This recipe was given to me by a fellow I used to work with. We both enjoyed trying new recipes. The pork mixture is also great over rice.

Number Of Ingredients 6

1/4 to 1/3 pound pork chop suey meat or boneless pork loin cut into 1/2-inch cubes
1 tablespoon taco seasoning
1 tablespoon olive oil
1/4 cup chunky salsa
1 tablespoon peach preserves
Flour tortillas

Steps:

  • In a resealable plastic bag, combine pork and taco seasoning; toss to coat. In a saucepan, brown pork in oil over medium heat. Stir in salsa and peach preserves. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until pork is tender. Serve with tortillas.

6 pork loin chops (1/2-inch thick)
2 tablespoons cooking oil
seasoning salt, to taste
pepper, to taste
3/4 cup uncooked long grain rice
1 1/2 cups water
1 (8 ounce) can tomato sauce
1 tablespoon envelope taco seasoning mix
1 medium green bell pepper, chopped
1/2 cup shredded cheddar cheese

Steps:

  • In a large skillet, brown pork chops in oil; sprinkle with seasoned salt and pepper.
  • Meanwhile, in a greased 13X9X2-inch baking dish, combine rice, water, tomato sauce and taco seasoning; mix well.
  • Arrange chops over rice; top with green pepper.
  • Cover and bake at 350F for 1-½ hours.
  • Uncover and sprinkle with cheese; return to the oven, until cheese is melted.

1-1/2 cups water
1 can (8 ounces) tomato sauce
1 medium green pepper, chopped
3/4 cup uncooked long grain rice
2 tablespoons taco seasoning
6 pork loin chops (1/2 inch thick)
2 tablespoons canola oil
Seasoned salt and pepper to taste
1/2 cup shredded cheddar cheese
Minced fresh cilantro, optional

Steps:

  • In a greased 13x9-in. baking dish, combine the water, tomato sauce, green pepper, rice and taco seasoning. Cover and bake at 350° for 1 hour or until rice is tender., Meanwhile, in a large skillet, cook chops over medium-high heat in oil until juices run clear, 4-5 minutes on each side. Sprinkle with seasoned salt and pepper. Set aside and keep warm., Sprinkle rice mixture with cheese; arrange chops on top. Bake until cheese is melted, about 5-10 minutes. If desired, sprinkle with cilantro. , Freeze option: Omit water and substitute 1 package (8.8 ounces) ready-to-serve long grain rice for the uncooked rice. Assemble casserole as directed. Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through.

PAN-SEARED PORK CHOPS WITH SAGE, DATES AND PARSNIPS



Pan-Seared Pork Chops With Sage, Dates and Parsnips image

This easy dish combines sage, brown butter and dates for a blast of sweet-salty flavor. Brining the pork chops in advance ensures tenderness: You can allow them to sit in the thyme-infused brine overnight, but even two hours of marinating will improve the taste and texture of the chops. This recipe calls for parsnips, but sweet potato or roasted squash would also work well. (And if you can't find medjool dates, pitted prunes are a worthy stand-in.)

1/4 cup kosher salt (Diamond Crystal), plus more for boiling
2 tablespoons granulated sugar
1 large thyme sprig
4 bone-in pork chops, about 3/4-inch thick (about 2 pounds)
2 pounds parsnips, peeled and cut into 3-inch sticks
2 tablespoons olive oil
4 tablespoons salted butter
12 large sage leaves
12 pitted medjool dates, halved
Freshly ground black pepper, to taste
1/2 lemon, plus more to taste

Steps:

  • Brine the chops: Put salt and sugar in a large bowl. Whisk in 4 cups water to dissolve. Add thyme sprig and pork chops. Cover and refrigerate for at least 2 hours or up to overnight. When ready to cook, remove chops from brine and pat dry. Discard brine.
  • Heat oven to 350 degrees. Put a large pot of well-salted water over high heat. When it boils, add parsnips and bring to a brisk simmer. Cook until parsnips are tender, 8 to 10 minutes. Drain parsnips and keep warm.
  • Meanwhile, set a large skillet over medium-high heat and add olive oil. When oil is wavy, sear chops until nicely browned, about 3 minutes per side. (Work in batches if you don't have a large skillet.)
  • Transfer chops to a roasting pan or sheet pan in one layer. Bake for 10 to 15 minutes, until meat is 140 degrees when probed with an instant-read thermometer. Remove from oven and let rest while you make the sauce.
  • Wipe out the skillet and return to medium-high heat. Add butter and let it begin to brown. Add sage leaves and dates, and let sizzle for about a minute. Add pepper and lemon juice, and pull off heat. Taste, and add more pepper or lemon to taste.
  • To serve, place chops and a spoonful of parsnips on warm plates. Spoon butter mixture over chops and parsnips.

MEXICAN PORK CHOPS GRANDE, OLE!

4 boneless pork loin chops (3/4-1" thick), trim fat
1 packet taco seasoning mix, or your own homemade version
1 Tbl. vegetable oil
1 Tbl. butter
1 cup thick hearty salsa
1 1/2 cups (packed) shredded co-jack cheese
SUGGESTED TOPPINGS:
shredded lettuce
chopped tomato
sour cream
sliced black olives
guacamole
jalapeno rings
sliced green onion
chopped fresh cilantro

Steps:

  • 1. Rub taco seasoning mix on both sides of all four pork chops. Or use your own taco seasoning mix. In large skillet, melt butter with vegetable oil, heat over med-high heat. Lightly brown and sear chops on both sides. Transfer to shallow, lightly greased baking dish. Top each chop evenly with salsa. Place in 350º oven for about 30-35 minutes or til done. *Chops are done when very slightly pink inside and juices run clear. *Don't overbake! Bake less if chops are thinner! Top with cheese during last 5 minutes or so of baking. Serve topped with topping ingredients to your heart's desire. Serve with Spanish, Mexican or green rice and refried beans, salsa and white corn tortilla chips if desired.

I love one dish recipes and this was one I found a few years ago in a magazine. I have added a few ingredients to tweak it & it was love at first bite. I am not a fan of pork chops but these turn out so moist, they are divine! Hope u enjoy it as much as I do.

6 medium pork loin chops (or what ever piece of pork u like)
2 Tbsp oil
1 pinch salt
1 pinch pepper
1 1/2 c water
1 can(s) tomato sauce (8oz)
3/4 c long grain rice, uncooked
2 Tbsp taco seasoning mix
1 medium green pepper, chopped
1 medium onion, chopped
1/2 c cheddar cheese, shredded or taco cheese

Steps:

  • 1. In 13x9 casserole pan, combine water, 1 tsp oil, tomato sauce, rice, green pepper, onion & taco seasoning. Stir gently to mix seasoning in.
  • 2. In large Skillet, brown pork chops in oil. Sprinkle with salt & pepper.
  • 3. Arrange chops over rice mix. Cover with lid or tin foil & bake at 350 for 1 hour or until rice & meat are tender. Uncover & sprinkle with cheese.
