¼ cup chopped onion
1 apple - peeled, cored, and sliced
2 (1/2-inch thick) pork chops
¾ cup applesauce
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cinnamon
½ teaspoon salt
ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion and apple slices in the melted butter until tender, about 5 minutes. Transfer onion and apple to a bowl.
  • Place pork chops in the same skillet; cook over medium heat until pork chops are browned on both sides, about 5 minutes per side.
  • Mix applesauce, brown sugar, mustard, and cinnamon into onion and apple mixture.
  • Place pork chops in a 9x9-inch baking dish; season with salt and black pepper. Spoon applesauce mixture over pork chops; cover dish.
  • Bake in the preheated oven until pork chops are no longer pink in the center, about 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

I came up with this recipe as I love maple and mustard. We wanted to add more flavor and not dry out the boneless loin chops. Spice rub marinade, lightly breaded with a maple-mustard glaze, and cooked in garlic-flavored oil - a great Canadian recipe! This is also great on the BBQ. Perfect with roasted potatoes and a coleslaw.

1 ½ tablespoons brown sugar
1 ½ teaspoons sea salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
¼ teaspoon freshly ground black pepper

6 boneless pork loin chops, 1/2 inch thick
¼ cup pure maple syrup, preferably dark amber (Grade B)
2 tablespoons spicy brown mustard
1 pinch garlic powder
1 pinch paprika
1 pinch freshly ground black pepper
1 pinch cayenne pepper
½ cup seasoned bread crumbs
1 tablespoon olive oil
1 tablespoon canola oil
1 clove clove garlic, crushed

Steps:

  • Whisk brown sugar, sea salt, 1/2 teaspoon garlic powder, onion powder, 1/2 teaspoon paprika, 1/4 teaspoon black pepper, dry mustard, and fennel seeds together in a small bowl.
  • Pat pork loin chops dry with a paper towel. Score the meat on both sides, 1/8-inch deep in cross-hatch lines spaced 1/2-inch apart, with a sharp knife; rub spice mixture onto all sides of pork chops and into scored lines. Cover chops; refrigerate for 4 to 6 hours.
  • Whisk maple syrup, brown mustard, pinch of garlic powder, pinch of paprika, pinch of black pepper, and cayenne pepper together in a small bowl; set aside.
  • Coat pork chops on all sides with seasoned bread crumbs.

Smothered Pork Chops in a Savory Pan Sauce image

These smothered pork chops are tender and juicy, with lots of savory pan sauce to spoon over your favorite side!

4 bone-in, center-cut pork chops (about 1/2 - 3/4 " thick)
3/4 teaspoon paprika
3/4 teaspoon granulated garlic
3/4 teaspoon granulated onion
Pinch white pepper
Salt
Black pepper
1/2 (heaping) cup flour, plus 2 leveled tablespoons, divided use
Avocado oil, or other "high heat" cooking oil
2 tablespoons unsalted butter
2 small onions, quartered and sliced
1/2 teaspoon Italian seasoning
1/4 cup white wine
4 cloves garlic, pressed through garlic press
2 cups chicken stock/broth
1 teaspoon thyme leaves, for garnishing

Steps:

  • Place your pork chops onto a work surface, and using a meat mallet, give each a light pounding to tenderize the meat slightly.
  • To a small ramekin, add the paprika, granulated garlic and onion, and the white pepper.
  • Season the pork chops by sprinkling over each a couple of good pinches of salt and black pepper, then sprinkle over about half of the seasoning mixture in the ramekin; flip the chops and season the other side with a couple more pinches of salt and black pepper, plus the rest of the seasoning mixture in the ramekin.
  • Add the heaping 1/2 cup of flour to a large bowl or platter, and dredge both sides of each pork chop in the flour, gently pressing, to coat; shake off any excess flour, and lay onto a plate to hold.
  • Place a large heavy bottom pan or skillet over medium high heat, and add in about 1/4 cup of oil, or enough to sear the chops; once the oil is hot, add in 2 pork chops (work in batches), and allow to sear on that first side for 4 minutes, until deeply golden-brown, then flip and sear on the second side for 3 minutes; remove from pan and place onto a plate to hold, and repeat the process with the remaining pork chops.
  • Wipe any excessively burned bits out of the pan, then add in the butter, along with about 2 tablespoons of the oil; once the butter is melted, add in the onions, along with a couple of pinches of salt and pepper, plus the Italian seasoning, and caramelize those until golden-brown, about 10 minutes.
  • Deglaze the onions with the wine (if using), and allow it to reduce for a moment; add in the garlic and stir to combine, allowing the garlic to become aromatic.
  • Next, sprinkle in the 2 tablespoons of flour and stir to combine with the onions, cooking this mixture together for about 30 seconds; next, whisk in the chicken stock/broth.
  • Reduce the heat to medium-low or low, and allow the sauce to simmer for a 30 seconds - 1 minute; then, carefully nestle each pork chop into the sauce, and insert a digital thermometer lengthwise, or horizontally, into the center of the thickest chop (the probe will go sideways rather than up and down).
  • Generously spoon some sauce over each pork chop, and allow things to gently simmer for about 5-7 minutes, or until the thermometer registers 145°; turn off the heat.
  • Allow the smothered pork chops to rest for about 10 minutes in the pan, then garnish with the fresh thyme leaves before serving with either rice or mashed potatoes

½ teaspoon paprika
1 pinch kosher salt and ground black pepper to taste
¼ cup butter, divided

1 1/2 tablespoons olive oil, (divided)
2 teaspoons paprika ((mild or smoked))
1 teaspoon brown sugar
1 teaspoon each garlic powder and onion powder
1/2-1 teaspoon red chili powder, ((optional))
2 teaspoons coarse salt
1/2 teaspoon black cracked pepper
1/2 cup (6-oz | 170 g) honey
1/2 cup (125 g | 4-oz) unsalted butter
6 cloves garlic, (finely chppped or minced)
3 tablespoons low sodium soy sauce
2 tablespoons rice wine vinegar, ((or cider vinegar))
Good pinch of salt
1/2 teaspoon cracked black pepper
1/2 cup low sodium stock (or broth), (beef or chicken)
1/2 cup water
4 teaspoons cornstarch (cornflour)

Steps:

  • Pat dry pork with paper towel. Combine 1 tablespoon of oil with rub ingredients. Season pork, rubbing the mixture into the meat.
  • Heat remaining oil (about 2 teaspoons) in a large pan or skillet over medium heat. Sear pork all over until golden browned, rotating the pork around to avoid spices burning.
  • Melt butter in the same pan the pork was in while scraping up any leftover bits in the pan. Add garlic and sauté for 1 minute until fragrant. Stir in remaining sauce ingredients; bring to a rapid simmer for 1 minute.
  • Place seared pork in a 6-qt (litre) slow cooker. Pour sauce over pork; cover with lid and cook on LOW heat setting for 4 - 5 hours.
  • Transfer pork onto serving dish and tent loosely with foil. Let rest for 10-15 minutes.
  • While pork is resting: pour juices from the slow cooker bowl into a pot large enough to fit the liquid. Bring to a simmer over medium-high heat.
  • Mix 2 tablespoons of the juices with 4 teaspoons of cornstarch (cornflour). Whisk cornstach slurry into sauce and let simmer for a good 5 minutes, or until thickend into a syrup-like consistency. (For a thicker sauce, repeat this step with 1 teaspoon cornstarch mixed with 2 teaspoons water. Add into sauce and cook until thickened (please note: sauce will thicken as it cools). Continue this step until reaching your desired consistency.)
  • Slice pork and serve drizzled with Honey Garlic Butter Sauce.
  • Preheat oven to 350°F (175°C).
  • Place seared/browned seasoned pork in a roasting pan.
  • Prepare sauce, as above. Reserve 1/2 cup sauce for basting. Pour remaining sauce over pork.
  • Add in 1/2 cup stock and 1/2 cup water around the pork.
  • Cover and roast for 20 minutes. Baste with half of the reserved sauce and continue roasting, uncovered, for a further 15 minutes. Baste again and roast for a further 10-15 minutes, until a meat thermometer registers 145°F (62.5°C) in the thickest part(If pan dries out while cooking (it shouldn't), add a little more water.)
  • Transfer pork onto serving plate and baste with pan juices. Tent loosely with foil and let rest for 10-15 minutes..
  • Scrape up any browned bits leftover in the pan, mixing them through the pan juices and pour juices into a pot. Whisk in cornstarch/stock and water mixture and bring to a simmer. Slowly add in 1/4 cup water, whisk, then add a nother 1/4 cup if needed, until reaching a honey-like consistency. (Please note: sauce will thicken as it cools).
  • Slice pork and drizzle with Honey Garlic Butter Sauce.

6 boneless sirloin pork chops (1/2 in thick)
16 ounces jellied cranberry sauce
1 (12 ounce) bottle chili sauce
3/4 cup light brown sugar, packed
1/2 teaspoon new mexico chile powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion salt

1 red onion, thinly sliced
1/2 cup mushroom, thinly sliced
2 garlic cloves, finely chopped
4 pork loin chops
1/2 cup self rising flour
salt and pepper
2 cups chicken stock (cube is fine)
2 tablespoons cold water
1 tablespoon flour (leftover from dredging)

Steps:

  • Heat olive oil in large fry pan.
  • Add onion and cook 5 minutes then add mushrooms and cook 2-3 minutes.
  • Add garlic and cook 1 minute.
  • In the meantime, mix the self rising flour with salt and pepper to taste in a shallow dish and dredge the chops. Save 1 tablespoon of the flour for later.
  • With a slotted spoon, remove the veggies from the pan and set aside.
  • Brown the chops about 2-3 minutes each side and remove from the pan.
  • Return the veggies to the pan, add the chicken stock and place the chops on top, moving them around so they become immersed in the liquid.
  • Bring to a boil then lower the heat. Cover and simmer 10-15 minutes until pork is tender.
  • Remove pork to a plate and keep warm.
  • Mix the leftover tablespoon of dredging flour with the cold water and stir into the pan until thickened.
  • Spoon gravy over chops to serve.

I started with the Peking Pork Chops recipe (Thanks, Lynda!) from this site, reviewed the reviews, and made some adjustments of my own to get the precise flavor combination I've been seeking. They're easy to prepare, and everyone I've served has raved that they're fork-tender and flavorful without being overly spicy. Serve over steamed rice (basmati, jasmine, or white).

5 (1-inch thick) pork chops
½ cup teriyaki sauce
¼ cup ketchup
¼ cup brown sugar
1 tablespoon chile-garlic sauce (such as Sriracha)
1 teaspoon ground ginger
1 teaspoon dried minced garlic
1 teaspoon dried minced shallots
½ teaspoon garlic-pepper seasoning
½ teaspoon kosher salt

Steps:

  • Arrange pork chops into the bottom of a slow cooker crock.
  • Whisk teriyaki sauce, ketchup, brown sugar, chile-garlic sauce, ginger, garlic, shallots, garlic pepper, and kosher salt together in a bowl; pour over the pork chops.
  • Cook on High for 1 hour. Switch slow cooker to Low and continue cooking until the pork chops are completely tender, about 3 hours more.
