1 cup Fiber One™ original bran cereal
1 tablespoon finely chopped fresh cilantro
1 teaspoon finely chopped garlic
2 teaspoons grated orange peel
1 teaspoon onion powder
1 teaspoon dried oregano leaves
1 teaspoon ground cumin
1/4 teaspoon pepper
4 pork loin chops, 1/2 inch thick (4 oz each)
1/2 cup buttermilk
2 teaspoons olive oil
1 tablespoon finely chopped garlic
1/4 cup lime juice
2 tablespoons orange juice
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oven to 400°F. Spray cookie sheet with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • In shallow dish, mix cereal, 1 tablespoon cilantro, 1 teaspoon garlic, the orange peel, onion powder, oregano, cumin and pepper. Dip pork chops into buttermilk; coat completely with cereal mixture. Place on cookie sheet.
  • Bake 25 to 30 minutes or until pork is no longer pink in center.
  • Meanwhile, in 1-quart saucepan, heat oil over medium heat. Cook 1 tablespoon garlic in oil about 1 minute, stirring occasionally, until golden. Stir in lime and orange juices. Heat to boiling, stirring occasionally. Remove from heat; stir in 2 tablespoons cilantro. Cover; refrigerate until serving time. Serve with pork chops.

1/4 cup lemon juice
1/4 cup honey
2 tablespoons reduced-sodium soy sauce
1 garlic clove, minced

Steps:

  • In a large skillet coated with cooking spray, cook pork chops over medium heat until a thermometer reads 145°, 5-6 minutes on each side. Remove; let stand 5 minutes. Combine remaining ingredients; add to pan. Cook over medium heat 3-4 minutes, stirring occasionally. Serve with chops.

A crunchy and tasty coating of garlic, onion, oregano, cumin, cilantro and Panko breadcrumbs* creates memorable baked chops with a tasty garlic-citrus sauce * the original recipe used bran cereal for the crunch, I always use Panko for mine! You may substitute bran cereal for the fiber if you wish. This is a recipe that should please anybody who loves pork chops as much as hubby and me! Lots of crunch, moist succulent chops and a dreamy garlic and citrus sauce that goes oh so well with the the taste of pork. FDA now states that it is safe to cook chops, pork loins and roasts to 145 degrees F. This will give you a slightly pink center and much juicer meat! However, ground pork should still be cooked well to 165 degress F. the same as ground beef. ENJOY!

1 tablespoon(s) fresh cilantro, finely chopped
1 teaspoon(s) finely chopped garlic
2 teaspoon(s) grated orange peel
1 teaspoon(s) onion powder
1 teaspoon(s) dried oregano leaves, crushed between palms
1 teaspoon(s) cumin
1/2 teaspoon(s) freshly ground black pepper - more or less to taste.
1/2 - 1 cup(s) buttermilk
4 - (4- 4oz) pork loin chops, 1/2-inch thick
- garlic-citrus sauce:
2 teaspoon(s) olive oil
1 tablespoon(s) finely chopped garlic
1/4 cup(s) lime juice
2 tablespoon(s) orange juice
2 tablespoon(s) fresh cilantro, chopped

Steps:

  • Pre-heat oven to 400 degrees F. Spray cookie sheet with cooking spray. Place Panko bread crumbs seasoned with 1 tsp salt, pepper, cumin and mix in 1 TBL cilantro, 1 tsp garlic, the orange peel, onion powder, 1 tsp ground oregano 1 tsp ground cumin and pepper set aside in a shallow dish. eg: 9 X 9 baking dish.
  • Place buttermilk into another shallow pan.
  • Dip pork loin chops into buttermilk; coat completely with the Panko mixture. Place on the cookie sheet.
  • Bake 20-25 minutes or until pork is no longer pink in center. The "new rules" state that pork may now be cooked with a slightly pink center to only 145 degrees F. That is how I cook mine. or use a meat thermometer if you feel more comfortable using that. You just want to have the most succulent, juicy chops. Not too dry!
  • Meanwhile in a 1 quart saucepan, heat oil over medium heat. Cook 1 TBLS garlic in oil about 1 minute, stirring occasionally, until golden. Stir in lime and orage juices. Heat to boiling stirrings occasionall. Remove from heat; stir 2 TBLS chopped fresh cilantro. Cover; refrigerate until serving time. Serve with pork loin chops. You can double this recipe if you like.

4 pork chops, 1/2-inch thick bone-in
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1 teaspoon sugar, divided
2 tablespoons olive oil, plus 1/4 cup olive oil
1 teaspoon lemon zest
2 tablespoons fresh lemon juice
1 garlic clove, finely grated
1 tablespoon Dijon mustard
1 teaspoon dried oregano
1/4 teaspoon ground cumin
1/2 bunch cilantro leaf, with tender stems chopped

Steps:

  • Season pork chops generously on one side with salt and pepper. Turn and season other side generously, then sprinkle evenly with ½ teaspoons sugar.
  • Heat 2 Tbsp. oil in a large skillet over medium-high. Carefully add chops sugared side down and cook, gently shaking skillet occasionally but not disturbing pork, until underside is caramelized and chops are deeply browned all over, about 5 minutes. Turn chops and reduce heat to low. Cook just until second side is opaque, about 1 minute. Remove skillet from heat and let chops rest 10 minutes in skillet (the cooking will carry over and finish the chops while they rest).
  • Meanwhile, whisk lemon zest and juice, garlic, mustard, oregano, cumin, and remaining ½ teaspoons sugar in a medium bowl. Slowly whisk in remaining ¼ cup oil until emulsified. Fold in cilantro and season with salt and lots of pepper.
  • Spoon half of dressing onto a platter. Transfer chops to platter, then whisk any juices that have accumulated in skillet into remaining dressing. Spoon dressing over top of pork. Swipe pork through dressing as you eat.

6 boneless pork loin chops (1/2 inch thick)
1 tablespoon vegetable oil
3/4 cup water
1/2 teaspoon paprika
1/2 teaspoon pepper
1 medium navel orange
1/2 cup sugar
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
12 whole cloves
1 cup orange juice

Steps:

  • In a large skillet, brown chops in oil on both sides. Add water, paprika, and pepper; bring to a boil. Reduce heat to low; cover and simmer about 35 minutes, turning once. , Meanwhile, grate peel from the stem end of the orange, then cut six slices from the other end. Set aside. In a saucepan over medium-high, combine 1 tablespoon peel, sugar, cornstarch, cinnamon and cloves. Stir in juice. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Add the orange slices; cover and remove from the heat. Serve chops with sauce and orange slices.
