Here's an easy-to-make dish that's perfect when you're cooking for two!

1 medium unpeeled cooking apple, sliced
2 tablespoons packed brown sugar
1/4 teaspoon ground cinnamon
2 bone-in pork rib chops, about 3/4 inch thick (about 1/4 pound each)

Steps:

  • Heat oven to 350°F. Place apples in 1 1/2-quart rectangular casserole. Sprinkle with brown sugar and cinnamon. Cover with foil; bake 15 minutes.
  • Trim fat from edge of pork. Spray 8- or 10-inch nonstick skillet with cooking spray; heat over medium heat 1 to 2 minutes. Cook pork in hot skillet about 6 minutes, turning once, until light brown.
  • Place pork in single layer on apples. Cover and bake 10 to 12 minutes or until pork is no longer pink when cut near the bone, meat thermometer reads 145°F and apples are tender.

I found this in a pamphlet from the orchard (about Maryland apple orchards) a few years ago when we were picking apples. It is one of the tastiest things I have ever made!

2 tablespoons butter
6 pork chops
4 apples
1/4 cup brown sugar
1/2 teaspoon cinnamon

Steps:

  • Peel, core, and slice the apples.
  • Preheat the oven to 350 degrees.
  • Melt the butter in a skillet.
  • Brown the pork chops on both sides in the butter.
  • Grease (or spray) a large baking dish.
  • Put the apple slices in the bottom of the dish.
  • Mix the brown sugar and cinnamon.
  • Sprinkle the cinnamon and sugar over the apples.
  • Place the pork chops on top of the apples.
  • Cover with foil and bake for 1 and 1/2 hours.

2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium onions, thinly sliced
1 large green apple, cut into thin wedges
1 large red apple, cut into thin wedges
2 tablespoons Dijon mustard
1 tablespoon brown sugar

Steps:

  • In a large skillet, brown pork chops in oil on each side. Season with salt and pepper; remove and keep warm. In the same skillet, saute onions and apple wedges until crisp-tender. , Combine mustard and brown sugar; brush over chops. Return to the skillet; cook for 4 minutes or until meat juices run clear.

These Horseradish Crusted Pork Chops are pork chops topped with a tangy, buttery, breadcrumb topping that melts in your mouth.

4 boneless pork chops
1/4 cup melted butter
1/4 cup dry bread crumbs
1/4 cup prepared horseradish ((not creamy))

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
  • Place the pork chops into the prepared baking dish. Mix together the butter, bread crumbs, and horseradish. Spoon the mixture onto the pork chops, and press down the mixture to completely coat each chop with about 1/4 of the mixture.
  • Bake in the preheated oven until the chops are tender, about 30 to 40 minutes depending on the thickness of your pork chops. Place the pork on the top rack for the last couple of minutes to get the crust nice and golden.

1/4 cup prepared horseradish, drained
1 tablespoon Dijon mustard
1 tablespoon dried ancho chile powder
8 pork chops (6 oz. each, 1 inch thick)
olive oil

Steps:

  • Combine maple syrup, horseradish, mustard and chile powder.
  • Pour over pork chops in bowl, or resealable bag to marinate for 1 hour.
  • May be refrigerated, covered, for 1 day; use at room temperature.
  • Preheat a gas or charcoal grill to medium high.
  • Reserve 3/4 cups of glaze.
  • Brush the chops on both sides with olive oil and season with salt and pepper.
  • Grill for 3 to 4 minutes, brush with remaining glaze, and turn over.
  • Grill for another 3 to 4 minutes, brush, and turn again, for medium-well doneness.
  • Arrange chops on a serving platter and brush with the reserved 3/4 cup of glaze.

¼ cup all-purpose flour
1 teaspoon ground cumin
1 tablespoon oil, or as needed
2 apples - peeled, cored, and thinly sliced
1 cup chicken broth
4 tablespoons red wine vinegar
2 tablespoons honey
2 tablespoons ketchup
2 tablespoons finely chopped shallot

Steps:

  • Season pork chops with salt and pepper. Dredge in flour and cumin and shake off excess.
  • Heat oil in a skillet over medium-high heat. Saute pork chops until browned, about 5 minutes per side. Transfer to a plate. Add apples; cook and stir just until tender, about 2 minutes. Transfer to a plate. Add broth, vinegar, honey, ketchup, and shallot to the skillet and cook for 1 minute.
