Inihaw Marinade (Filipino Grilling Marinade) image

This is a popular marinade in the Philipines for pork belly. Can also be used on chicken or beef.

3/4 cup(s) soy sauce
5/8 cup(s) lime juice
1 tablespoon(s) garlic powder (not salt)
3/4 teaspoon(s) ground black pepper
1 tablespoon(s) sriracha sauce

Steps:

  • Combine all ingredients and mix well.
  • Place meat in a zipper-type bag and pour marinade over.

1/2 kilo pork spare ribs
1/4 cup vinegar
1/4 teaspoon crushed peppercorn
1 small garlic, minced
1 tbs brown sugar
2 tbs soy sauce
1 tsp salt

Steps:

  • Combine all the ingredients and marinate the pork for 1 hour or overnight. Drain off excess liquid. Roast pork spareribs over hot coals or in a broiler.

  • Make the marinade by combining the soy sauce, ketchup, garlic, salt, sugar, ground black pepper, and lemon juice in a bowl. Mix well.
  • Arrange the pork chops in a ziploc bag or resealable plastic bag. Pour the marinade inside the bag. Let the air out and seal the bag. Place in the fridge to marinate for 5 to 8 hours.
  • Separate the pork chops with the remaining marinade. Place the marinade in a bowl and then add cooking oil. Stir.
  • Heat-up the grill. Grill the marinated pork chops in medium heat for 3 to 4 minutes per side while basting with the remaining marinade and oil mixture. Do this step twice and add more grilling time as needed.

  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place and allow to preheat for 5 minutes. Clean and oil the grilling grate. Remove pork from marinade and place over hot side of the grill. Cook until well seared and cooked through, 2-3 minutes per side. If flare-ups occur, move pork to cool side of grill until flare-up subsides, then move pork back to hot side of grill.
  • Remove pork from grill and let cool for 5 minutes. Cut into 1/4-1/2-inch slices and serve with dipping sauce.
