GRILLED BONE-IN PORK CHOPS
Juicy grilled pork chops with a tiny bit of sweetness and a faint hint of spiciness make for an excellent simple dinner main that pairs with practically any side. A simple brine imparts flavor,but mostly keeps the pork chops from drying out; just don't marinate the meat for any longerthan 4 hours or it'll soften the texture.

Steps:
- Stir together water, honey, vinegar, crushed red pepper and 4 teaspoons of the salt in a small bowl until honey and salt are dissolved. Place pork chops and water mixture in a zip-top plastic bag; seal and refrigerate 1 hour.
- Preheat a grill or grill pan to high (450 degrees F to 500 degrees F). Remove chops from bag; discard marinade and pat chops very dry with paper towels. Drizzle chops evenly with oil on both sides; sprinkle with black pepper and remaining 1/2 teaspoon salt.
- Place chops on oiled grates; grill, covered, until a thermometer inserted in thickest portion of meat registers 140 degrees F, about 4 minutes per side. Remove from grill; let rest 5 minutes.

PORK CHOPS AU POIVRE
Steps:
- Coarsely crush peppercorns by gently pounding once or twice with a heavy skillet. Pat chops dry and sprinkle both sides evenly with salt and peppercorns, pressing to help them adhere.
- Heat 1 tablespoon oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook 2 chops, turning over once, until browned and just cooked through, 4 to 6 minutes total. Transfer to a plate and wipe out skillet. Cook remaining 2 chops in remaining tablespoon oil in same manner, transferring to plate. (Do not wipe out skillet after second batch.)
- Add Sherry to skillet and boil, scraping up any brown bits, until reduced by half, about 1 minute. Add cream and any meat juices accumulated on plate, then boil, stirring occasionally, until slightly thickened, about 2 minutes. Season sauce with salt and serve over chops.
RED WINE BRAISED PORK CHOPS W/ RED WINE GRAVY AND GARLIC MASHED
This is the best recipe for pork chops! We eat this meal with asparagus tossed in olive oil, s&p, lemon juice, and a little bit of garlic, baked in the oven for 10 minutes. We use Merlot for the Red Wine, but any red wine will work just fine. This is our favorite recipe and we hope you enjoy it too! = )

Steps:
- Clean the potatoes and put them in a boiling pot of water and 1 teaspoons salt for about an hour or tender.
- Liberally season pork chops with s&p, paprika and garlic powder. Sear in a skillet with 2 tbs. butter for 1 minute on each side.
- Put pork chops in a x baking dish with chopped shallots or onion, basil and thyme (enough to make a thin layer), beef broth and red wine. Bake 45 minutes at 325 and flip once halfway through cooking.
- Drain potatoes, add butter, garlic, and milk (about 1/4 cup or until it reaches your desired consistency) and mash on low heat.
- Using the same pan you seared the pork chops in, melt the butter and flour to make a roux, slowly add the liquid from the chops until you get the consistency you like. Also, add a little bit of fresh wine for extra flavor. Bring to boil, stir, and remove from heat.
- The gravy goes great with the pork chops and mashed potatoes! Enjoy.

PORK CHOPS IN BALSAMIC VINEGAR AND SHALLOT SAUCE
This is a quick yet tasty dish. The acidity of the balsamic vinegar is balanced by the sweetness of the shallots. I suppose the chops could be broiled rather than pan-fried, but you would lose the lovely drippings for the sauce.

Steps:
- Heat the olive oil in a frying pan large enough to hold the chops in one layer, over medium-high heat.
- Season the chops with salt and pepper, and cook them through, approximately 5 minutes per side, or as needed according to the thickness of your chops.
- Remove from pan and keep warm.
- Add shallots to the pan and cook them, stirring, one minute.
- Add chicken broth, balsamic vinegar, and crumbled thyme.
- Cook stirring 5 minutes.
- Remove pan from heat, and add the butter.
- Stir till the butter has melted and is well incorporated into the sauce.
- Pour sauce over the chops, and serve.
