Homemade pork fajitas are full of tender pork pieces and fresh veggies!

1 medium onion
3 bell peppers (red, yellow, green, or orange)
1 pound pork tenderloin (or lean pork, cut into strips)
1 tablespoon lime juice
3 tablespoons olive oil (divided)
1 ½ tablespoons fajita seasoning (or seasoning mix below)
8 flour tortillas (6" each or corn tortillas)
toppings as desired

Steps:

  • Heat tortillas according to package directions.
  • Slice onion and peppers, set aside.
  • Cut pork into thin strips and place in a bowl. Toss pork with seasoning, lime juice, and 1 tablespoon olive oil.
  • Preheat 1 tablespoon olive oil over medium high. Add the pork in small batches and cook just until browned, about 3-4 minutes. Set cooked pork aside.
  • Add 1 tablespoon of oil to the same pan and cook onions 1-2 minutes, stir in peppers and cook 2 minutes more.
  • Add pork and cook until heated through, do not overcook the pork.

1/4 cup lime juice
1 1/2 teaspoons ground cumin
3/4 teaspoon salt
4 garlic cloves, finely chopped
1/2 pound pork tenderloin, cut into 2x1/2-inch strips
1 large onion, thinly sliced
3 medium bell peppers, thinly sliced
4 cilantro-flavored flour tortillas, (8 inches in diameter)

Steps:

  • Mix lime juice, cumin, salt and garlic in shallow glass or plastic dish. Stir in pork. Cover and refrigerate, stirring occasionally, at least 15 minutes but no longer than 24 hours.
  • Remove pork from marinade; reserve marinade. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 3 minutes, stirring once. Stir in onion, bell peppers and marinade. Cook 5 to 8 minutes, stirring occasionally, until onion and peppers are crisp-tender.
  • Place one-fourth of the pork mixture on center of each tortilla. Fold one end of tortilla up about 1 inch over pork mixture; fold right and left sides over folded end, overlapping. Fold remaining end down.

SPICE RUB:
2-1/2 teaspoons garlic powder
2 teaspoons onion powder
1-1/4 teaspoons salt
1 teaspoon white pepper
1 teaspoon pepper
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper
BURRITOS:
1 boneless pork shoulder butt roast (3 pounds)
1 cup water
2 tablespoons beef bouillon granules
10 flour tortillas (10 inches)
3 cups canned pinto beans, rinsed and drained
3 cups cooked Spanish rice
Optional toppings: salsa, chopped tomato, shredded lettuce, sour cream and guacamole

Steps:

  • Mix spice rub ingredients; rub over pork. Transfer to a 6-qt. slow cooker. In a small bowl, mix water and beef granules; pour around roast. Cook, covered, on low until meat is tender, 6-8 hours., Remove roast; cool slightly. Reserve 1/2 cup cooking juices; discard remaining juices. Shred pork with 2 forks. Return pork and reserved juices to slow cooker; heat through. , Spoon a scant 1/3 cup shredded pork across center of each tortilla; top with a scant 1/3 cup each beans and rice. Fold bottom and sides of tortilla over filling and roll up. If desired, serve with toppings. Freeze option: Cool filling ingredients before making burritos. Individually wrap burritos in paper towels and foil; freeze in a freezer container. To use, remove foil; place paper towel-wrapped burrito on a microwave-safe plate. Microwave on high until heated through, turning once, 3-4 minutes. Let stand 20 seconds. If desired, serve with toppings.

1 green pepper, cut into strips

4 whole wheat tortillas (8 inch)

Steps:

  • Heat dressing in large nonstick skillet on medium-high heat. Add meat and peppers; cook and stir 3 to 4 min. or until meat is no longer pink.
  • Stir in barbecue sauce. Reduce heat to medium-low; simmer 6 to 8 min. or until meat is cooked through and sauce is thickened, stirring occasionally. Remove from heat; stir in cheese.

1 tbsp vegetable oil
2 green, red or yellow peppers , deseeded and sliced
100g canned or frozen sweetcorn
500g cooked pork (fat and skin removed), torn into strips
2 tsp ground cumin
326g pack tortillas
1 avocado , thinly sliced
soured cream
1 sliced red chilli
coriander leaves
1 lime , cut into wedges, to serve

Steps:

  • Toss together the oil and peppers, then cook in a non-stick frying pan for 3 mins until starting to brown. Add the sweetcorn, pork and cumin and stir well. Cook for 2 mins more until the pork and sweetcorn are heated through and starting to turn golden. Season well.
  • Heat the tortillas in the microwave for 30 secs to soften. To serve, place the tortillas, pork, avocado and other ingredients on the table and allow everyone to help themselves - pile up the pork and veg in the tortillas, top with avocado and your choice of soured cream, chilli, coriander leaves and lime.

1/2 cup salsa
3 bay leaves
1 tablespoon salt
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons pepper
1-1/2 teaspoons garlic powder
4 whole cloves
1-1/4 cups water
2 medium onions, chopped
1 bone-in pork shoulder roast (6 to 7 pounds)
24 corn tortillas (6 inches) or taco shells, warmed
Optional toppings: Shredded cheese, sour cream and chopped tomato, onion, cilantro and lime wedges

Steps:

  • In a small bowl, mix first 9 ingredients. Place onions in a 6-qt. slow cooker. Place roast over onions; pour salsa mixture over roast. Cook, covered, on low until pork is tender, 8-10 hours., Remove roast; remove and discard bone. Shred pork with 2 forks. Serve in tortillas with toppings as desired. Freeze option: Freeze cooled pork mixture in freezer containers. To use, partially thaw in refrigerator overnight. 1 teaspoon salt
1/2 teaspoon coarsely ground pepper
1/2 teaspoon cayenne pepper
1 bone-in pork loin roast (about 3 pounds)
3 large onions, chopped
4 tablespoons canola oil, divided
3 garlic cloves, minced
1 medium green pepper, chopped
1 cup salsa
1/2 cup frozen corn, thawed
1/2 cup canned black beans, rinsed and drained
1 teaspoon paprika
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon hot pepper sauce
1/4 cup minced fresh cilantro
8 corn tortillas (6 inches)

Steps:

  • Combine the oregano, salt, pepper and cayenne; rub over roast. Place fat side up on a rack in a shallow roasting pan. "Traditionally a Spanish dish, tortilla is best eaten cold in chunky wedges and makes an ideal picnic food." This comes via 500 All Time Great Recipes. We love this! Notice how I have not included the cooling time for the potatoes. I have, also, used leftover potatoes for this. This will serve 2 for main dish, or 4 if with some other sides.

2 potatoes
2 tablespoons olive oil
1 large onion, thinly sliced
2 garlic cloves, crushed
2 red peppers, thinly sliced
6 eggs, beaten
1 cup sharp cheddar cheese, grated, divided
salt and pepper, to taste

Steps:

  • Do not peel the potatoes, but wash them well.
  • Parboil them for about 20 minutes, then drain and, and when they are cool enough to handle, slice them thickly.
  • Switch on the broiler so that it warms up while you prepare the rest of the dish.
  • In a large nonstick frying pan, heat the oil and fry the onion, garlic and peppers over a moderate heat for 5 minutes until softened.
  • Add the potatoes and continue frying, stirring from time to time until the potatoes are completely cooked and the vegetables are soft.
  • Add a little extra oil if the pan seems rather too dry.
  • Pour in half the beaten eggs, then sprinkle over half the grated Cheddar cheese, then the rest of the egg.
  • Season with salt and pepper and finish with a layer of cheese.
  • Continue to cook over a low heat, without stirring, half covering the pan with a lid to help set the eggs.
  • When the mixture is firm, flash the pan under the hot broiler to seal the top just lightly.
  • Leave the tortilla in the pan to cool.
  • This helps it firm up further and makes it easier to turn out.
  • Cut into generous wedges to serve.
