I found this in a cookbook I took out from the library (title forgotten). This sounds delicious! You can also substitute a boneless pork shoulder butt roast (3 lbs) for the pork chops. Brown the roast on all sides and then proceed as directed. Haven't tried yet.

1 tablespoon vegetable oil
4 -6 pork chops (1 inch thick)
2 leeks, white part only, cleaned and thinly sliced
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon cracked black peppercorns
1/2 cup madeira wine or 1/2 cup orange juice
1/4 cup orange marmalade
1/2 cup dried cranberries

Steps:

  • In a nonstick skillet, heat oil over medium-high heat. Brown pork chops on both sides and transfer to slow cooker. Drain fat from pan.
  • Reduce heat to medium. Add leeks and cook, stirring, until softened. Add garlic, salt and peppercorns. Cook, stirring for 1 minute. Stir in port, marmalade and cranberries and bring to a boil.
  • Pour mixture over pork. Cover and cook on low for 5 hours or on high for 2 1/2 hours, until pork is tender and just a hint of pink remains. Serve immediately.

1/2 cup cranberry or apple juice
1/4 cup sugar
2 tablespoons spicy brown mustard

1/4 cup cold water
1/2 teaspoon salt
Dash pepper

Steps:

  • Whisk together first four ingredients. Place pork chops in a 3-qt. slow cooker; top with cranberry mixture. Cook, covered, on low until meat is tender, 4-5 hours., Remove chops; keep warm. Strain cooking juices and transfer to a small saucepan. Mix cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in salt and pepper. Serve with chops.

1-1/2 cups sugar
1-3/4 cups water, divided
1 package (12 ounces) fresh or frozen cranberries
1/2 cup barbecue sauce
8 bone-in pork loin chops (1/2 to 3/4 inch thick and 8 ounces each)
Salt and pepper to taste
2 tablespoons canola oil
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • In a large saucepan, combine sugar and 1-1/2 cups water. Cook and stir over medium heat until the sugar is dissolved. Bring to a boil; boil, uncovered, for 5 minutes. Add cranberries; cook 5 minutes longer or until the berries pop. Skim off foam if necessary. Stir in barbecue sauce and remaining water; set aside. , Season pork chops with salt and pepper. In a large skillet over medium heat, brown chops on both sides in oil; drain. Pour the cranberry sauce over chops. Cover and simmer for 35-40 minutes or until a thermometer reads 160°. 1 apple (peeled, cored, and diced)
1/2 cup sugar
1/4 cup water
Optional: 2 tablespoons pecans or walnuts (coarsely chopped)

Steps:

  • Preheat oven to 350 F.
  • Heat the shortening in a heavy skillet over medium heat - brown the pork chops on both sides.
  • Place pork chops in a shallow baking dish.
  • Sprinkle the chopped onion, poultry seasoning, salt, and pepper over the pork chops. Add the chicken broth.
