Pork Chops with Tangy Honey Sauce image

These sweet and tangy pork chops are flavorful and very easy to make. I pour the marinade over the pork chops in a freezer bag, then freeze them for future use. I take them out of the freezer the night before I want to serve them, and thaw in the refrigerator. By dinner time, they are ready to bake, making a quick and delicious meal!

1 clove garlic
¼ cup apple cider vinegar
2 tablespoons soy sauce
½ cup honey
¼ teaspoon ground ginger
1 pinch ground black pepper
6 pork chops

Steps:

  • Place pork chops into a large resealable bag. In a blender or food processor, combine the garlic, vinegar, soy sauce, honey, ginger, and pepper. Puree until the garlic has been finely chopped. Pour this mixture over the pork chops. Seal, and marinate in refrigerator at least 4 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Transfer the pork chops and marinade to a baking dish.
  • Bake uncovered in the preheated oven until the sauce has reduced, and the pork is no longer pink in the center, about 25 minutes.

1/2 c white onion, diced
3 Tbsp fresh garlic, minced (divided)
1/3 c red wine (or unsalted chicken stock)
2 Tbsp sugar
2 Tbsp red currant fruit spread
1/4 c red wine vinegar
1 1/2 Tbsp lemon rind, grated
4 center-cut pork chops, trimmed (6 oz. each, bone-in)
1/2 tsp freshly ground black pepper
1/4 tsp kosher salt

Steps:

  • 1. Heat a saucepan over medium heat. Coat pan with cooking spray. Add onion and 1 tablespoon garlic; cook 4 minutes or until onion is tender. Add wine, cook 5 minutes or until liquid almost evaporates. Add sugar and fruit spread; bring to a boil. Cook 1 minute. Add vinegar, return to a boil. Cook until reduced to 1/2 cup (about 5 minutes).
  • 2. Heat a large grill pan over medium-high heat. Coat with cooking spray. Combine 2 tablespoons garlic and lemon rind; sprinkle evenly over pork; pressing to adhere. Sprinkle evenly with pepper and salt.
  • 3. Add pork to pan; cook 3 minutes on each side or until desired degree of doneness. Remove from pan, let stand 5 minutes. Drizzle with wine reduction sauce or serve on the side.

1 (4 pound) boneless rolled pork loin roast
½ cup soy sauce
½ cup cooking sherry
2 cloves garlic, minced
1 tablespoon dry mustard
1 teaspoon ground ginger
1 teaspoon dried thyme
1 (10 ounce) jar currant jelly
2 tablespoons cooking sherry
1 tablespoon soy sauce

Steps:

  • Place roast in re-sealable plastic bag. In a medium mixing bowl, combine 1/2 cup soy sauce, 1/2 cup sherry, garlic, mustard, ginger and thyme. Pour marinade in bag, and seal. Place the bag in a large bowl, and refrigerate for at least 3 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Place roast in a medium roasting pan. Roast the pork with marinade uncovered at in preheated oven for 2 1/2 to 3 hours, or until internal temperature reaches 170 degrees F on a meat thermometer . Baste hourly during cooking. Serve with currant sauce.
  • To make currant sauce: In a small saucepan over medium-low heat, slowly melt the currant jelly. Stir in the 2 tablespoons sherry and 1 tablespoon soy sauce.

Simple to prepare yet elegant and full of flavor. The sauce is sweet and tangy and the pork is tender and juicy. You can substitute the red currant jelly with any of your favorite flavors such as strawberry, cherry, blueberry, etc. You can even substitute with leftover cranberry sauce.

1 lb pork tenderloin
2 tablespoons olive oil
1/2 teaspoon dried parsley
1/2 teaspoon dried thyme
1/4 teaspoon rosemary
1/4 teaspoon onion salt
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt
1/8 teaspoon dried marjoram
1/8 teaspoon fresh ground black pepper
reserved pan dripping
1 tablespoon butter
1/2 cup chicken broth
1/4 cup red currant jelly, to taste
1 1/2 tablespoons balsamic vinegar
1 teaspoon orange zest
1/2 teaspoon parsley
1/4 teaspoon thyme
1/4 teaspoon rosemary
kosher salt, to taste
fresh ground black pepper, to taste

Steps:

  • Preheat oven to 400 degrees. In a small bowl, combine the parsley, thyme, rosemary, onion salt, garlic powder, oregano, marjoram, kosher salt and pepper. Massage the seasoning mixture evenly over the pork tenderloin.
  • Heat olive oil in an oven-proof skillet over medium-high heat. Sear the pork on all sides until deep brown.
  • Transfer the skillet to the oven. Roast for 30 to 40 minutes, or until a thermometer reads 140 degrees. Turn over once halfway through roasting. Remove the pork from the skillet and wrap in tin foil. Allow the pork to rest for 10 minutes.
  • Meanwhile, make the sauce. Using the same skillet, place it over medium-high heat on the stove top. Stir the butter into the pan drippings, until melted. Deglaze with the chicken broth, scraping up the brown bits from the bottom of the pan. Stir in the jelly and balsamic vinegar. Add the orange zest, parsley, thyme, rosemary and a pinch of kosher salt. Bring the sauce to a boil and continue to cook and stir occasionally for 5 minutes.
  • Slice the pork tenderloin. Pour the sauce over all.
  • Enjoy!

3/4 cup reduced-sodium soy sauce
6 garlic cloves, minced
4 teaspoons ground mustard

1 bone-in pork loin roast (5 pounds)
SAUCE:
2/3 cup currant jelly
1 tablespoon sherry or apple juice
1-1/2 teaspoons reduced-sodium soy sauce

Steps:

  • In a bowl, combine the first six ingredients; mix well. Pour 1-1/4 cups marinade into a 2-gal. resealable plastic bag; add the pork roast. seal bag and turn to coat; refrigerate overnight. Cover and refrigerate remaining marinade., Drain and discard marinade from roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 2-1/2 to 3 hours or until a thermometer reads 160°, basting every 30 minutes with reserved marinade. Let stand for 10 minutes before slicing. In a small saucepan, combine sauce ingredients; bring to a boil over medium heat. Serve with the pork.
