GREEK-STYLE PORK KABOBS



Greek-Style Pork Kabobs image

Plan ahead the pork needs to marinade for a minimum of 8-24 hours, if you are using wooden skewers soak them in water for at least 30 minutes before threading the meat on and grilling. I like to thread on large cherry tomatoes also --- this great served with recipe #105726 :)

1/4 cup wine vinegar
3/4 cup olive oil (or use vegetable oil)
4 tablespoons fresh lemon juice
1 1/2 tablespoons Worcestershire sauce
1 tablespoon dried oregano
1 teaspoon dried thyme
2 tablespoons fresh minced garlic (or to taste)
2 teaspoons dried red pepper flakes (or to taste)
1 teaspoon black pepper
2 lbs boneless pork (cut into about 1-1/2-inch squares)
seasoning salt
pepper

Steps:

  • In a bowl mix the first 9 ingredients until well blended.
  • Add in the pork cubes and place into a large resealable bag; seal and refrigerate for 8-24 hours turning the bag occasionally to coat pork cubes evenly with the marinade.
  • Remove the pork cubes from the bag and thread on skewers.
  • Season the pork cubes with seasoned salt and black pepper.
  • Grill over medium-high heat turning occasionally for about 5 minutes or until the pork is cooked to desired doneness.

16 baby new potatoes
700g pork tenderloin (you'll find this in most supermarkets)
lemon wedges, to serve
2 tbsp chopped fresh rosemary leaves, or 2 tsp dried
3 tbsp olive oil
½ lemon , juice only
oil , for spraying or brushing

Steps:

  • Cook the potatoes in boiling salted water for 10-12 minutes until barely tender. Drain well. Trim the pork of any excess fat and cut the meat into 3cm cubes. Thread the pork alternately with the potatoes on to 8 skewers.
  • First get the barbecue going or put the grill on to heat up. Mix the chopped rosemary, olive oil and lemon juice together and season with salt and pepper.
  • Brush the marinade over the pork and potatoes. Barbecue or grill for 14 minutes, turning once and brushing again halfway through cooking. Serve with lemon wedges.

2 garlic cloves, minced
1 1/2 tablespoons chili paste, such as Sambal Oelek
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
2 skinless, boneless chicken breasts, cut into chunks
1 yellow bell pepper, cut into chunks
12 cherry tomatoes
Cooking spray
Fresh cilantro, finely chopped
1/4 cup plain yogurt
4 medium potatoes, washed and cut into chunks
1/4 cup olive oil
1 lemon, zest and juice
3 cloves garlic, crushed
Salt and freshly ground black pepper

Steps:

  • Spicy Chicken Kebabs
  • Combine first 6 ingredients in a medium bowl. Add chicken and toss to coat. Cover with plastic wrap and refrigerate for at least 30 minutes, or up to 1 day.
  • Immerse 12 long wooden skewers in water; soak 30 minutes. Drain and pat dry.
  • Meanwhile, remove chicken from marinade (discard marinade) and thread onto skewers along with bell pepper chunks and cherry tomatoes.
  • Preheat gas grill or grill pan to medium-high heat. Coat with cooking spray. Place skewers on grill and grill 4 minutes on each side, or until chicken is no longer pink.
  • In a small bowl, combine fresh cilantro and yogurt. Serve as a dipping sauce with kebabs.
  • Lemon Potatoes
  • Preheat oven to 400 degrees F.
  • In a medium bowl, mix together the oil, lemon zest and juice, and minced garlic. Add potato chunks and toss to coat evenly.
  • Spread the potatoes in a single layer on a rimmed baking sheet. Season with salt and pepper. Bake for 30 minutes, tossing occasionally, or until the potatoes are tender and crisp.

800g pork tenderloin or pork neck (boneless), cut in 2cm chunks (28 ounces)
100ml good-quality olive oil (1/3 of a cup and 1 tbsp)
juice of 1/2 lemon
1 tbsp vinegar
1 tbsp dried oregano
1 tsp honey
salt and freshly ground pepper
8 wooden skewers
1 cucumber
2 cloves of garlic
1/4 of a cup olive oil
500g of yogurt (18 ounces)
1-2 tbsps of red wine vinegar
1-2 tbsps chopped dill (optional)
salt and freshly ground pepper to taste
8 pita breads
2 red onions, sliced
1 tomato sliced

Steps:

  • To prepare the pork souvlaki (skewers), cut the pork into 2 cm pieces and place them in a large bowl, along with all the marinade ingredients. Use your hands to mix really well, cover with plastic wrap and put in the fridge for 20 minutes.
  • In the meantime prepare the tzatziki sauce for the pork souvlaki. Pour into a food processor the olive oil and 2 cloves of garlic; blend until the garlic is diluted (don't leave any large pieces of garlic). Into a large bowl, grate the cucumber, season with salt and pepper and leave it aside for 10 minutes. Wrap the grated cucumber into a towel and squeeze, in order to get rid of most of the water. Into a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of chopped dill, 1-2 of red wine vinegar, salt and pepper and mix. Tore in the fridge and serve cold.
  • Cut the wooden skewers to fit your griddle pan and soak them in water for 10 minutes. (This will prevent them from burning.) Thread the pieces of pork, comfortably, on the skewers.
  • Preheat a grill or griddle pan on a high heat. Cook the pork skewers for about 10 minutes, turning occasionally, until nicely coloured and cooked through.
  • While your pork is cooking, prepare the pita breads. Preheat the oven to 250C. Use a cooking brush to oil the pita breads on both sides and season with salt and oregano. Place a large oven tray (upside down) at the bottom of the oven and place the pita breads on top of the tray. Bake for 1-2 minutes.
  • To serve the pork souvlaki (skewers), slice 2 red onions and place on a platter; top with the pork skewers, drizzle with some extra virgin olive oil and a good squeeze of lemon juice. Serve while still warm with some pita breads and tzatziki sauce or wrap them up like a sandwich, adding some tzatziki, sliced onions and tomatoes. Enjoy!

2 1/2 lb pork tenderloin (trimmed and cut into 1 1/2" pieces)
1 Tbsp Italian seasoning
1 1/2 tsp sea salt
1/2 tsp garlic powder
1/2 tsp black pepper
2 Tbsp olive oil
1 large red onion (cut into 1" pieces)
1 Tbsp fresh parsley to garnish (optional)

Steps:

  • In a large mixing bowl (or ziploc bag), combine chopped pork, 1 Tbsp Italian seasoning, 1 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper and stir until well combined. Separate onion pieces and add them to the bowl. Add 2 Tbsp olive oil and toss to combine. Cover and marinate in the refrigerator for at least 4 hours and preferably overnight.
  • Thread the kabobs onto metal skewers*, alternating between meat and onion. For even browning, the meat and onions should be just touching on the skewers and not crowded together. Let your skewers stay at room temperature for 30 minutes before placing on the grill.
  • Preheat your grill to Medium/high heat (400˚F). Add skewers in a single layer and grill for 8-10 minutes total. Meat skewers turn like a triangle so we cook about 3 minutes per side on all 3 sides. Grill until cooked through and meat reaches at least 145˚F internal temperature. Rest skewers 3 minutes before serving.

When I was a kid our butcher sometimes had a thing called "City Chicken", which was pork cubes threaded on bamboo skewers to be breaded and fried like fried chicken. I haven't seen that in years. But butcher-pack, boneless, pork loin is always cheap at Sam's Club so here's how I adapted a modern, lighter, healthier favorite for chicken to use on "the other white meat."

1/3 cup lemon juice

  • Mix marinade ingredients in a plastic, zipper bag.
  • Add pork cubes and marinate at least 1 hour but not more than 6.
  • Thread meat on skewers. Brush with olive oil.

This recipe comes from New Zealand celebrity chef Mike King courtesy of the NZ Pork Industry Board. The marinade is simple to prepare and imparts a wonderful smell and aroma to the pork. As written, this recipe includes my favorite vegetables for kebabs but you should feel free to use your own. Cooking time includes marinading the pork.

1 lb lean pork loin, cut into 1 inch cubes
1/2 cup lemon juice
1 tablespoon oil
2 teaspoons dried oregano
1 teaspoon rosemary sprig
1 garlic clove, crushed
1/4-1/2 teaspoon fresh ground black pepper
1 medium red pepper, cut into large chunks
1 medium zucchini, cut into 3/8 inch thick slices
8 grape tomatoes
1 medium onion, cut into large chunks
8 medium white mushrooms

Steps:

  • For the marinade combine all ingredients in a resealable plastic bag or non-reactive bowl.
  • Trim the pork of all visible fat and cut into 1 inch cubes. Place cubes in bag and marinate in the fridge for 30 minutes. (You can also toss the vegetables in if you like. Mushrooms and zucchini are especially good in absorbing the flavor.).
  • In the meantime soak wooden skewers in water.
  • Wash and cut vegetables for kebabs.
  • Thread kebabs alternating between the pork cubes and vegetables. Depending on the size of your pork cubes and the length of the skewers, you will have 1 large or 2 small skewers per person.
  • Place on indoor or outdoor grill and cook for 8 to 10 minutes.

12 oz raw lean boneless pork loin (cut into 12 1-inch cubes)
1 large sweet potato (peeled, cut into 12 1-inch cubes)

Steps:

  • Combine oil, lemon juice, rosemary, parsley, garlic, and salt in a large resealable bag.

  • Preheat grill or broiler on high.
  • Boil water in steamer or large saucepan over high heat. Reduce heat to medium-high. Place sweet potato pieces in steamer basket; cook for 3 to 4 minutes, or until tender-crisp. Place in ice water bath to stop cooking process. Set aside.
  • Place a piece of pork, sweet potato, onion, red bell pepper, and green bell pepper onto a skewer. Repeat, so the skewer has two pieces of each ingredient. Repeat with five remaining skewers. Discard marinade that contained pork.
  • Grill (or broil) skewers for 8 to 10 minutes, turning every 2 minutes, or until sweet potato is softened and pork is no longer pink in the middle.
