A great recipe for Sunday Dinner.

Number Of Ingredients 6

- 4 stripes of pork belly
- 7-8 potatoes
- 5-6 carrots
- 200g green beans
- half a mug of oil
- salt and pepper

Steps:

  • Peel the potatoes and carrots, cut the potatoes in 4, and the carrots and green beans in stripes.
  • Sprinkle a pinch of salt and pepper on the meat.
  • Pour the oil in an oven tray and put it in the oven for 10 minutes, then put the potatoes in , and push them around the edges.
  • Put the meat in the middle of the tray and put it in the oven at 190C/gas mark 5 for 1 hour and a half.
  • Half an hour before the meat must come out of the oven boil the carrots and green beans in water with a pinch of salt.
  • At the end take the tray out of the oven and let it rest for 5 minutes.
  • Serve this with Yorkshire pudding and gravy.

2 pounds pork belly
1/2 cup salt
1/2 cup sugar
1/4 cup red wine vinegar
1/2 tablespoon Dijon mustard
1/8 small red onion, chopped
1/2 cup vegetable oil
Salt and freshly ground black pepper
Reserved pork fat
2 tablespoons chopped shallots
2 russet potatoes, cubed and boiled
1 tablespoon grainy mustard
1 tablespoon red wine vinegar
1/3 bunch fresh chives, chopped
Salt and freshly ground black pepper
3 radishes, thinly sliced
2 celery stalks, thinly sliced
Celery leaves, for garnish
3 tablespoons soy sauce
1 tablespoon red wine vinegar
1 tablespoon hot sauce

Steps:

  • For the pork belly: Preheat the oven to 400 degrees F. Sprinkle the pork belly liberally with equal parts salt and sugar. Place the pork belly on a rack in a roasting pan. Roast for about 1 hour.
  • Once the pork belly is done, cool and set aside. Reserve the fat from the pan to be used in the potato salad. Once cooled, portion the belly into 3/4-inch by 3-inch slices.
  • Meanwhile, heat a deep fryer to 350 degrees F.
  • While the pork belly's roasting, make the vinaigrette for the celery and radish salad. Combine the red wine vinegar, Dijon, and red onions in a food processor. Slowly add in the vegetable oil to emulsify. Season with salt and pepper.
  • For the potato salad: In a frying pan, start with a little of the reserved pork fat. Add the shallots, potatoes, grainy mustard and red wine vinegar. Saute until warmed through. Finish with the chopped chives, salt and pepper.
  • For the celery and radish salad: Toss the radishes and celery in the vinaigrette. Top with celery leaves.
  • For the dipping sauce: Combine the soy, hot sauce and red wine vinegar.
  • Deep fry the pork belly portions in the hot oil until nicely browned, about 2 minutes. Remove and dip in the glaze. Slice and serve with the salads.

  • Place the roast on a rack in a shallow roasting pan, and cook 50 minutes in the preheated oven. Arrange the potatoes around the roast, and continue cooking 50 minutes, to an internal temperature of 145 degrees F (63 degrees C). Remove from heat, cover with foil, and let sit 15 minutes before slicing.

1 envelope onion soup mix
2 garlic cloves, minced
1 tablespoon dried rosemary, crushed
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground cloves
3 cups water, divided
1 bone-in pork loin roast (4 to 5 pounds)
2 to 3 pounds small red potatoes, cut in half
1-1/2 cups sliced onions

Steps:

  • In a large bowl, combine the first six ingredients. Stir in 1/2 cup water; let stand for 3 minutes. , Place roast, fat side up, on a greased rack in a roasting pan. Pour remaining water into the pan. Combine potatoes and onions; spoon around the roast. Brush vegetables and roast with seasoning mixture. , Bake, uncovered, at 325° for 2-1/2 to 3 hours or until a thermometer reads 160° and potatoes are tender. Baste and stir potatoes occasionally. 1 ½ teaspoons dried oregano
1 ½ teaspoons ground cumin
1 ½ teaspoons salt
1 ½ teaspoons ground black pepper
1 ½ teaspoons garlic powder
1 ½ teaspoons onion powder
1 ½ teaspoons ground turmeric
1 pinch cayenne pepper, or to taste
4 pounds whole pork belly
2 tablespoons lemon juice

Steps:

  • Combine paprika, oregano, cumin, salt, pepper, garlic powder, onion powder, turmeric, and cayenne pepper in a bowl; rub onto the non-fat side of pork belly. Cover with plastic wrap and refrigerate, at least 2 hours and up to overnight.
  • Preheat oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with parchment paper.
  • Remove plastic wrap from pork belly and place pork belly, fat-side up, on the prepared baking sheet. Make shallow cuts into the fat of the pork belly in a checkered pattern. Rub lemon juice into the fat.
  • Roast in the preheated oven until fat begins to brown, 30 to 40 minutes. Reduce oven heat to 350 degrees F (175 degrees C) and continue cooking until fat is crispy, about 1 hour more. Remove from oven and let rest 10 to 15 minutes before slicing.

Treat yourself and others to roast pork belly served with soft fondant potatoes and caramelised pickled onions. Sunday lunch just got better

½ tsp dried thyme
½ tsp mace
1 star anise , ground to a powder using a pestle and mortar
1 tbsp sea salt flakes
2 ½kg bone-in pork belly , skin scored
50g butter , softened, for the tin
12 medium Maris Piper potatoes
1 bunch of thyme
454g jar pickled onions , drained
125ml chicken stock

Steps:

  • Mix the thyme, mace, star anise and sea salt flakes together in a small bowl. Rub all over the pork belly. If you have time, transfer the pork to a tray and marinate in the fridge for up to 24 hrs, but this is not essential.
  • Heat the oven to 220C/200C fan/gas 7 and butter a large roasting tin. Cut a thin slice lengthways from both sides of each potato, then sit them flat in the prepared tin in one even layer. Scatter over the thyme and onions, then pour over the chicken stock.
  • Sit the pork on top of the potatoes, skin-side up and roast for 30 mins. Reduce the oven to 180C/160C fan/gas 4 for 1 hr 30 mins, until the skin is crisp. Transfer the pork to a board, then cover loosely with foil and leave to rest for 20 mins.
  • Return the tin with the potatoes to the oven and increase the oven temperature to 200C/180C fan/gas 6 for 25-30 mins until crisp. Carve the pork into generous squares (you can use a bread knife to do this more easily) and serve alongside the fondant potatoes and caramelised pickled onions.
