1 teaspoon salt, or more to taste
1 teaspoon ground black pepper, or more to taste
1 teaspoon sweet paprika
½ teaspoon caraway seeds
2 teaspoons grainy mustard
1 tablespoon vegetable oil
1 large onion, quartered
2 carrots
⅛ celeriac (celery root), chopped
1 spring onion, chopped
2 cups water, or as needed - divided
2 tablespoons butter, or to taste
2 tablespoons cornstarch

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season pork loin with salt, black pepper, paprika, and caraway seeds; spread mustard over pork.
  • Heat vegetable oil in a large skillet over medium-high heat; fry pork until browned on all sides, about 15 minutes. Transfer pork to a large roasting pan. Add onion, carrots, celeriac, and spring onion to the same skillet used to fry pork; cook and stir until vegetables are tender, about 10 minutes. Spread vegetable mixture around pork in roasting pan.
  • Pour 1 cup hot water into the skillet used to cook the pork and vegetables; simmer and scrape up any browned bits from the bottom with a spatula. Pour water over pork.
  • Bake in preheated oven until pork is slightly pink in the center, 2 1/2 to 3 hours, basting often. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). If vegetables become dry, add 1 cup hot water, or as needed.
  • Transfer pork roast to a large platter and keep warm. Strain remaining liquid through a sieve into a saucepan; reserve vegetables.
  • Bring liquid to a boil and add butter and cornstarch; simmer until sauce is thickened, about 5 minutes. Slice pork and serve with sauce and vegetables.

3 tablespoons vegetable oil
1 (5 pound) boneless pork loin roast
3 cups chopped onion
5 carrots, chopped
1 (12 fluid ounce) can or bottle beer
2 teaspoons salt
¼ teaspoon ground black pepper
1 bay leaf
4 whole cloves

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat vegetable oil a heavy pot or dutch oven over medium-high heat. Sear pork in hot oil until brown on all sides, about 10 minutes. Remove roast from pot.
  • Drain all but about 3 tablespoons grease from pot. Cook and stir onion and carrots until softened, about 5 minutes.
  • Stir beer, salt, pepper, bay leaf, and cloves into the onion mixture.
  • Return pork roast to the pot and cover.
  • Bake in the preheated oven until pork is tender and no longer pink in the center, about 2 hours.
  • Transfer roast to a platter and cover loosely with aluminum foil. Remove bay leaf from vegetables.
  • Pour the beer and vegetable mixture from the Dutch oven into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel and carefully start the blender, using a few quick pulses to get the vegetables moving before leaving it on to puree until smooth.
  • Bring pureed sauce to a boil in a saucepan over medium-high heat until thickened, stirring often, about 5 minutes. Spoon sauce over pork roast to serve.

PORK TENDERLOIN IN DARK BEER SAUCE

3-3/4 lb pork tenderloin
salt and pepper to taste
2 oz canola oil
1 cup sweet mustard
2 tbsp lemon zest (blanched and chopped)
4 cloves garlic (chopped)
3 tbsp chives (chopped)
6 oz butter (soft)
1-1/2 cups breadcrumbs
2 each egg yolks
1-1/2 lb Yukon Gold potatoes (peeled)
1 large onion
1 tsp granulated garlic
canola oil as needed
salt and pepper to taste
2-1/2 lb brussels sprouts
1 lb Black forest ham
1/2 cup olive oil
1 large onion (finely diced)
1/2 tsp nutmeg
3 tbsp parsley (chopped)
salt and pepper to taste
1-1/2 pint jus
1 bottle German dark beer
salt and pepper to taste
cornstarch slurry as needed

Steps:

  • Trim and portion pork tenderloin into 6 oz pieces. Season with salt and pepper. Heat oil in a large skillet and sear pork tenderloin on all sides. Place meat on a sheet pan lined with parchment paper.
  • In a mixing bowl whip butter until soft. Add chopped garlic, lemon zest, chopped chives, sweet mustard, breadcrumbs and egg yolks. Season with salt and pepper and mix until smooth texture is achieved. Place mixture on parchment paper and roll into a log, 1-3/4 to 2 inches in diameter. Place in the freezer.
  • When crust is partially frozen, cut in 1/2 inch pieces and place on top of each pork tenderloin. Place meat in a preheated oven at 350 degrees F and cook until desired internal temperature is reached and crust is golden brown.
  • Grate potatoes and onion in a large bowl. Season with granulated garlic, salt and pepper. In a large skillet heat oil. Squeeze excess liquid out of potatoes. Use a spoon and make pancakes of about 1-1/2 oz each. Sear pancakes in hot oil on both sides until golden brown. Drain pancakes on paper towel to absorb excess oil.
  • Take leaves off Brussels sprouts. Cut Black forest ham in thin strips.
  • Heat olive oil in a large skillet and render ham, then add onions and brown. Add Brussels sprouts leaves and season with salt, pepper and nutmeg. Add parsley before serving.
  • Heat jus and add dark beer. Reduce until desired consistency is achieved. If necessary thicken with cornstarch slurry and adjust seasonings.
  • Place three potato pancakes in the center of the plate. Arrange pork tenderloin with crust on top. Spoon Brussels sprouts leaves and Black Forest ham around and nape with dark beer sauce.

2 pork tenderloin ((pork fillet), 500g/1lb each (Note 1))
1 1/2 tbsp olive oil ((or butter))
3 garlic cloves (, very finely chopped)
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
3 tbsp cider vinegar ((Note 2))
1 1/2 tbsp soy sauce, light or all purpose ((Note 2))
1/2 cup honey ((or maple syrup))

Steps:

  • Preheat oven to 180C/350F.
  • Mix Sauce ingredients together.
  • Mix Rub ingredients then sprinkle over the pork.
  • Heat oil in a large oven proof skillet (Note 3) over high heat. Add pork and sear until golden all over.
  • When pork is almost seared, push to the side, add garlic and cook until golden.
  • Pour sauce in. Turn pork once, then immediately transfer to the oven.
  • Roast 15 - 18 minutes or until the internal temperature is 68C / 155F (Note 4).
  • Remove pork onto plate, cover loosely with foil and rest 5 minutes.
  • Place skillet with sauce on stove over medium high heat, simmer rapidly for 3 minutes until liquid reduces down to thin syrup.
  • Remove from stove, put pork in and turn to coat in sauce.
  • Cut pork into thick slices and serve with sauce!

1 large red onion, thinly sliced

1/4 cup honey
1 (3 1/2) pound boneless pork loin, tied
2 tablespoons vegetable oil

Steps:

  • Melt 2 tablespoons butter in heavy large saucepan over medium high heat. Add onion and saute until tender and golden brown, about 15 minutes. Add garlic, cumin, cinnamon and allspice and stir 1 minute. Add beer, mustard and honey and bring to boil (sauce will foam). Remove from heat. Puree in batches in blender until smooth. Cool to room temperature. Pour into baking dish. Add pork loin; turn to coat. Cover and refrigerate 8 hours or overnight, turning occasionally.
  • Preheat oven to 375 degrees F. Remove pork from marinade; pat dry. Reserve marinade. Heat oil in heavy large skillet over medium heat. Season pork with salt and pepper. Add to skillet and brown on all sides. Transfer to baking sheet with rim. Roast in oven for 3/4 to 1 hour or until thermometer inserted into thickest part registers 155 degrees F. Transfer pork to work surface; reserve any pan juices.
  • Combine pan juices and marinade in saucepan. Bring to boil. Reduce heat to simmer. Mix butter and flour in small bowl until smooth paste forms. Add to sauce and simmer until sauce thickens. Season to taste with salt and pepper. Cut pork into slices. Pour sauce over.

  • Make marinade:.
  • In a large saucepan stir together marinade ingredients. Bring marinade just to a boil, stirring (marinade will rise and foam), and remove pan from heat. In a blender purée marinade in 2 batches, transferring it as puréed to bowl. Cool marinade to room temperature and spoon off any remaining foam.
  • In a large heavy resealable plastic bag combine pork and marinade and seal bag, pressing out any excess air. 2 tablespoons finely chopped fresh tarragon
2 teaspoons kosher salt
4 eggs
1 cup water, plus more, if needed
2 tablespoons horseradish mustard
1 cup grated Parmesan cheese
1 cup mascarpone cheese
1 tablespoon kosher salt
1 quart half-and-half
1/2 cup goat cheese
4 slices prosciutto
1 bottle beer (recommended: Cassis Lambic)
3 tablespoons demi glace
2 tablespoon sugar
Kosher salt, to taste
3 tablespoons Cajun seasoning
2 tablespoons cocoa powder
2 tablespoons prepared roasted garlic
1 teaspoon sugar
1 teaspoon kosher salt
1 (1 to 1 1/2-pounds) pork tenderloin (or 2 smaller)
1 bunch leeks
Canola oil, for frying
4 tablespoons all-purpose flour
Kosher salt, to taste

Steps:

  • Preheat the oven to 350 degrees F.
  • For the spaetzle:
  • In a large bowl, combine the flour, tarragon, salt, eggs, 1 cup water, and mustard. Stir vigorously until combined into a paste. If it's too thick, add just a bit more water until just smooth. Bring a large pot of salted water to a boil. Hold a colander over the pot and, using a rubber spatula, press the batter through the holes into the water. Boil for 3 minutes, then drain. Transfer the spaetzle to a baking dish.
  • For cheese sauce:
  • In a large saucepan, over medium-low heat, whisk together the Parmesan cheese, mascarpone, goat cheese, salt, and half-and-half to a simmer. Cook for 10 minutes. Whisk often to prevent burning. Pour the cheese sauce over the spaetzle and toss gently to coat. Dot the top with goat cheese and lay the prosciutto slices on top. Bake the spaetzle in the oven for 5 minutes to heat through. Set aside.
  • For Lambic Beer Jus:
  • Pour the beer into a saucepan and stir in the demi glace, sugar and a good pinch of salt. Bring to a simmer over low heat and cook until reduced by 1/3.
  • For the pork:
  • Raise the oven temperature to 450 degrees F. Preheat a grill or grill pan.
  • In a large bowl, combine the Cajun seasoning, cocoa, roasted garlic, sugar, and salt. Mix until well combined. Dredge the pork into the spice rub and grill for 2 minutes on each side. Transfer the pork to a baking sheet and finish in the oven for about 10 minutes (5 minutes more for 2 tenderloins), or until cooked to medium and the internal temperature reaches 155 degrees F. While the pork is finishing in the oven, slice the leeks into 1/4-inch rounds and rinse in a bowl of cold water to remove excess dirt. Drain and dry well. Fill a large, deep, heavy-bottomed saucepan, halfway with oil and heat over medium-high heat to 350 degrees F. Toss the leeks in flour and a pinch of salt. Deep fry the leeks in the hot oil until golden brown. Drain on paper towels. Slice the pork loin and spoon the beer sauce over top and top with crispy leeks. Serve the spaetzle on the side.

3 cups onion (chopped)
4 to 6 carrots (pared and diced)
12 ounces beer (dark)

Steps:

  • Gather the ingredients.
  • In a large Dutch oven or oven-safe roasting pan, coat the bottom with vegetable oil and bring the temperature up to high. Brown the pork loin roast in the hot oil on all sides. Remove the pork roast from the pan. Drain all but 3 tablespoons of fat from pan.
  • In the pan, sauté onions and carrots in the pan drippings until softened. Stir in beer, salt, pepper, bay leaf, and whole cloves.
  • Return the pork to the pan or Dutch oven and cover tightly with aluminum foil. Bake at 350 F for 2 hours or until the pork is tender. Check with a meat thermometer in the thickest part of the roast. It should be at least 145 F.
  • Place the pork loin on a serving platter and keep it warm.
  • Pour the cooking liquid from pan into a large bowl; skim off fat and remove the bay leaf.
  • Place the liquid with the vegetables into a blender; cover and process at low speed until smooth. Or press through sieve or process in a food processor in batches.
  • Pour the processed beer sauce into a saucepan. Bring to a boil, stirring often.
  • Slice the pork roast. Spoon the sauce over the sliced pork to serve. Cover and refrigerate any leftover pork roast. You can also refrigerate leftover sauce and reheat it in the microwave to serve. You may have seen older guidelines about the safe temperature for cooking pork roast. The United States Department of Agriculture (USDA) updated safety recommendations for pork in 2011 to lower the target temperature to 145 F. At this temperature, the pork loin might be a little pink in the middle, but it is safe. As a bonus, it won't be overcooked and dried out.

BAVARIAN BEER-ROASTED PORK



Bavarian Beer-Roasted Pork image

This is a show-stopping main course full of flavour. The stars of the show are two of Germany's favourite ingredients: pork and wonderful beer! I make my roast in a ceramic "Roemertopf" but a regular deep roaster with a lid will work just as well.

Steps:

  • (If using a ceramic Roemertopf, it's important to submerge the pot & lid in cold water for at least 20min. A Roemertopf should only ever be placed in an initially COLD oven)
  • Cut the fat layer in a criss-cross pattern so it will later become crispy.
  • Dry off the meat and season well on all sides with salt & pepper.
  • Lay the meat, fat side down, into a Roemertopf or roasting pan with a lid.
  • Fill in 125ml of water and the 250ml beer.
  • Put the Roemertopf in the cold oven (or a regular roasting pan in a pre-heated oven) at 220C.
  • Cook for 45min.
  • Take the roast out of the oven and turn it around (fat side up.)
  • Add the chopped vegetables and herbs in roughly cut cubes around the meat. If necessary, add a little bit more water or beer.
  • Put the lid back on and cook for a further 1 hour.
  • After 1 hour, take the lid off the Roemertopf /roaster and turn up the heat to 250C in order to crisp-up the fat layer ("crackling").
  • Keep on basting the roast and keep an eye on it for about 15-20min, until the fat layer has become nice and crispy.
  • Remove the roast from the oven, leave the meat to rest for min. 10min before carving.
  • Serve with potato mash, roast potatoes, dumplings or Spaetzle (German egg noodles) and the vegetables from the pan.

PORK TENDERLOIN SCHNITZEL WITH ALTBIER MUSTARD SAUCE BY MAGGIE CUBBLER

Since the sauce requires reducing, avoid using any very hoppy/bitter beers. A nice Oktoberfest/Marzen beer would also work nicely in this as well as a Helles.

1 pork tenderloin
½ cup (65g) all-purpose flour
salt & pepper
1 egg, beaten
2TB milk
¾ cup (95g) panko or regular bread crumbs
1tsp paprika
Olive oil
Olive oil
1 large or 2 small shallots, minced
1½ cups (350ml) chicken broth
6 oz (175ml) beer
½ cup (120ml) heavy/double cream
3TB German mustard
2TB fresh dill or flat-leaf parsley, finely chopped
1TB salted butter

Steps:

  • Slice the tenderloin into 1-inch (2.5cm) rounds.
  • Place a round inside of a plastic bag and pound until you have achieved ¼"-1/8" (.35-.65cm) thickness. Repeat with the remaining rounds.
  • Set out three shallow bowls.
  • Season the flour with salt and pepper in one of the bowls. Combine the milk and egg in another and, finally, the paprika-seasoned breadcrumbs in the last one.
  • Heat about 2TB of olive oil in a pan over medium heat.
  • Dredge the pork through the flour first, followed by the egg mixture, and then the breadcrumbs.
  • Sauté the pork in the hot oil, working in batches, for 3-4 minutes each side or until cooked through. If necessary, take a paper towel between batches and clean out the pan to remove any burned bits and pieces. Allow the fresh oil to come to a shimmering point before adding the meat.
  • Set the prepared cutlets aside and keep warm.
  • Lower the heat to medium low. In the same pan, add a bit of olive oil and allow it to heat up. Add the minced shallots and let sweat for a couple of minutes. Stir often, scraping up any brown bits from the pan. Do not let them brown.
  • Deglaze the pan with the chicken broth. Stir scraping up any remaining brown bits on the pan. Increase the heat to medium and let the broth and shallots come to a boil and reduce slightly. Stir in the beer and let simmer and reduce slightly or about five minutes.
  • Stir in the heavy cream, mustard, and dill (or parsley.) Let the cream bubble to thicken the sauce. Let it "bubble" over medium heat until the sauce has thickened. Keep an eye on it or the cream will boil over!
  • Finish off with a pat of salted butter. Season to taste.
