green onion whites and salt to Dutch oven. Cook 5 to 7 minutes, stirring frequently, until mushrooms release juices and turn brown. Stir in 1 tablespoon of the gingerroot and the garlic; cook 30 seconds. Cover and refrigerate remaining green onion greens and gingerroot until later.
  • Slowly add broth, stirring and scraping to remove any brown bits from bottom. Transfer broth mixture to slow cooker with pork. Cover; cook on Low heat setting 8 to 10 hours or until pork is tender.
  • Transfer pork to cutting board. With sharp knife, cut pork into bite-size chunks, removing and discarding any remaining fat. Using spoon, skim off and discard any fat from surface of broth. Return pork to slow cooker and stir in soy sauce and remaining 1 tablespoon gingerroot. Cover; cook 15 to 20 minutes or until heated through.
  • Cook ramen noodles as directed on package; drain. To serve, divide noodles evenly among individual bowls. Ladle broth and pork over noodles, dividing evenly. Serve with remaining green onion greens; top each bowl with desired toppings.

We now we have our pack of Asian food lovers, so we've made a delicious Japanese soup for them. It is also full of flavor: we have some delicious pork, cooked with ginger, miso, and chili. The pork is balanced by the noodle broth and flavored with lemon and a touch of spring onion.

10 ounces of pork tenderloin
0.5 ounce ginger, crushed
1 teaspoon soy sauce
1 teaspoon red chili paste
1 teaspoon miso
4 cups of beef stock
5 ounces of rice noodles
2 eggs, hard-boiled
1 spring onion, chopped
1 sliced lemon, optional

Steps:

  • Heat the vegetable oil in a skillet over medium heat.
  • Add the pork and cook it until it starts to brown.
  • Add the ginger, soy sauce, chili, and miso.
  • Give it a stir and cook for 5 minutes.
  • Heat the beef stock in a saucepan over medium heat. Add the noodles and cook them for 5 minutes.
  • Pour the broth in 2 serving bowls, along with the pork, spring onion, and lemon slices.

1 x Marinated eggs
1 x Ramen noodles, or 450g dried ramen noodles
PORK BELLY CHASHU
750 g higher-welfare pork belly, skin off
10 g coarse kosher salt
20 g soft light brown sugar
30 ml low-salt soy sauce
APPLE SOFFRITTO
1 onion
4 cloves of garlic
3 cm piece of ginger
1 tart green apple
1 tablespoon canola, or rapeseed oil
SHOYU TARE
75 ml sake
75 ml mirin
100 ml low-salt soy sauce
BROTH
1 litre quality organic chicken stock
1 litre dashi
GARNISHES
3 spring onions
1 fresh red chilli

Steps:

  • The day before you're going to cook, make the Marinated eggs and prep the pork. Sit the pork in a tray, sprinkle with the kosher salt and the sugar, drizzle over the soy, then rub all over. Cover and marinate in the fridge overnight.
  • The next day, preheat the oven to 160ºC/325ºF/gas 3.
  • Remove the pork from the marinade, brushing off the excess salt and sugar. Place in a snug-fitting roasting tray, cover with tin foil and roast for 4 hours, or until super-tender, reserving the fat from the tray.
  • Meanwhile, make the Ramen noodles.
  • For the apple soffritto, peel and very finely chop the onion, garlic, ginger and apple (discarding the core). Place in a pan with the oil on a low heat and fry gently for 45 minutes, or until softened but not coloured, stirring regularly, then remove from the heat.
  • For the shoyu tare, pour the sake and mirin into a pan and bring to the boil on a high heat. Leave to bubble away for 4 minutes, then reduce the heat to low, add the soy and apple soffritto, cook for an additional 5 minutes, then remove from the heat.
  • When you're getting ready to serve, make your broth: bring the stock and dashi to the boil in a large pan, then simmer over a medium heat for 5 minutes. Put a pan of water on to boil for the noodles, then thinly slice the pork.
  • Get yourself six warm bowls. Spoon 1 tablespoon each of the shoyu tare and reserved pork fat into the bowls, then divide up the broth. Cook the noodles in the pan of boiling water for 45 seconds (or according to the packet instructions), then remove, shaking off any excess water.
  • Divide between the bowls, using chopsticks to separate, if needed. Top each bowl with slices of pork and a halved marinated egg. Trim and finely slice the spring onions and chilli (deseed if you like), and scatter over the top to finish.

Spicy Pork Ramen - Slow cooked pork with noodles, veggies and a just-slightly-runny egg. Full of that delicious umami flavour!

2 tbsp olive oil
2.2 lbs (1kg) rolled pork shoulder
¼ tsp salt
¼ tsp pepper
8 1/2 cups (2litres) chicken or vegetable stock
1 onion (cut in half (no need to remove the skin))
2 carrots (peeled. One left whole, the other cut into matchsticks)
1 stick of celery (broken in half)
3 cloves garlic (chopped in half (no need to peel))
1 thumb-sized piece of ginger (roughly chopped (no need to peel))
2 tbsp mirin
3 tbsp soy sauce
2 tbsp Gochujang Paste (*Use half the amount if you don't like your ramen too hot.)
1 red chilli (roughly sliced (remove the seeds if you don't like it too hot))
4 large eggs
7 oz (200g) dried ramen noodles ( or 17.5oz (500g) cooked ramen noodles)
1 leek (sliced)
3 packed cups (100g) baby spinach leaves
1 tsp sesame seeds
1 tsp black sesame seeds
Small bunch spring onions (scallions, chopped)
1 tsp red chilli flakes

Steps:

  • Preheat the oven to 150C/300F. Place a large casserole pan on the hob, add 1 tbsp of the oil and heat until very hot.
  • Season the pork with the salt and pepper and place in the pan with the hot oil. Seal on all sides.
  • Pour the stock over the pork.
  • Add in the onion, the whole carrot, celery, garlic and ginger.
  • Now add the mirin, soy sauce, gochujang and the red chilli. Bring to the boil, then place a lid on the pan and place in the oven for 4 hours. NOTE: Check two or three times during cooking, and top up with a little boiling water if needed. You'll need at least 1 litre of liquid left by the time the pork finishes cooking.
  • Take the pan out of the oven and place the pork on a chopping board. Remove and discard the layer of fat. Shred the pork using two forks.
  • Place a sieve over a large bowl and strain the cooking liquid. Throw the strained vegetables away and place the liquid back in the pan with the shredded pork. Leave on a low heat to keep warm.
  • Place the eggs in a small pan. Just cover with cold water. Bring to the boil, then simmer for 6 minutes.
  • Remove the eggs from the heat and place in a bowl of cold water to stop the cooking process.
  • If you're using dried noodles, place the noodles in a pan of boiling water and boil for 5 minutes. Then drain, run under cold water (to stop them sticking) and put to one side.
  • Heat the remaining oil in a frying pan.
  • Add the leek, season with a pinch of salt and pepper then fry for 5 minutes, stirring a couple of times.
  • Push the leeks to one side of the pan and add the spinach to the pan. Allow to wilt for 1 minute.
  • Divide the noodles between four bowls. Top with the hot broth, shredded pork, leek, spinach and carrot matchsticks.
  • Carefully peel the two eggs and slice in half. Place 2 halves in each bowl.
  • Garnish the soup with spring onions, then sprinkle with the white and black sesame seeds and the chilli flakes before serving.

6 ounces baby spinach
2 tablespoons white miso, plus extra for serving
2 tablespoons low-sodium soy sauce, plus extra for serving
1 tablespoon mirin
1 teaspoon toasted sesame oil
2 scallions, sliced thin
1 tablespoon sesame seeds, toasted

Steps:

  • Microwave onions, garlic, ginger, and oil in bowl, stirring occasionally, until onions are softened, about 5 minutes; transfer to slow cooker. Stir broth and shiitake mushrooms into slow cooker. Season pork with salt and pepper and nestle into slow cooker. Cover and cook until pork is tender, 6 to 8 hours on low or 5 to 7 hours on high. Transfer pork to cutting board, let cool slightly, then shred into bite-size pieces. Let soup settle for 5 minutes, then remove fat from surface using large spoon. Stir in noodles and spinach, cover, and cook on high until noodles are tender, 3 to 8 minutes. Stir in shredded pork, miso, soy sauce, mirin and sesame oil. Let sit until heated through, about 5 minutes. Season with additional miso and additional soy sauce to taste. Serve with scallions and sesame seeds for garnish.

1 kg (2lb) bone-in pork belly
salt & pepper to taste
pork bones from roasted belly
2 carrots (roughly chopped)
handful spring onions (roughly chopped)
4 garlic cloves
1 x 4cm piece fresh ginger (sliced)
8 cups chicken stock
1/2 cup soy sauce
2 tablespoons fish sauce
2-3 tablespoons ponzu (or to taste)
2 tablespoons miso paste
soy sauce (to taste)
roasted and cooled pork belly (sliced)
noodles (cooked)
1 boiled egg (per person, cooked to preference)
fresh spring onions (sliced)

Steps:

  • Pre-heat the oven to 160°C/320°F.
  • Rub the pork belly with salt and pepper then place in the oven and allow to roast for 90 minutes-2 hours or until the belly is cooked through.
  • Remove the belly from the oven and allow to cool then carefully slice off the bones and place the belly in the fridge to chill completely.
  • Place the roasted pork bones in a large pot then add all the remaining broth ingredients. Bring the broth the a boil then turn down the heat and allow to simmer for 2-3 hours or until the broth is golden brown in colour and deeply aromatic.
  • Strain the broth then set aside.
  • When you are ready to serve, slice the cold pork belly then warm in the broth for 5 minutes.
  • Serve the pork belly with the noodles, boiled egg and spring onions and top with the broth.
  • Serve immediately.

Steps:

  • Start with making the broth. In a deep soup pan/dutch oven, add oil.
  • When the oil is hot, add minced ginger and garlic. Saute until aromatic, for about 30 seconds.
  • Add sliced mushroom to the pan and cook it until it has softened.
  • Add stock and water to the pan.
  • Add soy sauce, fish sauce, miso. Mix well. Check the seasoning and add salt if required.
  • Simmer the broth and let it simmer for 5 minutes.
  • While the broth is simmering, start making spicy pork.
  • In a small bowl mix all the ingredients for Spicy pork, except pork.
  • Heat 2 teaspoons of oil in a pan. once hot add minced pork. Cook for 2 minutes.
  • Stir in the sauce to the pork. Cook for another 4-5 minutes until the sauce has reduced and the pork is cooked through.
  • Now switch to the soup broth. When it comes to a slow rolling boil add ramen noodles blocks and sliced bok choy.
  • Cook the ramen for 3 minutes. It is ok if the ramen is not cooked fully. The ramen will continue to cook even after the flame is off and will be fully cooked while serving.
