2 cans (4.5 oz) chopped green chile peppers
1 cup quick-cooking brown rice
1/4 cup water
2 to 3 tablespoons Muir Glen™ organic salsa
1/2 cup shredded reduced-fat cheddar cheese (2 ounces)

Steps:

  • Preheat oven to 350° F. Cut pork into 1/2-inch cubes. In a large skillet, brown pork, half at a time, in hot oil. Drain off fat. Return pork to skillet.
  • Stir in black beans, tomatoes, condensed soup, chile peppers, brown rice, water, and salsa. Bring mixture to boiling. Carefully pour mixture into a 2-quart rectangular baking dish. Bake, uncovered, for 30 minutes. Sprinkle with cheese; let stand for 10 minutes before serving.

3 tablespoons vegetable oil
1 ½ pounds boneless pork loin chops, cut into bite-size pieces
1 ½ cups instant brown rice, uncooked
1 (10.5 ounce) can condensed cream of chicken soup
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
2 (4 ounce) cans diced green chile peppers
3 tablespoons chunky salsa
¼ cup water
2 tablespoons ground cumin
1 cup shredded Colby cheese

Steps:

  • Heat oil in a large saucepan or stock pot over medium-high heat. Add pork, and saute until browned. Drain off grease. Add the rice, cream of chicken soup, black beans, tomatoes, green chiles, salsa and water. Season with cumin. Stir to blend, then bring to a boil. Simmer over medium heat for about 15 minutes, or until the rice is tender.
  • Meanwhile, preheat the oven to 400 degrees F (200 degrees C). When the pork mixture is cooked, transfer to a 9x13 inch baking dish. Sprinkle cheese over the top.
  • Bake for 5 to 10 minutes, until cheese is melted. Serve with tortillas.

1-1/2 pounds boneless pork, cut into 1/2-inch cubes
1 tablespoon canola oil
1 can (15 ounces) black beans, rinsed and drained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (14-1/2 ounces) diced tomatoes, undrained
2 cans (4 ounces each) chopped green chiles
1 cup quick-cooking brown rice
1/4 cup water
2 to 3 tablespoons salsa

Steps:

  • Preheat oven to 350°. In a large skillet, brown pork in oil; drain. Stir in the beans, soup, tomatoes, chiles, rice, water, salsa and cumin. , Pour into an ungreased 2-qt. baking dish. Hubby and I go grocery shopping only once a week because of the stay-at-home order due to the Coronavirus. We got lucky and found a 25-pound pork shoulder roast for $0.59 per pound! Though it's only the 2 of us at home, we could not pass up such a great bargain. We cut the roast up into 2-pound chunks and individually vacuum packed them with our FoodSaver. I made this with items in my pantry and it is filling and delicious.

¾ cup water, divided
1 teaspoon salt, divided
½ cup diced onion
1 clove garlic, minced
1 (15 ounce) can black beans, rinsed and drained

1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)

It may not be authentic Spanish Rice, but I always loved combinations of rice, tomatoes, onion,garlic and chili seasoning, paprika, salt and other spices. We had it with pork when I was a child, and I sometimes use green bell peppers and celery. The black beans are added this time!

1 c long grain rice, uncooked
2 1/4 c water
2 tsp butter
1 small onion, diced
2 clove garlic, minced
1 Tbsp olive oil
1 c diced, cooked pork
1 can(s) tomatoes, chopped with juice
1 can(s) black beans, organic, drained and rinsed
1/2 tsp celery seed
2 tsp chili powder
1 tsp smoky paprika
1/2 tsp salt
1/2 -1 c beef stock
1 can(s) chopped green chilies; 4.25 oz.

Steps:

  • 1. In a 3-quart saucepan, combine water, rice and butter. Boil and lower heat to simmer for 20 minutes.
  • 2. In a skilled sautee onion in olive oil, a few minutes until translucent, add garlic, stir and add seasonings and cook a minute, then add liquid, cover and cook a few minutes.
  • 3. Add chopped pork to the onion mixture along with tomatoes and drained black beans.
  • 4. Combine rice and meat mixture in 3 quart saucepan. If dry, add a little beef stock, and stir. Cover and simmer on low until well-heated.
  • 5. Check and stir, keep mixture moist, and taste for seasonings. If desired add salt, and adjust other seasonings to taste.

Bring to a boil; stir in pork and rice. , Transfer to a greased 2-qt. baking dish. Cover and bake at 350° until rice is tender and liquid is absorbed, 20-25 minutes. Stir before serving. 4 tablespoons oil (can use less)
1 large onion, chopped
2 teaspoons dried chili pepper flakes (optional or to taste)
1 -2 tablespoon fresh garlic (or to taste)
1 (15 ounce) can black beans, rinsed and drained (or use pinto beans)
1 (10 ounce) can cream of mushroom soup, undiluted
2 (4 ounce) cans diced green chili peppers, drained
1 cup uncooked instant Minute Rice (use white or brown)
1/4 cup water (or use chicken or beef broth)
1/2 cup salsa (mild or spicy)
2 -4 teaspoons cumin (or use as much as desired)

Steps:

  • Season the pork cubes with salt and black pepper.
  • Heat oil in a skillet; add in the pork and brown on all sides or until cooked through.

1/2 cup diced celery
1 (20 ounce) can tomatoes
1/8 teaspoon Tabasco sauce
3 cups rice, half cooked and drained
1/4 lb grated cheddar cheese
1 cup carrot, diced
1 (15 ounce) can black beans

Steps:

  • Use whatever type of rice you prefer and cook it halfway according to whatever method you prefer while continuing with the rest of the prep work.
  • Trim fat from pork, cut in strips 1 inch wide and 2 inches long.
  • Brown pork in oil then add salt, pepper, chili powder, onions, and celery.
  • Cook 5 minutes stirring frequently.
  • Mix in tomatoes, Tobasco and optional items if desired.

1 green bell pepper, diced
1 onion, diced
6 cloves garlic, chopped
2 teaspoons ground cumin

1 8-ounce can tomato sauce
1 cup converted (parboiled, not instant) white rice
1 15-ounce can black beans (not drained or rinsed)
8 thin boneless or bone-in pork chops (2 to 2 3/4 pounds)
1 tablespoon apple cider vinegar

Steps:

  • Preheat the broiler. Heat the olive oil in a medium pot over medium-high heat. Add the bell pepper, onion, garlic, cumin, salt and pepper and cook until slightly soft, about 3 minutes. Add the tomato sauce and 1/2 cup water and bring to a simmer.
  • Set aside about half of the tomato sauce mixture in a bowl. Add 3/4 cup more water and the rice to the pot and bring to a boil. Add the beans and their liquid, stir and reduce the heat to low. Cover and cook, undisturbed, until the rice is tender, about 15 minutes. Remove from the heat and let sit, covered, 5 more minutes.
  • Meanwhile, pierce the pork chops with a fork and rub with the vinegar, and salt and pepper to taste. Arrange on a foil-lined broiler pan. Pour the reserved tomato mixture over the pork chops and turn to coat. Broil, without turning, until golden brown, about 8 minutes.
