PORK AND SAUERKRAUT
Eating sauerkraut on New Year's is an old Pennsylvania Dutch tradition, said to bring good luck. The traditional meal consists of pork and sauerkraut served together, with sauerkraut representing luck and the pig representing rooting into the New Year. It's a feel-good and flavorsome ritual and it may be just what you need to start the New Year. Serve with mashed potatoes or dumplings.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place pork roast in a large roasting pan. Season with salt and black pepper. Mix sauerkraut, water, onion, and apple together in a large bowl. Pour sauerkraut mixture over roast.
- Bake roast in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 300 degrees F (150 degrees C). Continue to cook roast until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), adding water if sauerkraut mixture looks dry, about 2 hours more.
- Remove roast from oven and allow to rest in a warm area before slicing, about 10 minutes.

PORK AND SAUERKRAUT ROLL
This is one of my husbands favorite dinner recipes. I have made it many times for dinner with friends and it is always very popular.

Steps:
- 1. Preheat oven to 350 degrees
- 2. Combine pork, bread crumbs, egg, salt, pepper and worcestershire sauce; mix thoroughly as you would meatloaf.
- 3. On a long piece o waxed paper, pat the mixture into a 10"x7" rectangle.
- 4. Combine the Sauerkraut and onions together; spread evenly over the meat leaving about 1/2 inch all around.
- 5. Starting at the 7" end, roll up like a jelly roll.
- 6. Place seam side down in a shallow baking dish and arrange the bacon on top slightly overlapping each piece and around the sides of the pork roll. smooth it so that the entire roast is covered in the bacon.
- 7. Bake for 1 hour on 350 degrees! Let it rest for 5 minutes before slicing into 1 inch slices.
- 8. NOTE: Sprinkle the top of the roast with fresh cracked black pepper the entire length of the roast. It gives the roast a wonderful crust and flavor. Also, try 1/2 lb. ground pork and 1/2 lb. Bob Evans original recipe bulk pork sausage or do as I do and double the recipe to make a 2 lb. roast in which case you may use 1 lb. ground pork and 1 lb. Bob Evans Original Recipe bulk pork sausage.
GERMAN PORK CHOPS AND SAUERKRAUT
As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.
- Mix the sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl until well combined, and spread the sauerkraut mixture over the pork chops. Cover the dish with aluminum foil.
- Bake in the preheated oven until the pork is no longer pink inside, about 45 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

CABBAGE ROLLS WITH SAUERKRAUT AND PORK
Steps:
- Bring 1 quart of water to a boil with the salt in a medium saucepan.
- Add the cabbage leaves and boil for 4 to 7 minutes. Drain and dry on paper towels.
- In a large skillet, sauté the chorizo and onion until the onion is translucent. Remove from the heat and let cool.
- Season the meat mixture with the pepper and mix with the rice. Place 2 tablespoons of the meat mixture in each cabbage leaf. Roll the leaves and secure with toothpicks or poultry skewers. Set aside.
- In a clean skillet, layer the sauerkraut and cabbage rolls, beginning and ending with the sauerkraut.
- Add 1 quart water and simmer for 35 minutes, adding more water if needed.
- Sprinkle with paprika and serve each roll with a dollop of sour cream.
EASY CABBAGE ROLLS WITH SAUERKRAUT
This recipe is so easy and people just love these cabbage rolls. Much of the flavor comes from the sauerkraut and tomato juice, so there is little else to it. I have substituted lean ground beef for half of the ground pork with much success.

- Combine pork, rice, onions, pepper, garlic powder, salt and paprika in large bowl.
- Steam heads of cabbage until leaves remove easily (about 5 minutes each in microwave along with 1/2 cup water, covered with plastic wrap works well) Take handfuls of meat mixture and roll up in cabbage leaves.
- Place rolls in roasting pan.
- After covering the bottom of the pan, top with half of the sauerkraut and half of the tomatoes.
- Repeat with second layer.
- Pour tomato juice over top.
- Cover and bake 2 1/2 hours at 350 degrees.

KRAUT PORK PINWHEEL
This is a recipe that I got from my mother. My DS's absolutely love this recipe - one pinwheel isn't enough. We always have to make two. This is NOT a low fat recipe.

- Combine ground pork, crumbs, egg, salt, and worcestershire; mix thoroughly,
- On waxed paper, pat meat mixture to a 10 x 7 inch rectangle.
- Combine sauerkraut and onion; spread evenly over meat.
- Starting with narrow side, roll up meat jelly-roll fashion.
- Place loaf in shallow baking dish.
- Arrange bacon slices across top.
- Bake in moderate oven (350º ) for 40 - 45 minutes.

- Heat oil in a large skillet over medium heat. Brown chops on all sides and remove from pan.
