Pork Parcels With Mushrooms image

Individual parcels can be made and serve, unopened to your guests. However, you can also make one large parcel, which is easier and gives excellent results.

1 ounce all-purpose flour, seasoned with salt and pepper
4 (4 ounce) pork chops, trimmed of excess fat
1 tablespoon olive oil
1/2 ounce butter
1 onion, finely chopped
4 ounces small mushrooms, wiped clean and thinly sliced
4 tablespoons heavy cream
2 teaspoons Dijon mustard
salt and pepper

Steps:

  • Preheat the oven to 350°F Take a large piece of foil, fold in half and place on a baking sheet.
  • Place the seasoned flour on a plate and use to coat the pork chops.
  • Heat the oil in a frying pan and quickly sear on both sides until golden brown, then place side by side inside the folded foil. Season to taste.
  • Melt the butter in the pan, stir in the onion and mushrooms and saute for a few minutes until tender. Season to taste and spoon on top of the chops. Mix the cream with the mustard in a small bowl and drizzle over each chop.
  • seal the edges of the foil together with a double fold, making sure there will be plenty of room for expansion.
  • Bake for 45-50 minutes or until the parcel has puffed up.
  • Open at the table for maximum effect and serve, spooning over all the delicious juices.

I made this with left over pork loin (Recipe #34634). I know there are a THOUSAND similar recipes but I thought I'd post my version anyway :) I'm sure this can be changed to ground beef, left over brisket, or chicken and be just as delicious! Feel free to omit the cheese in the meat mixture if you like, it's just as good!

1/2 lb beef or 1/2 lb chicken
1/4 cup barbecue sauce
3 tablespoons red wine vinegar
1 -2 garlic clove, minced
1/2 small onion, diced
1/4 cup shredded cheddar cheese, 1 oz (optional)
1 (8 ounce) can Pillsbury Refrigerated Crescent Dinner Rolls

Steps:

  • Heat oven to 375°F.
  • Warm the left over meat with barbecue sauce, vinegar, garlic,and onions cooking over the stove until the sauce reduces.
  • Once reduced, stir in the cheese.
  • Unroll dough and make Unroll dough and separate into 4 rectangles, then cut those rectangles into 8 squares making sure to seal the perforations in the dough.
  • Place about 2 rounded tablespoons ground beef mixture on center of each square. Fold dough over filling, bringing the pointed edges to the center.
  • Place on ungreased cookie sheet.
  • Bake about 15 minutes or until golden brown.
  • Remove from cookie sheet and serve immediately.

A wonderful and very elegant dinner party dish, and one that will impress your family and friends! These little parcels can be made ahead of time and frozen uncooked. In France you can buy these ready made in most supermarkets and butchers - but these are so easy to make, that I often make my own. You can also use turkey or veal escalopes - the sauce remains the same. Serve these little parcels with seasonal vegetables, gratin potatoes or rice and pasta.

8 pork escalopes or 8 thin pork steaks
salt
pepper
400 g good quality pork sausage
1/2 onion, peeled and very finely diced
1 teaspoon fresh mixed herbs or 1/4 teaspoon dried herbs
1 teaspoon olive oil
4 shallots, peeled and finely diced
2 tablespoons plain flour
2 tablespoons sun-dried tomato paste
750 ml medium sweet white wine
500 g fresh mushrooms, cleaned and thinly sliced
1 teaspoon dried orange peel or 1 teaspoon grated fresh orange zest
bay leaf
parsley
thyme
sage leaf
kitchen string

Steps:

  • Flatten the pork escalopes or pork steaks with the flat of a large knife. Salt and pepper generously.
  • Mix the finely diced onion with the sausage meat and add the herbs - mixing well with your hands. Season with black pepper.
  • Place a spoonful of the seasoned sausage meat on each pork escalope one-third of the way down the scallop. Roll the escalope around the sausage meat, tucking the meat around the stuffing until well rolled. Taking about two feet of string, place the bundle in the middle of the string, and tie; turn one-quarter turn and tie again; turn again and tie again. When you have a neatly tied packet of pork and stuffing, clip off any excess string and proceed to tie up the rest of the pork escalopes.
  • Place pork parcels in a single layer in a hot, deep sauté pan with olive oil. Brown on all sides and remove from the pan.
  • Sauté the chopped shallots in the oil left in the pan. Stir until they start to colour, then add the flour and the tomato paste. Continue to cook and stir until the mixture starts to colour then add nearly the whole bottle of wine, reserving a glass for yourself if you wish!
  • Place the pork paupiettes back in the pan with the bouquet garni and the sauce, cover, and simmer slowly for forty-five to sixty minutes.
  • Add the sliced mushrooms and orange zest to the sauce and cook uncovered for another fifteen minutes. Serve 2 paupiettes per person with plenty of sauce and with a selection of seasonal vegetables, gratin potatoes, rice or pasta.
  • To freeze: Place them in a plastic container with greaseproof paper in between them, or in a ziplock bag. Freeze for up to 3 months.
  • To defrost: Take the paupiettes out the night before you need to cook them and defrost in the fridge. Cook them as before when they have fully defrosted.

6 boneless pork chops
1 tablespoon olive oil, for brushing
250 g pancetta, cut into thin slices
1 small red apple, peeled, cored and cut into thin slices
150 g brie cheese, sliced

Steps:

  • Remove any visible fat from chops, flatten them lightly with a meat mallet and brush with olive oil. Season with black pepper.
  • Sear the chops for 2 minutes on both sides in the hot grill pan on. Put aside to cool slightly.
  • Lay out 4 slices of the pancetta so they overlap. Place a seared chop on top of each pile of pancetta.
  • Divide the sliced apple and Brie between the pancetta piles, on top of the pork.
  • Wrap the pancetta around each of the pork, apple and brie parcels to hold it all in place. Place the pancetta parcels on a baking tray and bake in the oven at 200°C for 15 minutes, or until the pork is cooked through.
  • Serve with mashed potato and cooking juices from the parcels.
