4 (1/2 to 3/4-inch-thick) boneless pork loin chops (1 lb.), trimmed of fat
1/2 teaspoon seasoned salt or dried pork seasoning
2 small zucchini, cut into 12 (1-inch) pieces
8 medium mushrooms
1 medium red bell pepper, cut into 12 pieces
1/2 cup apricot preserves
1 tablespoon cider vinegar

Steps:

  • GRILL DIRECTIONS: Heat grill. Sprinkle both sides of each pork chop with seasoned salt; cut each chop into 4 pieces. Alternately thread pork pieces, zucchini, mushrooms and bell pepper evenly onto four 12 to 14-inch metal skewers. In small bowl, combine preserves and vinegar; blend well.
  • When ready to grill, place kabobs on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Brush with preserves mixture. Cook 5 minutes. Turn kabobs; brush with remaining preserves mixture. Cook an additional 5 to 7 minutes or until pork is no longer pink. If desired, serve over hot cooked rice.

2 cups red wine Sangria

Steps:

  • Place pork pieces into a bowl, add sliced onion. Season with salt and pepper, mix until everything is combined. Cover with plastic wrap or a lid and refrigerate over the night or for at least 4 hours.
  • 1 hour before grilling, pour up to 2 cups of Sangria wine to cover the meat, marinate for 1 hour.
  • Using charcoal for grilling, get them ready for grilling by lighting up and let them burn until they turn white. If using a grill preheat to medium/high heat. Brush grill with oil so meat doesn't stick. Grill pork kabobs until meat is no longer pink inside. Serve with homemade Easy Cheesy Scalloped Potatoes or Homemade Mac & Cheese.

2 tablespoons rice vinegar

1 small red or orange sweet pepper, cut into 1-inch squares* (See Cook's Note)
6 ounces shiitake mushroom caps or white mushroom caps, halved if needed* (See Cook's Note)
1 small zucchini, halved lengthwise and cut into ¾-inch pieces* (See Cook's Note)
¼ cup pepper jelly or orange marmalade, melted

Steps:

  • In a self-sealing plastic bag combine cubed pork, soy sauce, vinegar, ginger and Dijon-style mustard (or Chinese Five Spice); seal bag and refrigerate for 1 to 4 hours.
  • Prepare medium-hot fire with charcoal or preheat gas to medium high.

1 red onion
1 large yellow squash
1 large zucchini
a handful of grape tomatoes
1.5 lbs Smithfield® Mesquite Pork Loin Filet

Steps:

  • Soak your wooden skewers in water overnight. This prevents the sticks from burning in the oven, which can seriously effect the taste of your kabobs.
  • Preheat the oven to 375 F.
  • Slice up all of your veggies into 1-2" pieces.
  • Cut marinated pork loin filet into bite size pieces, about 1-2" squares.
  • Thread the marinated pork and vegetables onto your soaked wooden skewers.
  • Arrange your assembled kabobs onto a baking sheet that has been coated with nonstick cooking spray, leaving at least 1" between kabobs on the sheet.
  • Cook the kabobs in the oven for 20 to 30 minutes, turning every 5 to 10 minutes.

2 lbs pork loin, cut into large cubes (trim the fat)
2 bell peppers, diced into large squares
1 red onion, diced into large squares
¼ cup olive oil
2 Tbs lemon juice
3 cloves garlic, minced
2 tsp dried oregano
1 tsp garlic salt
½ tsp black pepper
½ tsp garlic powder
About 15 skewers

Steps:

  • Put all the cut-up pork, bell peppers and onions in a large Ziploc bag or deep baking dish
  • Prepare the marinade by mixing together the olive oil, lemon juice, garlic, oregano, salt, pepper, and garlic powder in a small bowl
  • Once mixed, pour the marinade all over the pork, bell peppers and onions. Mix thoroughly until everything is coated well
  • Cover and place in the fridge to continue marinating for AT LEAST 30 minutes but preferably 2 hours or overnight
  • When you're ready to cook, preheat oven to 375 degrees and line a large baking sheet with parchment paper. If you're using wooden skewers, you can soak them in cold water for 15 minutes before adding the pork and veggies to them (this will prevent the skewers from burning in the oven)
  • Remove the marinated pork and veggies from the fridge and start threading them through the soaked skewers. You can use any pattern you like when adding them to the skewers
  • Place the kabobs side by side on the prepared baking sheet making sure there is some space in between each kabob (this will ensure better heat distribution and even cooking). You can use a second baking sheet if you don't have enough space
  • Place the kabobs in the oven and bake for about 12 minutes. Then flip all the kabobs and bake for an additional 12 minutes
  • Serve immediately with pita bread, hummus, lemon slices or your choice of salad!

Steps:

  • In a large mixing bowl (or ziploc bag), combine chopped pork, 1 Tbsp Italian seasoning, 1 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper and stir until well combined. Meat skewers turn like a triangle so we cook about 3 minutes per side on all 3 sides. Grill until cooked through and meat reaches at least 145˚F internal temperature.
