2 Cups Vinegar (apple cider )
2 Bay Leaves
1/2 Cup Brown Sugar
1/2 Cup Kosher Salt
1 Tablespoon Cumin

1 Tablespoon Orange Peel (dried )
1 Tablespoon Smoked Paprika
1 Tablespoon Chili Powder
3-4 lb Pork Butt (, bone-in * (see notes for using boneless or cubed pork shoulder))
2 Tablespoons Cumin
1 Tablespoon Kosher Salt
1 Tablespoon Oregano
1 1/2 Teaspoons Orange Peel (dried )
2 Teaspoons Onion Powder
2 Teaspoons Garlic Powder
1 Teaspoon Ground Coriander
Canola Oil (, for final crisping)
1/2 Cup Orange Juice
1/4 Cup Lime Juice
1/4 Cup Chicken Broth

Steps:

  • Combine all brine ingredients in a large pot and stir to combine.
  • Add the pork and place a lid on then stick it in the fridge for 8 hours or overnight.
  • Heat the oven to 225 degrees F.
  • Remove the pork from the brine and pat dry with paper towels.
  • Mix the rub together and rub all over the pork.
  • Mix together the liquids and pour in the bottom of the roasting pan.
  • Add the pork.
  • Cook for 12-14 hours or until internal temperature reaches 200 degrees F.
  • Remove the meat and let rest for up 2 hours.
  • Shred the meat and place the liquids in a fat separator.
  • Heat some oil in a pan over medium high heat.
  • Add the shredded pork in small amounts and toss as it begins to crisp. Remove to a pan and repeat until all batches are done.
  • Toss with a little of the juices from the fat separator and serve!

3-4 pound boneless pork butt
1 tablespoon Kosher salt
1 tablespoon chili powder
2 teaspoons black pepper
2 teaspoon onion powder
1 1/4 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 cup orange juice ((freshly squeezed), about 3-4 oranges)
1/4 cup lime juice ((freshly squeezed), about 3-4 limes)
2 bay leaves
1/2 cup water (+ 2 tablespoons, separated)
2 teaspoons cornstarch
Flour or corn tortillas ( (1-2 per person))
Topping Suggestions: red onion, cilantro, Cotija cheese, freshly squeezed lime juice

Steps:

  • Preheat the oven to 325°F. Pat the pork butt dry with a paper towel. Use a large, sharp knife to trim away excess fat. Cut the pork butt into 1" thick slices. Then, cut each slice into 1" cubes.
  • Transfer the pork to a 4-5 quart enameled cast iron Dutch oven. Add all of the dry spices, and massage them onto the pork with your hands.
  • Add the orange juice, lime juice, and a 1/2 cup water to the Dutch oven and stir to combine. Add the bay leaves, cover, and transfer to the oven.
  • Cook for 2 hours. Remove from the oven, and turn on the broiler on high. Have ready a rimmed sheet pan lined with nonstick aluminum foil.
  • Use a slotted spoon to transfer the pork to the prepared sheet pan. Using the tines of a fork, gently press down on the pork to ever-so-slightly break it apart.
  • Place the pork under the broiler, and watch closely so that it does not burn. As soon as the pork begins to tinge with dark brown hues and crisps up on the edges, remove it from the oven. Depending on your broiler, this could take anywhere from 1- 4 minutes. Remove from the oven and set aside.
  • Place the Dutch oven on the stovetop over medium-high heat and allow to come to a simmer. In a small bowl, combine cornstarch and 2 tablespoons of water. Add the cornstarch slurry to the cooking liquid and allow to simmer until thickened, about 2-3 minutes. Remove from the heat.
  • Either add the pork back to the Dutch oven and stir or brush the sauce lightly over the carnitas. Serve with tortillas and your favorite taco toppings and enjoy!

4 pound pork shoulder ((aka pork butt), bonless)
1 onion (peeled and halved)
3 cloves garlic (crushed)
2 medium oranges (juiced and keep the spent halves)
2 limes (juiced and keep the spent halves)
1 1/2 teaspoon salt
3/4 teaspoon black pepper
1 teaspoon cumin (ground)
1 teaspoon red pepper flakes
1 teaspoon oregano (dried)

Steps:

  • Prepare oven: Preheat the oven to 300 F degrees.
  • Mix dry rub ingredients: In a small bowl, combine all the dry rub ingredients together.
  • Season pork and place all ingredients in pot: Place the pork shoulder in a large Dutch oven or an oven safe pot and rub the dry rub all over the pork on all sides. Throw in the onion, garlic juice from the oranges, limes and the spent orange and lime halves.
  • Cover pot and cook: Cover the pot and place it in the oven. Bake for 3 1/2 hours until the meat is tender and shreddable.
  • Shred meat: Remove the meat from the pot and place it on a baking sheet. Using two forks shred the meat into small pieces. There should be about 1 1/2 cups of liquid left in the pot. Ladle about 1 cup of that liquid all over the shredded pork.
  • Crisp up carnitas: Place the meat under the broiler, for about 5 to 10 minutes. Half way through turn them over with a spatula to crisp up on both sides. You can crisp them up 450 F degrees for about 30 minutes, especially if your oven doesn't have a broiler.
  • Serve: Serve hot on tortillas, burritos, tamales, sandwiches, etc.

8 cloves garlic, peeled
¼ cup olive oil
1 orange, juiced, orange parts of peel removed and sliced into thin strips

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Remove fat from pork; cut pork meat into 2-inch cubes and roughly chop fat.

1 3.5 to 4 lb boneless pork butt, fat trimmed to 1/8 inch thick, and cut into 2-inch chunks
1 brown onion (peeled and halved)
2 whole bay leaves
1 tsp dried oregano
2 tsp ground cumin

table salt and ground black pepper to taste
2 cups water
2 TB juice from 1 fresh lime
1 medium orange (quartered)
18-20 6 inch corn tortillas, warmed

Steps:

  • Adjust oven rack to lower middle position. Preheat oven to 300F.
  • Combine pork, onion, bay leaves, oregano, cumin, garlic, 1 1/2 tsp table salt, 1 tsp pepper, water, and lime juice in a large Dutch oven Liquid should barely be covering the meat. Juice the orange in a bowl and add both the juice and orange remnants to the pot. Bring mixture to simmer over medium high heat, stirring occasionally. Cover pot and transfer to oven.   • Remove the pot from oven. Transfer pork to a bowl with slotted spoon. Remove orange halves, onion, and bay leaves from the liquid and discard. Do not skim fat from liquid. 1/4 cup of Lard (vegetable oil is OK)
About 6-8 cups of water enough to cover the meat
1 Tablespoon of salt

  • In a large Dutch oven or Cast Iron Pot place the pork, lard, water, garlic, and salt. Cook covered on a medium heat to a boil. Reduce to simmer for about 45 minutes until pork is almost tender.

2 tablespoons vegetable oil
One 3-pound boneless pork shoulder, cut into 1 1/2-inch cubes
Kosher salt and freshly ground black pepper
2 medium yellow onions, halved and sliced
2 poblano peppers, seeded and ribs removed, sliced
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons ancho chile powder
3 cloves garlic, minced
One 12-ounce can lemon-lime soda
1 large orange, zested and juiced
Warm corn or flour tortillas
Store-bought peach salsa
Easy Queso, recipe follows
Fresh cilantro leaves
1 pound queso blanco-style processed cheese, cut into 1/2-inch cubes
One 10-ounce can hot diced tomatoes and chiles
One 8-ounce jar diced pimientos, not drained

Steps:

  • Set a multi-cooker to the Saute setting and add the oil.
  • Sprinkle the cubed pork generously with salt and pepper. Sear the pork in batches on all sides until well browned. Remove to a plate, add the onions and poblanos and cook, stirring frequently, until softened, about 3 minutes. Add the oregano, cumin, chile powder and garlic and continue to cook for an additional minute.
  • Add the lemon-lime soda and orange zest and juice. Return the pork pieces and any liquid that is on the plate to the multi-cooker. Cover and position the vent to the Sealing setting. Set the multi-cooker for High Pressure, use the Manual button to adjust the cook time to 25 minutes and cook. When the time is up, allow the multi-cooker to sit for an additional 10 minutes.
  • Preheat the broiler.
  • Carefully release the remaining pressure by switching the vent to Venting. Let the steam vent until the float valve has dropped, then remove the lid. Remove the pork mixture with a slotted spoon to a baking sheet and shred the pork with 2 forks.
  • Place the baking sheet under the broiler and crisp the carnitas for 2 to 3 minutes. (Watch carefully to prevent burning.) Remove from the oven, ladle some of the juices from the pot over the carnitas and carefully toss. Serve alongside the warm tortillas with peach salsa, Easy Queso and fresh cilantro leaves.
  • Combine the cheese, the whole can of tomatoes and chiles and the jar of pimientos with their liquid in a saucepan over medium-low heat, stirring occasionally, until the cheese is fully melted, 5 to 7 minutes.

  • Adjust the oven rack to the lower middle of the oven. Preheat oven to 300 degrees. Combine all the ingredients (including the spent orange halves) in a dutch oven or a large pot with an oven-safe lid. Bring the pot to a simmer over medium high heat. Once the pot is simmering, move the pot to the oven and cook for about 2 hours, until the meat is fork tender and falling apart.
  • Remove the pot from the oven and preheat the oven to broil. Use a slotted spoon or a set of tongs to remove the meat from the pot and place it on a large foil lined baking sheet. Remove and discard everything else in the pot, leaving only the liquid. Place the pot over high heat on the stove, for about 10-20 minutes. Boil it until the liquid is thick and syrup-like. There should be about 1 cup of liquid left in the pot.
  • While the liquid is boiling and reducing, use the tongs or a pair of forks to very gently pull each piece of pork into 3 pieces. Avoid shredding the pork at this point, it will be very tender. Once the liquid has become thick and syrup-like, remove from the heat and place the pork back into the pot with the liquid. Gently fold the pieces into the liquid and try not to break them up further.
  • Transfer the coated pork back onto the baking sheet, spreading it in just one layer across the pan. Place the baking sheet back in the oven on the same lower middle shelf. Broil for 6-8 minutes, until the meat is quite browned and slightly crispy on the edges. Remove from the oven and use your tongs or a large spatula to flip over each piece. Return the pan to the oven and broil the other side for 6-8 minutes, until both sides are well-browned and the edges are crisp. Serve immediately. Enjoy!
