Pan Seared Pork Chops Topped with Brown Sugar Glazed Apples and Bacon image

Sweet and smoky pork chops are topped in a deep rich pan sauce made from the glazed apples, crisp bacon, Swanson® Unsalted Chicken Stock, green onions, and lemon juice.

1 teaspoon kosher salt
½ teaspoon black pepper
4 thin-cut, bone-in center-cut pork loin chops
1 tart red apple (such as Braeburn), cored, cut into 16 slices
½ cup packed light brown sugar
6 slices bacon
2 tablespoons olive oil, divided
2 tablespoons butter, divided
1 cup Swanson® Unsalted Chicken Stock
1 lemon, juiced
4 green onions, chopped, divided
1 pinch salt to taste

Steps:

  • Mix salt and black pepper together; season both sides of each pork chop.
  • Press both sides of apple slices into brown sugar to coat them.
  • Cook bacon in a non-stick skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon grease in the skillet.
  • Mix 1 tablespoon olive oil and 1 tablespoon butter into the reserved bacon grease over medium heat; cook the brown sugar-coated apple slices until apples are tender and glazed, about 5 minutes. Transfer glazed apples to a plate in a single layer leaving room between each apple.
  • Stir in the remaining 1 tablespoon olive oil and 1 tablespoon butter to the skillet over medium-high heat. Brown pork chops, about 2 minutes per side. Transfer pork chops to a plate.
  • Mix Swanson® Unsalted Chicken Stock, lemon juice, and 1/2 of the green onions into the skillet mixture; bring liquid to a simmer. Check sauce for seasoning; add salt to taste, if desired.
  • Place the browned pork chops in the skillet and simmer in the sauce until pork chops are cooked through, about 20 minutes.
  • Serve topped with 4 glazed apple slices per chop. Sprinkle with crumbled bacon; spoon a generous amount of the pan sauce over top. Finish with a sprinkle of green onions.

2 tablespoons grapeseed oil
Four 8 to 10 ounce pork chops
1 tablespoon salt
1/2 teaspoon ground pepper
1 tablespoons grapeseed oil
1 cup apple (1/2-inch diced)
1/4 cup cooked bacon (medium dice)
1/4 cup red onion (julienne)
1 teaspoon salt
1/4 cup white balsamic vinegar
1 teaspoon sugar
2 tablespoons butter
1/4 cup celery leaves

Steps:

  • For the pork chops: Mix together the juice, salt and 1 gallon cold water. Submerge the pork chops and let brine in the refrigerator overnight.
  • In a large saute pan over high heat, warm the oil. Then sprinkle the chops with the salt and pepper. Add the chops to the warmed oil, and then reduce the heat to medium. Sear the chops until browned, 4 to 5 minutes on the first side, and then flip and repeat the process on the second side. After cooking on the second side, remove the pork from the pan and drain out excess oil from the pan.
  • To prepare the apple bacon salad: Return the pan to medium-high heat. Then add the oil, apples, bacon, onions and salt to the pan. Cook for 6 to 7 minutes, stirring throughout. Add the balsamic and sugar, and then reduce the vinegar for 2 minutes. After reducing, remove the pan from the stove and stir in the butter until smooth. Add the celery leaves.
  • Serve the chops with a choice of sides and finish with the apple bacon salad.

Steps:

  • Heat oven to 350°F. Place apples in 1 1/2-quart rectangular casserole. Sprinkle with brown sugar and cinnamon. Cover with foil; bake 15 minutes.
  • Trim fat from edge of pork. Spray 8- or 10-inch nonstick skillet with cooking spray; heat over medium heat 1 to 2 minutes. Cook pork in hot skillet about 6 minutes, turning once, until light brown.
  • Place pork in single layer on apples. Cover and bake 10 to 12 minutes or until pork is no longer pink when cut near the bone, meat thermometer reads 145°F and apples are tender.

2 tablespoons vegetable oil
½ cup chopped onion
4 raw chop with refuse, 113 g; (blank) 4 ounces (1/2-inch thick) pork chops
½ teaspoon salt
ground black pepper to taste
2 medium (2-3/4" dia) (approx 3 per lb)s apples - peeled, cored and sliced
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cloves
¾ cup hot water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.
  • Place chops in an 8x12 inch baking dish and sprinkle them with salt and pepper. Cover the chops with the apples and cooked onion.
  • In a small bowl, combine brown sugar, mustard, cloves and water. Pour over chops. Cover and bake in the preheated oven for 30 to 45 minutes. Enjoy!

12 slices of thick-sliced thick slab bacon, halved
6 small sweet apples, cut in wedges
1 cup flour
2 teaspoons salt
1 teaspoon pepper
6 thin-sliced pork chops

Steps:

  • Cook bacon in a heavy skillet over medium heat until crisp.
  • Remove to a paper towel and reserve.
  • In the bacon fat, saute the apples over medium heat until they are soft, but not mushy.
  • The cut edges should brown and caramelize.
  • Remove apples with a slotted spoon and keep warm.
  • Place flour, salt and pepper in a brown paper bag and shake thoroughly.
  • Shake the pork chops in the seasoned flour.
  • Fry the chops in the remaining fat over medium high-heat until they are browned, turning once.
  • Serve the chops on warmed plates, covered with the apples and 4 pieces of bacon per chop.

1/2 cup chopped red onion
5 medium apples, peeled and finely chopped

8 thin-cut boneless pork loin chops (about 3 ounces each)
8 slices Swiss cheese
1/2 teaspoon salt

Steps:

  • Preheat oven to 400°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Remove drippings, reserving 1 tablespoons for cooking pork chops., In same skillet, heat 1 tablespoon each oil and butter over medium heat. Add onion; cook and stir 3-4 minutes or until tender. Add apples and brown sugar; cook and stir 4-5 minutes or until apples are tender. Stir in parsley and bacon; remove from pan. Cool slightly. Steps:
