Baked Pork Chops With Onions and Chili Sauce image

This is a quick pork recipe that I throw together fairly regularly because it's easy, requires few ingredients and is a big hit with the kids.

4 boneless pork loin chops, butterflied
2 tablespoons olive oil
1 large onion, sliced
1/8 cup brown sugar
2/3 cup Heinz Chili Sauce

Steps:

  • Preheat oven to 375.
  • Pound the chops thin with a meat tenderizer.
  • Heat the oil in a large skillet over medium high heat and brown the chops lightly on each side.
  • Move the chops to a shallow baking dish. Scatter the sliced onions over the chops, sprinkle with brown sugar and pour the chili sauce over all.
  • Bake in preheated oven for 40 minutes (or until done, depending on the thickness of your chops). I usually flip them midway through so that they cook evenly in the sauce on both sides.
  • Smother chops with onions and sauce and serve.

- 1 box pillsbury® refrigerated pie crusts, softened as directed on box
- 1 lb boneless pork loin, cut into 1/2-inch cubes
- 1/2 cup chopped onion (1 medium)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 box (9 oz) green giant® niblets® frozen whole kernel corn
- 1 can (4.5 oz) old el paso® chopped green chiles
- 1/2 cup chili sauce
- 1/4 cup sliced pimiento-stuffed green olives
- 1/4 cup raisins
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 2 teaspoons milk
- 1 tablespoon cornmeal

Steps:

  • Heat oven to 425°F. Make pie crusts as directed on box for Two-Crust Pie using 9 1/2- or 10-inch deep-dish glass pie plate.
  • Spray 12-inch skillet with cooking spray; heat over medium-high heat until hot. Add pork and onion; cook 3 to 5 minutes, stirring occasionally, until pork is no longer pink
  • Add tomatoes, corn, green chiles, chili sauce, olives, raisins, cumin and salt. Heat to boiling. Reduce heat to medium; simmer 5 minutes, stirring occasionally, until slightly thickened. Remove from heat; cool 5 minutes.
  • Spoon mixture into crust-lined pie plate. Cut 4 wide slits or small designs in second crust; place crust over pork mixture. Seal edge and flute edge. Brush crust with milk; sprinkle with cornmeal.
  • Bake 25 to 35 minutes or until deep golden brown. Cover crust edge with 2- to 3-inch-wide strips of foil after 10 to 15 minutes of baking to prevent excessive browning. Let pie stand 5 to 10 minutes before serving

This American tamale pie features a spicy pork chili topped with a cornbread batter made using masa harina instead of cornmeal. The chili gets its heat from a combination of poblano and jalapeño peppers, while store-bought enchilada sauce gives it an extra boost of flavor with minimal effort. Before baking, the cornbread batter is studded with pickled jalapeños for extra tangy heat.

2 tablespoons extra-virgin olive oil
1 1/2 pounds ground pork
Kosher salt and freshly ground black pepper
1 medium yellow or red onion, finely chopped
1 poblano pepper, stemmed, seeded and chopped
1 jalapeño, stemmed, seeded and minced
3 garlic cloves, minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
One 10-ounce can enchilada sauce
1 cup low-sodium chicken broth
1 cup frozen corn kernels
1 1/4 cups masa harina (see Cook's Note)
3/4 cup all-purpose flour
1 1/2 tablespoons baking powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs
3/4 cup whole milk
3/4 cup low-sodium chicken broth
3/4 cup shredded Cheddar
1/2 cup sliced pickled jalapeños
Hot sauce and sour cream, for serving

Steps:

  • Prepare the chili: Preheat the oven to 425 degrees F. In a 12-inch cast-iron skillet, heat the olive oil until shimmering. Add the pork and season with salt and pepper. Cook over medium-high heat, breaking up the meat with a wooden spoon, until the just starting to brown but not cooked through, about 5 minutes.
  • Add the onions, poblanos, jalapeños, garlic and a pinch each of salt and pepper to the skillet. Cook over medium heat, stirring occasionally, until the vegetables are just softened and the pork is cooked through, 6 to 8 minutes. Add the chili powder and cumin and cook, stirring, until fragrant, about 30 seconds. Stir in the enchilada sauce and chicken broth and bring to a boil. Simmer, over medium-low heat, stirring occasionally, until slightly thickened, 5 to 7 minutes; stir in the corn kernels.
  • Meanwhile, prepare the cornbread: In a medium bowl, whisk the masa harina with the flour, baking powder, salt and pepper. In another medium bowl, beat the eggs with the milk and chicken broth. Add the wet ingredients to the dry and beat vigorously until the batter is fluffy, 1 to 2 minutes. Fold in 1/2 cup of the cheese.
  • With the chili off the heat, spoon the cornbread batter on top and gently spread it in an even layer. Scatter the pickled jalapeños over the batter, then sprinkle the remaining 1/4 cup of cheese on top. Bake the tamale pie until bubbling and the cornbread is risen, 25 to 30 minutes. Let stand 5 minutes before serving. Serve topped with hot sauce and sour cream.
