Enjoy this apricot preserves and vinegar marinated grilled pork chops and veggies recipe for dinner that's ready in just 30 minutes - serve over hot cooked rice!

4 (1/2 to 3/4-inch-thick) boneless pork loin chops (1 lb.), trimmed of fat
1/2 teaspoon seasoned salt or dried pork seasoning
2 small zucchini, cut into 12 (1-inch) pieces
8 medium mushrooms
1 medium red bell pepper, cut into 12 pieces
1/2 cup apricot preserves
1 tablespoon cider vinegar

Steps:

  • GRILL DIRECTIONS: Heat grill. Sprinkle both sides of each pork chop with seasoned salt; cut each chop into 4 pieces. Alternately thread pork pieces, zucchini, mushrooms and bell pepper evenly onto four 12 to 14-inch metal skewers. In small bowl, combine preserves and vinegar; blend well.
  • When ready to grill, place kabobs on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Brush with preserves mixture. Cook 5 minutes. Turn kabobs; brush with remaining preserves mixture. Cook an additional 5 to 7 minutes or until pork is no longer pink. If desired, serve over hot cooked rice.

Pinchos are grilled marinated chunks of pork or chicken on a stick, Puerto Rico's version of shish kebab. The traditional way to eat pinchos is with a slice of soft, warm bread. It's one of the island's most popular street foods, and some of my favorite childhood memories are of sitting and talking or dancing around by my cousin's roadside pinchos stand. There are lots of versions of pinchos, but what I think makes this recipe especially good is the use of sofrito, the magical Puerto Rican blend of herbs and aromatics that's the base of some of our tastiest dishes. Sofrito is easy to make yourself, or you can buy it premade.

1/2 cup sofrito
1/3 cup olive oil
1 1/2 tablespoons sazon
1 1/2 tablespoons adobo seasoning
1 1/2 teaspoons onion powder
1 1/2 teaspoons granulated garlic
1/2 teaspoon ground black pepper
2 1/2 pounds pork tenderloin, cut into 2-inch cubes
1/4 cup barbecue sauce
1 loaf bread, sliced 1 1/2-inch thick

Steps:

  • Combine the sofrito, oil, sazon, adobo, onion powder, granulated garlic and black pepper in a large bowl. Add the pork and toss to coat. Marinate the meat at least overnight or 12 hours for best results.
  • When ready to cook, remove the meat from the refrigerator. Drain off and discard the marinade. Preheat a grill to 450 degrees F or medium-high heat. Thread the meat onto 12- or 14-inch skewers, leaving a 3-inch space at the bottom of each skewer.
  • Place the skewers on the grill and grill for 3 minutes. Carefully flip the skewers and grill the other side for 3 minutes. Flip the skewers again and cook for an additional 2 minutes on the other side, then brush the pinchos with barbecue sauce. Flip once more and cook until the pinchos are browned and an instant-read thermometer inserted into the pork registers 145 degrees F, about 2 minutes more. Remove from the grill, brush again with barbecue sauce, and rest 5 minutes before serving. Toast the slices of bread on the grill; skewer one slice onto the top of each pincho.

PINCHOS MORUNOS (SPANISH PORK SKEWERS)

These addictive Spanish pork skewers are called pincho morunos because of their fascinating history. The marinade is a delicious blend of spices and they make the perfect tapa!

2 pounds of pork tenderloin (cleaned of excess fat/veins (1 kilo))
1 tablespoon ground cumin (approx. 7 grams)
1 teaspoon ground coriander (approx. 2.5 grams)
1 tablespoon sweet Spanish paprika (approx. 7 grams)
1 teaspoon ground turmeric (approx. 2.5 grams)
1 teaspoon oregano (approx. 2.5 grams)
1/2 teaspoon freshly ground black pepper (approx. 1 gram)
1/4 teaspoon ground cinnamon (approx. .5 grams)
1 teaspoon salt (approx. 2.5 grams)
5 minced garlic cloves
1/4 cup extra virgin olive oil ((60 ml))
Juice of 1/2 a lemon (for marinade)
Lemon wedges (for serving)

Steps:

  • Trim the pork loin of excess fat and then cut into 1.5 inch cubes and put into a large freezer bag
  • Mix all spices, olive oil and lemon juice in a bowl and then pour over the pork cubes
  • Seal the bag and toss the spice mixture with the pork, then marinate in the fridge overnight (or a minimum of 2 hours)
  • Remove the marinated pork cubes and place on metal skewers with a little bit of space between each cube
  • Grill on a high heat until browned on the outside but just cooked through (don't overcook or they'll be dry!)
  • Rest the skewers for five minutes and serve with lemon wedges

1/2 cup vegetable oil
1/4 cup chopped onion
3 tablespoons lemon juice
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon dried marjoram
1/8 teaspoon pepper
2 pounds boneless pork, cut into 1-inch cubes
CUCUMBER YOGURT SAUCE:
1 cup plain yogurt
1/2 cup chopped cucumber
1 tablespoon chopped onion
1 tablespoon minced fresh parsley
1 teaspoon lemon juice
1/8 teaspoon garlic salt
Pita bread

Steps:

  • In a resealable plastic bag or shallow glass container, combine the first 8 ingredients; add pork and toss to coat. Seal or cover and refrigerate overnight. , Meanwhile, combine sauce ingredients; cover and refrigerate for several hours. Drain pork and discard marinade; thread pork on skewers, leaving a small space between pieces. , Grill, uncovered, over medium heat for 8-10 minutes or until the meat is no longer pink, turning frequently. Serve in pita bread with sauce.

Enjoyed at bars all over Spain, pinchos are wonderful kebabs that taste equally good made with pork, chicken, prawns or lamb. At some bars, the seasoning is as simple as garlic and hot, sweet paprika. Here is a favorite marinade recipe for Pinchos Morunos. Recipe courtesy Anya von Bremzen, The Spanish Table. 2 tablespoons chopped onions
4 large garlic cloves, chopped
1 tablespoon spanish sweet smoked paprika
1/2 teaspoon spanish hot smoked paprika or 1/4 teaspoon cayenne
coarse salt (kosher or sea)
1 teaspoon dried oregano
1 teaspoon black peppercorns
2 teaspoons dried thyme
1 teaspoon ground cumin
1/8 teaspoon ground cinnamon
1 bay leaf, crumbled
2 tablespoons white wine vinegar (good quality)
2 tablespoons dry white wine (optional)
3 tablespoons olive oil, plus more for brushing the kebabs
1 1/2 lbs chicken breasts or 1 1/2 lbs prawns

Steps:

  • Place the onion, garlic, sweet and hot paprikas, 2 tsp of the salt, the oregano, peppercorns, thyme, cumin, cinnamon, bay leaf, vinegar, wine (if using) and olive oil in a mini food processor and process to a paste.
  • Place the pork in a bowl and rub a little salt on it. Scrape the marinade into the bowl with the meat and toss to combine thoroughly.
  • Cover the bowl and refrigerate the pork for 4-6 hours, tossing a few times. Let the meat come to room temperature before grilling.
  • Light the grill and preheat it to medium-high or preheat a large ridged grill pan to medium-high over medium heat.
  • When ready to cook, thread the meat onto the skewers and brush it with a little olive oil.
  • Cook the meat, brushing with olive oil and turning once, until it is just cooked through, 5-7 minutes. (If you are cooking lamb and would like it medium-rare, don't cook it quite so long). Serve the kebabs at once.

3 lbs boston butt, cut into 1-inch cubes
1 tablespoon minced garlic
1 tablespoon olive oil
3/4 tablespoon salt
1/2 tablespoon black pepper
1/2 teaspoon oregano
1 onion, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
wooden skewer

Steps:

  • Mix olive oil, oregano, garlic, salt, and pepper.
  • Mix seasoning with meat.
  • Place in ziplock and let sit overnight in refrigerator.
  • Place 1 piece of meat, then 1 piece of onion, then 1 piece of pepper on skewer and repeat until you have 4 pieces of each on the skewer.
  • Grill for at least 20 minutes turning once or twice on the grill.
  • You can place a sliced of grilled french garlic bread on the tip of the skewer.

6 garlic cloves (peeled)
2 teaspoons salt
1 1/2 teaspoons pepper
3 teaspoons dried oregano
3 teaspoons olive oil

  • Using a pilón (mortar and pestle), mash the garlic cloves and salt into a paste.

  • Fill a quart size mason jar with the white wine vinegar, sofrito, olive oil, sazon, granulated garlic, onion powder, adobo, oregano, and black pepper. Screw the jar's lid on tightly and shake the contents vigorously until well combined.
