- Rinse meat add vinegar, garlic, adobo, oregano, and olive oil. Let marinate 2 hours or overnight.
- Deep fry at 350 degrees in medium sized batches till done , about 10 -12 minutes. Drain and serve.

- Cut the pork in about 1 inch pieces and saute in a pan with the vegetable oil for about 3 minutes over medium-high heat, until the pork is no longer pink and starts to brown.
- In a medium bowl mix the rest of the ingredients. Pour over the pork and bring to a boil. You may think there's too much water, but it will reduce. Once it's boiling turn the heat down to low and let simmer for about 30 minutes uncovered, stirring occasionally, or until there's only about 3 tbsp of sauce left.
- Garnish with green onions. Serve over noodles or steamed rice.

INSTANT POT AND AIR FRYER CUBAN PORK CHUNKS (MASITAS DE PUERCO)
Masitas de Puerco, or Fried Pork Chunks, is one of my favorite Cuban dishes. Traditionally it is made by boiling marinaded pieces of pork in a large pot of water and lard. The boiling water tenderizes the meat and once the water has evaporated and boiled off, the lard is left in the pot and then the pork is fried in that fat until it is crispy. By combining the Instant Pot and the Instant Air Fryers, I could convert this wonderful recipe into a weeknight meal that took less time, was much healthier, but still had the same flavor and texture as the original.

- Cut the boneless Country Style Pork meat into 2 inch chunks and place in a Gallon Ziploc bag. DO NOT trim off the fat.
- Slice 1/2 of an Onion and 3 minced cloves of Garlic, and add to the Ziploc bag.
- Pour 1 cup Mojo Marinade and 1/2 cup cold Water into the Ziploc bag with Pork, Onion, and Garlic, and marinade in the fridge for 24 hours (you can marinade for a minimum of 4 hours but longer is better).
- When done marinading and ready to cook, pour the entire contents of the Ziploc bag into your Instant Pot. Lock the Instant Pot Lid into place and make sure the Valve is set to the Sealed position. Pressure cook on High for 22 mins and allow to Natural Pressure Release completely which will take 15-20 mins.
- While the Pork is cooking, in a small bowl mix together 2 Tbl Olive Oil, 1/2 Tbl Sazon Completa seasoning, and 1/4 tsp Salt. Set aside.
- When the Pork is done cooking and all the pressure is released, using tongs, transfer the Pork to a plate lined with paper towel. Pat the Pork dry and let sit, the drier it is the better it will crisp up int he oven. Drizzle the Olive Oil and Seasoning mixture over the Pork and gently toss to coat all the Pork.
- Preheat the Omni on Air Fry at 450 degrees.Place the pieces of Pork on the Air Fry basket tray that comes with the Omni. Leave space between the pieces.Place the drip pan on the very lower level and the baking rack on the middle level of the Omni. Place the Air Fry Basket Tray on the Baking Tray.Preheat the Omni by selecting Air Fry at 450 degree F for 8 mins. (the picture shows 10 mins and 425, but I only cooked them for 8 mins on 450.) You do not need to flip.
- Place the Pork on the Slotted Baking Tray.Preheat the Vortex Plus on Air Fry at 400 degrees for 10 mins.Add the tray of Pork to the middle position. If you need to use 2 trays, place one tray on the bottom position and one tray in the middle position. Rotate halfway through cooking.
- Once the Pork is done Air Frying and the outside of the Pork is golden brown, remove to a bowl or serving plater. Squeeze with Lime and sprinkle with a pinch of salt. Serve.Buen Provecho!

This recipe just came from my head one evening, when I was decideing what to do with 3 left over pork-chops, I know that I wanted the prok to taste spicy, and I just love onion a garlic, so here it is, enjoy, is great served with rice.

- Cut three pork chops into chunks, set aside.
- Pour a little Olive Oil in Wok or Fry pan, doesn't matter, Turn stove on Medium heat, when oil is hot put in 3 minced garlic cloves, and 1/4 onion chopped. Saute until garlic starts to turn a little brown, add Pork Chunks, Cook until Pork is done, (no pink in middle) I like my Pork well done.
- While pork is cooking, add to your taste creole seasoning, salt, pepper, Greek Rub, (I use pampered chef brand), Onion Powder, and Season Salt, all to your taste. Cook for a few more minutes, then add 1/2 cup Soy sauce, this gives the pork a nice brown color, Cook until Soy sauce is almost gone.
- Put a lid on over the pork, on low heat for about 5 minutes.
- Then it's ready to eat.
- We like to serve this with sticky rice. Either on the side, or mixed with it.

- Slice the pork shoulder in half lengthwise. Cut each piece across into thin, 1/8-inch slices.
- Transfer pork to a mixing bowl and add garlic, onion, brown sugar, salt, pepper, paprika, cumin, and cayenne. Mix with your hands until thoroughly combined.
- Wrap in plastic wrap and transfer into a refrigerator for 4 hours, or up to overnight.
- Preheat an charcoal grill for medium-high heat and lightly oil the grate.
- Weave pork slices on metal skewers, folding the longer pieces in half as you go. Slices should be pressed snugly together as you build the skewer.
- Grill skewers over the hot charcoal until browned and no longer pink, turning frequently, about 30 minutes. Brush on barbecue sauce and turn skewers several times so the sauce caramelizes, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Serve immediately.

- Preheat the oven to 350 degrees.
- In a large oven-safe baking dish, gently toss the pork with salt, pepper, onion, and olive oil. Cover the dish with aluminum foil and bake for 1 hour.
- In the meantime, stir together the honey, dried red chili flakes, and garlic. Set aside.
- Remove the pan from the oven and add the honey and garlic mixture. Stir into the pork bites. (There will be a lot of water in the pan - do not drain!) Bake for 30 minutes, uncovered.
- Remove dish from oven, stir, and bake for 30 minutes. Then, repeat this step once more.
- Lastly, remove the dish from the oven again, add the sesame seeds, stir, and return to the oven for 30 minutes.
- Remove from oven, and allow to cool for five minutes. Sprinkle with chopped, fresh parsley and sesame seeds. Serve.

Steps:
- Cut the pork into strips approximately 2 inches by 3/4 inches in size (do not trim any of the fat off).
- Place the pork strips in a high-sided skillet, and add just enough cold water to barely cover the pork.
- Add the salt, then bring the liquid to a boil over high heat. Reduce the heat to bring the water back down to a simmer (medium low heat), and simmer until the water has evaporated, approximately 90 minutes.
- Reduce the heat more, somewhere between low and medium low, and keep cooking the pork for about another 30 minutes, turning the meat every 10 minutes or so, until the fat has rendered out, and the pork is browned all over.
- Serve and enjoy!

- Preheat a deep-fryer or heavy-bottomed pot, with enough canola oil to come halfway up the sides of the pot, to 375 degrees F.
- In a medium-sized bowl, mix together the chives, jalapenos, shallots, garlic, white wine vinegar, and mustard. Season with salt and pepper, to taste. Set aside.
- Season the pork with salt and pepper, to taste. In a medium-sized bowl, whisk the buttermilk and egg together. In a large bowl, combine the flour, paprika, cayenne, salt and pepper, to taste. Coat the pork on all sides in the buttermilk. Drain the pork from the buttermilk and add the chunks to the flour. Toss the pork in the flour insuring all of the pork is coated evenly. Shake off excess flour. Working in batches, deep-fry the nuggets until cooked through and crisp, about 3 to 4 minutes. Remove the pork from the fryer to a paper towel lined platter to drain. Transfer the pork to a serving platter and serve with jalapeno mustard.
