PORK CHOPS WITH APPLES AND ONIONS

Pork Chops with Apples and Onions image

Sauteed apples and onion combine with pork chops for a tastiness that never disappoints.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 7

6 bone-in pork chops (loin or shoulder), cut 3/4 inch thick
Coarse salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil or vegetable oil
2 tablespoons unsalted butter
1 large white onion, sliced
2 to 3 apples, cored and sliced (about 3 cups)
1 cup beer, white wine, cider, or chicken broth

Steps:

  • Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
  • Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
  • Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

  • In a large skillet, melt the butter and add the 1/4 cup brown sugar, diced apples and cinnamon. Toss the apples around and make sure they are fully coated by butter and sugar and saute for about 3 minutes. Do not stir during the first 3 minutes, so that the apples caramelize on one side. After 3 minutes toss the apples again and let them caramelize for another 3 minutes on the other side. Let cool.
  • Butterfly the pork loin, basically cut the pork down the center, without completely cutting through, so when you open the two halves they resemble a butterfly. Use your meat mallet to flatten it a bit.
  • Take the cooled apples and spread them down the center of the pork loin and bring the 2 sides up around filling the meat. Use butcher twine to tie around the roll tightly at 1 inch intervals.

  • Heat 1 tablespoon olive oil in a pan over medium high heat. Add in apples and onions, salt them using about 1/4 tsp, and saute for about 5 minutes. Turn heat to low and continue to saute for about 10 more minutes until apples are softened and onions are translucent. During the last 2 minutes add in the brown sugar and stir through. Remove from pan and set aside.
  • Use the remaining olive oil to rub over your pork chops. Season both sides with a little salt and pepper. Remember that pork needs salt so don't skimp.
  • Heat the pan used to cook the apples and onions until it is smoking hot (a drop of water would instantly sizzle like crazy and evaporate). Put the pork chops in and sear them for about 2 minutes on each side. They'll get a nice brown crust on them so you'll know they are perfect.
  • Add in the apple juice and turn the heat down to medium low. The apple juice will sizzle and reduce fairly quickly as the pork chops finish cooking. This apple juice reduction will serve as a bit of a sauce. The remaining cooking time on your pork chops will depend on how thick they are cut. It will probably only take about 4 minutes per side total. See the cooking lesson above for more information on cooking pork.
