6 bone-in pork loin chops (7 ounces each)
3/4 teaspoon salt, divided
1/4 teaspoon pepper
1 tablespoon olive oil
1 cup sliced fresh mushrooms
1 small onion, chopped
1 celery rib, chopped
1 small green pepper, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes
1/2 cup water, divided
1/2 teaspoon dried basil
2 tablespoons cornstarch
4-1/2 cups cooked egg noodles

Steps:

  • Sprinkle chops with 1/2 teaspoon salt and pepper. In a large skillet, brown chops in oil in batches. Transfer to a 4-or 5-qt. slow cooker coated with cooking spray. Saute the mushrooms, onion, celery and green pepper in drippings until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, 1/4 cup water, basil and remaining salt; pour over chops., Cover and cook on low for 4-6 hours or until pork is tender. Remove meat to a serving platter; keep warm. Skim fat from cooking juices if necessary; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and remaining water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with meat and noodles.

I found this on a supermarket leaflet. The original recipe used lamb chops-I changed that to pork. The sauce is enough for 4 servings according to the original recipe, but we love lots of sauce over pasta.

1 1/2 teaspoons smoked paprika
2 pork loin chops
3 tablespoons olive oil
1 onion, peeled and finely diced
2 garlic cloves, crushed
1 (410 g) can chopped tomatoes
1 teaspoon mixed Italian herbs
100 ml chicken stock
100 ml white wine
1/2 cup black olives, pitted and chopped
basil leaves, to serve

Steps:

  • Heat 2 tablespoons of the oil in a frying pan and cook the onions over a low to medium heat for 5 minutes or until translucent; add the garlic and cook a further 2 minutes.
  • Add the tomatoes, herbs, stock, wine, and olives, bring to the boil then simmer for 5 minutes.
  • Sprinkle the paprika over the chops and season them. Heat the remaining oil in another frying pan and sear the chops for 3-4 minutes each side until golden.
  • Add the chops to the tomato sauce pan and continue to cook a further 10 minutes over a low heat.
  • Scatter with torn basil leaves to serve.

8 ounces mushrooms, sliced
1 teaspoon italian seasoning
2 cups low fat prepared pasta sauce
1/4 cup dry red wine or 1/4 cup cooking wine
1/4 cup parmesan cheese

Steps:

  • Heat oil in a large non-stick skillet over medium high heat. Cook pork pieces until no longer pink on outside, about 3 to 4 minutes.
  • Add garlic, Italian seasoning and mushrooms. Cook 5 minutes longer.
  • Stir in pasta sauce and wine. Simmer for 10 to 15 minutes until pork is tender and sauce thickens slightly.
  • Serve sprinkled with Parmesan cheese. Serve with pasta, breadsticks and green salad.

salt and pepper
2 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, smashed
1 stalk celery, finely chopped
1 carrot, shredded
1/4 lb mushroom, sliced
1 (16 ounce) can crushed tomatoes
1/3 cup dry red wine or 1/3 cup beef broth
2 tablespoons rosemary, crushed
1/4 teaspoon dry basil

Steps:

  • Sprinkle pork cubes with salt and pepper.
  • In a large heavy frypan (cast iron) heat olive oil.
  • Add pork and brown on all sides.
  • Remove and set aside.
  • Add to the pan, onion, garlic, celery and carrot.
  • Cook, stirring until onions are soft about 5 minutes.

6 oz tomato paste
2 green peppers (seeded and diced)
1 onion (diced)
8 oz sliced mushrooms
2 tsp Italian seasoning
1 tsp salt
1 lb pork tenderloin
16 oz spaghetti
1 cup shredded mozzarella cheese

Steps:

  • In a small bowl, stir together diced tomatoes and tomato paste.
  • Pour into the bottom of a slow cooker.
  • Top with green peppers, onion, and mushrooms. Add seasonings.
  • Rinse pork tenderloin and pat dry.
  • Slice and then cut slices into one inch pieces.
  • Add pork pieces to slow cooker.
  • Cover and cook on low 5-6 hours, or on high 3-4 hours.
  • Cook and drain spaghetti.
  • Serve pork cacciatore over cooked spaghetti and topped with some shredded mozzarella cheese.

Classic recipe ingredients but with pork chops instead of chicken!

1 1/2 lbs. pork chops
2 Tbsp. cooking oil
15 oz. can Italian diced tomatoes
3 Tbsp. tomato paste
1 cup chicken broth
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. dried thyme
1 tsp. dried oregano
1 clove garlic, (minced)
1 small white onion, (diced)
2 cups sliced mushrooms

Steps:

  • Heat a large skillet over medium-high heat. Add the cooking oil. Add the pork chops to the pan and brown on both sides, no need to cook all the way through, the slow cooker will do that. Set aside while you make the sauce.
  • Add the diced tomatoes, tomato paste, chicken broth, garlic, salt, pepper, thyme and oregano to the slow cooker. Stir until the tomato paste dissolves into the diced tomato juice. Add the onion and mushrooms, stir again. Add the pork chops into the sauce.
  • Cover and cook on low for 6-7 hours without opening the lid during the cooking time.
  • Serve over pasta or rice and enjoy!

  • large skillet with cooking spray heat over medium sprinkle pork with salt and paper add pork to skillet turning pieces until brown about 6 mins then set aside re-coat skillet with cooking spray add potato onion and water cook for one minute scrapping bottom then cover and cook for 5 minutes add yellow pepper mushrooms rosemary and salt and pepper to skillet sauté over meduim high heat until vegetables are lightly browned add water to prevent sticking about 7 minutes stir in marina sauce, pork and 1/4 cup of water cover skillet reduce heat to medium and cook until vegetables are tender about 7 minutes

A wonderful Italian neighbor showed me how to make this recipe after I commented on how good it made the neighborhood smell when she had her windows open when she made it. This American-Italian term refers to food prepared 'hunter-style,' with mushrooms, onions, tomatoes, various herbs, and sometimes wine. I found adding cheese gave it something special, it also made it mine.

2 tablespoons olive oil
1 onion, sliced
4 boneless pork chops
1 (28 ounce) jar pasta sauce
1 (28 ounce) can diced tomatoes
1 green bell pepper, seeded and sliced into strips
1 (8 ounce) package fresh mushrooms, sliced
2 large cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon dried basil
½ cup dry white wine
4 slices mozzarella cheese

Steps:

  • In a large skillet, brown chops over medium-high heat. Transfer to slow cooker.
  • In the same pan, cook onion in oil over medium heat until browned. Stir in mushrooms and bell pepper, and cook until these vegetables are soft. Mix in pasta sauce, diced tomatoes, and white wine. Season with Italian seasoning, basil, and garlic. Pour over pork chops in slow cooker.
  • Cook on Low for 7 to 8 hours. To serve, place a slice of cheese over each chop, and cover with sauce.
