- In a small bowl, combine the butter, chives, parsley, garlic and pepper. Cut a pocket in each pork chop. Fill with butter mixture; secure with toothpicks. , In a shallow bowl, beat egg and water. Place flour and bread crumbs in separate shallow bowls. Dip chops in flour, then in egg mixture; coat with bread crumbs. , In a large skillet over medium heat, cook chops in oil for 6-8 minutes on each side or until meat juices run clear.

Steps:
- Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
- Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
- In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
- Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.

CARAMELIZED PORK LOIN
Steps:
- Preheat oven to 375 degrees F.
- Melt the butter in a large skillet over medium-high heat. Add the brown sugar, cinnamon and diced apples and toss to coat. Saute 3 minutes, without stirring to let the apples caramelize on 1 side. Toss and saute another 3 minutes. Remove from the heat and cool completely.
- Butterfly the tenderloin by cutting the beef lengthwise down the center to within 1/2-inch of the other side. Flatten with a meat mallet.
- When the caramel apples have cooled spread the mixture down the center flap of pork. Sprinkle with salt and pepper, to taste. Spoon the apple mixture down the center of the pork roast. Bring the 2 sides of the tenderloin up around filling to meet. Use butcher string and tie around the roll at 1-inch intervals.
- Season the stuffed and tied pork loin with salt and pepper. Sear the pork loin in vegetable oil in a large Dutch oven over medium-high heat, turning to get all the sides. Pour the apple cider over the pork. Roast uncovered for about 1 hour and 20 minutes or until an instant-read thermometer inserted into the center of the roast registers155 degrees F.
- Remove from the oven and let rest, tented with foil, for 15 minutes before slicing. Serve with pan juices.

PORK CHOPS WITH APPLES AND ONIONS

- Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
- Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
- Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

- Combine hard apple cider and 1/4 cup brown sugar in a slow cooker; mix until dissolved. Add pork tenderloin.
- Cook tenderloin on Low until very tender, about 6 hours. Shred pork with a fork.
- About 20 minutes for the pork is finished, melt butter in a large skillet over medium-low heat; cook and stir onion until well browned, about 10 minutes.
- Combine 1/2 cup brown sugar, cinnamon, and onion powder; season with salt and pepper. Stir apples and sugar mixture into cooked onion. Cover and cook until apples are tender and sauce has thickened, about 10 minutes more.
- Spoon pork and apple-onion sauce over rolls to serve.

PORK KIEV WITH CARAMELISED APPLES

- Preheat the oven to 200C/400F/Gas 6. Using a sharp knife, carefully remove the bones from each chop.put each chop into a plastic bag and flatten with a mallet or rolling pin until each chop is approx ½cm thick. For the stuffing, mix together the parsley, cheese, apple and spring onions. Spread this mixture across the middle of the flattened pork. Fold the excess meat around the stuffing like a blanket. Secure with toothpicks in necessary. Coat each stuffed pork kiev in the egg, then dredge in the flour, then in the egg, then dredge to coat in the breadcrumbs. Place in a pre-heated oven for 10-15 minutes NB cooking time may vary depending on size of chop used in the kiev. Meanwhile, for the caramelised apples, heat the butter in a frying pan. Add the apple 1/4s and garlic; cook over medium heat for 3-5 minutes, until golden. Add the white wine, reduce slightly, then remove from heat and serve. Remember to remove the toothpicks from pork before serving, if used.

- Drizzle the chops with a little olive oil and black pepper leave to sit in the fridge until you need to cook them-all day is fine.
- Preheat the oven to 375 degrees F (190 degrees C). Place a baking sheet in the oven to heat up.

- Preheat your oven to 220°C/Fan 200°C/Gas Mark 7. Line a roasting tin with a sheet of foil large enough to cover the pork later. Loosely fold the foil back for now. Remove the string, unroll the pork, pat dry with kitchen paper and place in the tin.
- Mix together the salt, pepper, onion powder, sage and sugar. Rub the mix lovingly all over the pork. Roll the pork up again (there is no need to re-tie the string) and put it in the oven for 15 minutes until beautifully browned.

Add the apples, cut side down and cook over a medium heat, gently shaking the pan occasionally for about 8 minutes or until the apples are lightly caramelised.

- Heat 1 tablespoon olive oil in a pan over medium high heat. Add in apples and onions, salt them using about 1/4 tsp, and saute for about 5 minutes. Turn heat to low and continue to saute for about 10 more minutes until apples are softened and onions are translucent. During the last 2 minutes add in the brown sugar and stir through. Remove from pan and set aside.
- Use the remaining olive oil to rub over your pork chops. Season both sides with a little salt and pepper. Remember that pork needs salt so don't skimp.
- Heat the pan used to cook the apples and onions until it is smoking hot (a drop of water would instantly sizzle like crazy and evaporate). Put the pork chops in and sear them for about 2 minutes on each side. They'll get a nice brown crust on them so you'll know they are perfect.
- Add in the apple juice and turn the heat down to medium low. The apple juice will sizzle and reduce fairly quickly as the pork chops finish cooking. This apple juice reduction will serve as a bit of a sauce. The remaining cooking time on your pork chops will depend on how thick they are cut.
