My Favorite Pork Turkey Meatloaf image

This soft-textured meatloaf is speckled with vegetables. My kids and I love the flavor of this dish. There's always enough for sandwiches the next day and crumbled into spaghetti sauce the day after that.

1 pound ground turkey
1 pound ground pork
1 tablespoon cooking oil
1 carrot, minced
½ red bell pepper, minced
½ onion, minced
2 cloves garlic, minced
⅓ cup thawed frozen chopped spinach
½ cup bread crumbs
½ cup wheat germ
2 eggs, room temperature
2 tablespoons ketchup
2 teaspoons salt
1 teaspoon ground black pepper
1 tablespoon honey
1 tablespoon ketchup

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Set the ground turkey and ground pork out at room temperature to warm slightly.
  • Heat the oil in a skillet over medium heat; cook the carrot, bell pepper, onion, garlic, and spinach in the heated oil until soft; set aside to cool.
  • Mix together the turkey, pork, bread crumbs, wheat germ, eggs, 2 tablespoons ketchup, salt, and pepper in a large bowl. Add the vegetable mixture and continue to mix until evenly combined; shape into a loaf; lay on the prepared baking sheet.
  • Whisk together the honey and 1 tablespoon ketchup in a small bowl; spread over the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, 60 to 70 minutes; remove to a serving platter and allow to rest 5 minutes before slicing.

3/4 pound lean ground turkey
3/4 pound lean ground pork
2 teaspoons olive oil
1/2 cup finely chopped onions
1 teaspoon finely chopped garlic
1/2 cup fresh, fine bread crumbs
1/4 cup milk
1 egg, beaten
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon ground cumin
Salt and freshly ground pepper to taste
2 tablespoons finely chopped parsley
1 pound ripe plum tomatoes
1 tablespoon olive oil
1/4 cup finely chopped onions
1 teaspoon finely chopped garlic
1 bay leaf
2 sprigs fresh thyme or 1 teaspoon dried
Salt and freshly ground pepper to taste

Steps:

  • Combine the turkey and pork in a mixing bowl.
  • Heat 1 teaspoon of the olive oil in a saucepan. Add the onions and garlic; cook briefly until wilted. Set aside.
  • Combine the bread crumbs and milk in a large bowl. Add the meat, onions and garlic, and the egg, nutmeg, cumin, salt, pepper and parsley. Blend well.
  • Shape the meat into 24 or more meatballs. Set aside.
  • For the sauce, first cut a small x in the core of the tomatoes, drop the tomatoes into boiling water for about 10 seconds and peel the skins. Cut out and discard the core, chop the tomatoes coarsely. There should be about 3 cups.
  • Heat 1 tablespoon of the olive oil in a saucepan; add the onions. When the onions are wilted, add the garlic. Cook briefly, add the tomatoes, bay leaf, thyme, and salt and pepper to taste. Cook for about 10 minutes stirring occasionally. Remove the bay leaf and the thyme sprig. Set aside.
  • Heat the remaining teaspoon of olive oil in a large non-stick skillet. Add the meatballs; cook over medium heat, turning them carefully so they brown evenly. Browning should take about 5 to 6 minutes. Drain the fat.
  • Add the tomato sauce to the skillet, bring to a simmer, cover, and cook for about 8 to 10 minutes. Serve over noodles.

3 slices whole wheat bread
1/2 cup grated Romano or Parmesan cheese
1 large egg, beaten
1 tablespoon ketchup
1 tablespoon minced fresh parsley
1 teaspoon minced fresh oregano
1 teaspoon minced fresh basil
1 teaspoon seafood seasoning
1 pound ground turkey
1/4 pound ground pork
1 can (29 ounces) tomato sauce
Hot cooked pasta, Parmesan cheese, and chopped fresh parsley, optional

Steps:

  • Pulse bread in a food processor until fine crumbs form. Transfer to a large bowl. Combine bread crumbs with the next 7 ingredients. Add turkey and pork; mix lightly but thoroughly. With wet hands, shape into twenty-four 1-1/2-in. balls., Transfer to a 3- or 4-qt. slow cooker. Pour sauce over top; stir gently. Cook, covered, on low until meatballs are cooked through, 4-5 hours. If desired, serve with hot cooked pasta and sprinkle with parsley.

1 cup breadcrumbs
1 tablespoon oregano
2 teaspoons basil
2 garlic cloves, minced
1/2 cup onion, minced
1/4 cup tomato paste
1 tablespoon olive oil

Steps:

  • Mix everything except olive oil together and shape into 36 equally sized meatballs. They will be loose and sticky. Fry in olive oil over medium heat 5-8 minutes, browning on all sides, until done. Serve with your favorite sauce.

I accidentally added cilantro to a very similar meatball recipe and enjoyed it so much, I added cilantro to this recipe. Was a HIT!!

1 1/2 pound(s) lean ground turkey
1 pound(s) lean ground pork
1 1/2 tablespoon(s) no-salt seasoning blend containing garlic, onion, spices, parsley, etc.
1/2 teaspoon(s) salt and pepper
1/2 teaspoon(s) cayenne pepper
SAUCE:
2 cup(s) jarred orange marmalade
1 cup(s) orange juice
1/4 cup(s) brown sugar
1/4 cup(s) diced sweet onion
2 tablespoon(s) diced cilantro leaves
2 tablespoon(s) diced chili peppers in adobo sauce, plus 1 tablespoon sauce
- zest from one orange
3 - pieces cooked bacon, diced
1 tablespoon(s) diced basil leaves
1/4 teaspoon(s) hot sauce
1/4 teaspoon(s) sea salt
1/4 teaspoon(s) ground black pepper

Steps:

  • Spray interior of slow cooker thoroughly with nonstick cooking spray.
  • Prepare meatballs. In a large bowl and with hands, mix together all meatball ingredients. Roll into balls 1-inch or 1 1/2-inches in diameter. Drop onto a baking dish lined with waxed paper. Cover with aluminum foil and set in refrigerator at least 30 minutes.
  • Mix together sauce ingredients in a medium bowl. Set aside.
  • Place meatballs in slow cooker, stacking them one on another. Pour sauce over meatballs.
  • Place the lid on top of the slow cooker and allow the meatballs to cook for 6 to 8 hours. Meatballs are ready when the internal temperature of each one has reached 165 degrees Fahrenheit, determined by a meat thermometer. Basting, if desired during cooking time (careful not to let heat out from slow cooker)
  • Serve warm either on small appetizer plates or with toothpicks for guests to pick meatballs out from the slow cooker.
