2 tablespoons extra virgin olive oil
4 pork chops (each about an inch thick)
salt & freshly ground black pepper
2 -3 garlic cloves, finely chopped
1 bunch scallion, cut into one-inch pieces
2 tablespoons red wine vinegar or 2 tablespoons white wine vinegar
2 tablespoons brown sugar
28 ounces can diced fire-roasted tomatoes

Steps:

  • Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Season the pork chops with salt and freshly ground black pepper, and sear them in the hot pan until golden brown, about 3 minutes per side. Remove the chops to a plate and cover them with foil.
  • To the same pan the chops were cooked in, add the garlic and scallions. Cook until the scallions begin to get tender, 3-4 minutes.
  • To the pan with the scallions, add the vinegar, brown sugar and tomatoes. Bring the sauce up to a bubble and add the pork chops back inches Finish cooking the pork chops in the sauce, 3-4 minutes. (If your chops are really thick, cover the pan with a lid or a piece of aluminum foil.).

"This is a variation of a main dish that my dad always made," writes Cindy Glancy of Point Pleasant, New Jersey. "I now add some special touches of my own when I make it for my husband and two children. The tender chops are fast to fix on a weeknight."

1/2 small onion, thinly sliced
1 garlic clove, minced
1 tablespoon butter
4 bone-in pork loin chops (6 ounces each), trimmed
1 can (8 ounces) tomato sauce
1/4 cup dry white wine or chicken broth
1 teaspoon dried oregano
1/8 teaspoon pepper

Steps:

  • In a large nonstick skillet, saute onion and garlic in butter until tender. add pork chops; brown on both sides. In a small bowl, combine the tomato sauce, wine or broth, oregano and pepper; pour over chops. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender.

Okay so I have to admit, I just made this the other night because I had not gone grocery shopping and this is what I had on hand. Results..my boys LOVED it and it was fork tender. The flavor was awesome. I served it with rice but next time mashed potatoes. My boys gave me two thumbs up and I hope your family does as well!

6 bone in pork chops
2 can(s) fire roasted diced tomatoes
1 Tbsp garlic powder with parsley
1 Tbsp herbes de provence
2 tsp pepper
2 tsp sea salt
3 Tbsp olive oil

Steps:

  • 1. In a small bowl mix the garlic with parsley, herbs de Provence, pepper and sea salt together
  • 2. Heat olive oil in electric skillet over med high heat
  • 3. Generously season both sides of the pork chops with seasoning mix
  • 4. Place pork chops in prepared skillet searing both sides 2-3 minutes
  • 5. Add tomatoes to the seared pork chops, cover, reduce heat to medium. Cook for 35-40 minutes. Serve with rice or mashed potato with pan sauces on the side
