Pork chops, bacon and cheesy scalloped potatoes make a simple, family pleasing dinner in one dish.

4 boneless pork loin chops (1/2 inch thick)
1/4 teaspoon pepper
1 box (4.7 oz) scalloped potatoes
2 cups boiling water
2/3 cup half-and-half
3/4 cup shredded Cheddar cheese (3 oz)
1/3 cup sliced green onions
2 teaspoons chopped fresh thyme leaves
5 slices bacon, crisply cooked, crumbled

Steps:

  • Heat oven to 400°F. Heat 10-inch nonstick skillet over medium heat. Sprinkle pork chops with pepper; brown 3 minutes on each side.
  • Spray 2 1/2-quart casserole with cooking spray. Stir sauce mix (from potato box), boiling water and half-and-half with whisk in casserole. Stir in cheese, potatoes (from potato box), green onions and thyme. Stir in 3 slices crumbled bacon.
  • Place pork chops on potatoes in casserole.
  • Cover; bake 25 minutes. Uncover; bake 5 to 10 minutes or until potatoes are tender, pork is no longer pink in center, and meat thermometer inserted in center of pork reads 145°F. Sprinkle with remaining bacon and, if desired, additional sliced green onions.

6 cups thinly sliced peeled potatoes
1 medium onion, sliced
Paprika and minced fresh parsley, optional

  • In a small saucepan, melt butter; stir in the flour, salt and pepper until smooth. Add broth. Bring to a boil; cook and stir for 1 minute or until thickened. 4 medium potatoes, peeled and thinly sliced
6 bone-in pork loin chops (7 ounces each)
1 tablespoon canola oil
2 large onions, sliced and separated into rings
2 teaspoons butter
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 cup fat-free milk

Steps:

  • Place potatoes in a 5- or 6-qt. slow cooker coated with cooking spray. In a large nonstick skillet, brown pork chops in oil in batches., Place chops over potatoes. Saute onions in drippings until tender; place over chops. Melt butter in skillet. Combine the flour, salt, pepper and broth until smooth. Stir into pan. Add milk. This is the greatest recipe I was ever given. It is a family favorite for us. Simple yet delicious pork chops and scalloped potatoes baked with chicken broth and a hint of paprika.

3 tablespoons butter, divided
1 ½ teaspoons salt
¼ teaspoon ground black pepper
3 tablespoons all-purpose flour
1 (14.5 ounce) can chicken broth
6 pork chops
6 cups thinly sliced potatoes
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In sauce pan melt 1 tablespoon butter over medium heat. Add salt, pepper and flour. Pour in the chicken broth, cook and stir until mixture boils. Remove from heat and set aside.
  • In skillet brown pork chops in 1 tablespoon butter. Grease a cooking dish with the remaining tablespoon butter and layer potatoes. Pour mixture over potatoes and place browned chops on top. Sprinkle paprika on top.
  • Cover and bake for 1 hour. Uncover and bake for an additional 30 minutes.

1 can (10 3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup sour cream
6 pork loin chops (1 inch thick)
Fresh parsley, chopped

Steps:

  • In a greased 13-in. x 9-in. baking dish, layer half of the potatoes and onion; sprinkle with salt and pepper. Repeat layers. Combine the soup and sour cream; pour over potato mixture. Cover and bake at 375° for 30 minutes. Meanwhile in a nonstick skillet, brown pork chops on both sides. Place chops on top of casserole. Cover and bake for 30 minutes. 5 lbs potatoes, peeled and sliced thin
6 tablespoons butter or 6 tablespoons margarine
6 tablespoons flour
salt and pepper
3 cups milk
4 -6 boneless center cut pork chops or 4 -6 boneless pork chops

Steps:

  • Melt butter in a 2 qt sauce pan over medium heat Whisk in flour and stir until smooth.
  • Season with salt and pepper and cook for 1 minute.
  • Gradually add milk, stir constantly until mixture boils.
  • Boil for 1 minute.
  • Pour mixture over potatoes, mix well, ensuring all potatoes are coated.
  • Spray a 4 qt casserole dish with non-stick spray.
  • Place a layer of potatoes in bottom of dish.
  • Top with 2-3 pork chops Cover with another layer of potatoes.
  • Top with 2-3 pork chops.
  • Cover with a layer of potatoes Bake covered at 350 degrees for 45 minutes.

6 -8 medium potatoes
5 -6 cups milk
2 teaspoons salt (1/4 tsp for chops, rest of salt for milk and potatoes)
1/2 teaspoon ground pepper (1/8 tsp to pepper chops)
2 tablespoons oil

Steps:

  • Peel and slice potatoes.
  • place potatoes in a 13x9 inch pan.
  • pour milk over potatoes (reserving 1/3 cup).
  • put oil in frying pan.
  • salt and pepper chops with above measurements.
  • as soon as oil is hot, sear chops on both sides for 4 minutes each.
  • put remaining salt and pepper in milk and potatoes, stir (add more salt or pepper to taste if needed).
  • once chops are browned place on top of potatoes and milk.
  • pour remaining 1/4 cup of milk into frying pan, heat until mixture can be poured into milk and potato baking dish.
  • give a slight stir.
  • bake for approximately 35-40 minutes or until potatoes are tender and milk is golden brown.
  • Let rest for 5 minutes and serve.

1 onion, quartered then sliced
2 ½ cups Cheddar cheese, shredded
1 cup milk
3 tablespoons butter
salt and pepper to taste
5 pork chops

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the sliced potatoes and sliced onion in a greased 9x13 inch baking dish; mix gently. Cover the potatoes and onions with cheese. Fill dish with milk halfway. Place butter in several places on top of the cheese. Place the pork chops on top. Salt and pepper to taste. Bake 60 minutes or until potatoes are tender. Turn pork chops over halfway through cooking.
