BAKED MEATBALLS
For a no-fry, homemade dinner, try Alton Brown's Baked Meatballs recipe, made with a mixture of three different meats and spinach.

- Preheat the oven to 400 degrees F.
- In a large mixing bowl, combine the pork, lamb, ground round, spinach, cheese, egg, basil, parsley, garlic powder, salt, red pepper flakes, and 1/4 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated. Use immediately or place in refrigerator for up to 24 hours.
- Place the remaining 1/4 cup of bread crumbs into a small bowl. Using a scale, weigh meatballs into 1.5-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds, roll in the bread crumbs and place the meatballs in individual, miniature muffin tin cups. Bake for 20 minutes or until golden and cooked through.
FENNEL PORK MEATBALLS
These pork meatballs filled with fennel and onion are an Italian-inspired favorite. The fennel seed seasons adds punch of flavor, while the sauteed onion and fresh fennel keeps the meatballs moist and delicious.

- Heat one tablespoon of oil in large saute pan on medium heat. Add the onions and fennel and cook for 2 to 3 minutes, or until slightly softened. Remove from the heat to cool.
- In a large mixing bowl, add the pork, eggs, parsley, fennel seed, salt and pepper. Once the sauteed onions and fennel have cooled slightly add them to the mixing bowl and use your hands to mix all ingredients together.
- Shape the pork mixture into small meatballs, approximately 1 ½ inches in diameter. See the notes below for the cookie scoop I use to make evenly sized meatballs. Make all the meatballs and place on parchment-lined baking tray or large plate.
- Wipe your previously used large saute pan clean, then add 3 tablespoons of oil to the pan over medium heat. Place the first batch of meatballs in the pan, being careful not to crowd the pan (this should be about 20 meatballs). Cook the meatballs 2 to 3 minutes on one side, then rotate them, so that all sides are browned. The meatballs should cook for 10 to 12 minutes total, or until the inside is no longer pink. When the first batch is done, remove them to a paper towel-lined plate and start the next batch.
- Discard any fat from the pan and add all of the meatballs back to the pan to warm through before serving.

- Preheat your oven to 400 degrees F. Line a large rimmed baking sheet with heatproof parchment paper or nonstick foil.
- In a large bowl, use your clean hands to mix together all the ingredients.
- Shape the mixture into 32 meatballs, each weighing about 1 oz (30 grams). It's easier to shape the meatballs if your hands are wet.
- Arrange the meatballs in a single layer on the prepared baking sheet.
- Bake them until browned and cooked through, for about 15 minutes.

PORK AND SPINACH MEATBALLS
These tasty little morsels can be made ahead of time and then just reheated when you're ready. Serve them as a main course, with a bowl of tzatziki. You could also top the dish with some finely sliced spring onions.

- Place the couscous in a bowl and cover with 150ml boiling water.
- Cover and leave to"cook".
- Heat the oil in a frying pan and add half the onion plus all of the garlic, rosemary and lemon zest.
- Cook, stirring often, for about 10 minutes.
- Spread out the contents of the pan in a mixing bowl and leave to cool.
- Trim the stalks from the coriander, then chop the leaves and fine stalks.
- Add half the coriander to a mixing bowl and combine with the egg and pork as well as some salt and pepper, if desired.
- Add the couscous too.
- Use your hands to mix everything together, forming it into a ball.
- Rinse your hands, then pinch off small pieces and form into individual balls about the size of a cherry tomato.
- Transfer to a plate as you go.
- When done, cover with clingfilm and chill in the fridge.
- Now make the sauce.
- Dissolve the chicken stock cubes in 1 1/2 litres of boiling water.
- Heat the butter in a large pan.
- Stir in the remaining onion and cook until lightly browned.
- Sift the flour over the top, stir until it disappears, then add the hot stock.
- Stir constantly as it comes to a boil.
- Lower the heat and cook gently for five minutes.
- Then add in the spinach and remaining coriander.
- Cook for five more minutes, then juice the lemon into the pan.
- Drop the chilled meatballs into the simmering sauce.
- Return to a simmer and cook, covered, for 15 minutes.
- Shake the pan every so often to make sure the meatballs are covered.
- When the meat is cooked through serve over rice.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Mix pork, pine nuts, cinnamon, 1/2 teaspoon salt, and black pepper in a bowl; shape pork mixture into 1/2-inch meatballs and arrange on a baking sheet.
- Bake meatballs in the preheated oven until browned and center is no longer pink, 3 to 4 minutes per side. Turn the tray around once to be sure the meatballs roast evenly; flip meatballs halfway through cooking.
- Bring a large pot of lightly salted water to a boil. Cook mini penne in the boiling water for about 5 minutes, stirring occasionally. Add spinach and continue cooking until pasta is cooked through but firm to the bite, about 3 minutes more. Reserve about 1/4 cup pasta cooking water and drain remaining water.
- Return pasta and spinach to the pot and stir in olive oil, Parmesan cheese, and reserved cooking water. Top pasta with meatballs before serving.

- Soak the dried mushrooms in cool tap water for at least 5 hours or overnight. Rinse mushrooms under running water. Drain. Add 1 tablespoon corn starch. Rub the mushrooms all over with the starch to remove dirt. Rinse. Remove the stems with scissors. Squeeze out as much water as possible. Pat dry with paper towels. Cut into ¼-inch dices. Set aside.
- Wash the spinach thoroughly for at least 2 times to remove all the sand and dirt. Drain. If there are roots, cut to remove.
- For the pork, cut into thin strips. Then, cut the strips into tiny dices. Gather the meat together, pat down slightly. Chop repeatedly and rapidly, fold and chop again. Repeat the same motions until the meat turns into ground meat. Transfer to a medium bowl. Stir for a few times until the meat is slightly sticky. Add marinade and mix well. Add the mushroom and mix again. Divide into 12 (1½-inch) portions. Roll into meatballs and squeeze tight slightly.
- In a large pot over high heat, add 8 cups water. Bring to a boil. Once boiling, add spinach and cook the stems are just softened, about 2 – 3 minutes. Remove the spinach to a large bowl. Add the meatballs and cook until they float, about 3 – 4 minutes. Season with salt to your own taste. Return the spinach to pot and cook for 1 more minute. Turn off the heat. Transfer to serving bowls. Serve immediately.

- Bring a large saucepan of water to the boil. Add the spinach to the boiling water and cook for 30 seconds. Remove the spinach and refresh in ice water. Drain and squeeze all the liquid from the leaves with your hands, getting as much out as possible, then finely chop.
