1 packet dry onion soup mix
1 (10.75 ounce) can water
1 cup mushrooms, diced
4 pork chops
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the mushroom soup, onion soup mix, water and mushrooms.
  • In a large skillet over medium-high heat, brown the pork chops on each side. Transfer chops to a 9x9 inch baking dish, and cover with the mushroom soup mixture.
  • Bake in the preheated oven for 1 1/2 hours, or until internal pork temperature reaches 145 degrees F (63 degrees C).

1 tbsp vegetable or rapeseed oil
4 pork shoulder steaks (about 750g), cut into large chunks
1 onion, chopped
1 leek, chopped
1 carrot, chopped
bundle of woody herbs (bouquet garni) - we used 2 bay leaves, 3 sage leaves and 4 thyme sprigs, plus a few thyme leaves to serve
1 chicken stock cube
2 tsp Dijon mustard
1 tbsp cider vinegar
2 tsp cornflour
1 tbsp honey

Steps:

  • Heat your slow cooker. Drizzle the oil in a wide frying pan over a high heat. Season the pork, then add to the hot pan. Avoid overcrowding the meat - you may want to do this in batches. Cook until deep brown all over, then transfer to the slow cooker. Add the onion and leeks to the frying pan and cook for a few mins, until they soften. Add a splash of water and scrape any tasty bits from the bottom, then tip everything into the slow cooker. Add the carrot, herbs, stock cube, mustard and vinegar, season, then add enough water to just cover the ingredients. Stir, then set your slow cooker on low for 6-8 hrs, or high for 5-6 hrs.
  • In a saucepan, mix the cornflour and honey with 1-2 tsp of liquid from the slow cooker, until you have a smooth paste. Add 100ml more liquid, bring to a simmer until thickened, then stir back into the casserole. Serve with mash or dumplings, scattered with thyme leaves.

6 boneless pork chops

4 potatoes, thinly sliced
½ cup chopped onion

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat oil in a large skillet over medium high-heat. Place the pork chops in the oil, and sear.
  • In a medium bowl, combine the soup and the milk. Arrange the potatoes and onions in a 9x13 inch baking dish. Place the browned chops over the potatoes and onions, then pour the soup mixture over all.
  • Bake 30 minutes in the preheated oven. Top with the cheese, and bake for 30 more minutes.

This is a very old recipe that I found years ago in one of my mother's cookbooks that she got when she first got married. It is very delicious and a favorite in my household.

1 lb pork tenderloin, cut into 1/2 inch slices
3 slices bacon, diced
1 medium onion, chopped
1/2 cup canned sliced mushrooms
1 teaspoon salt
1/8 teaspoon pepper
1 egg, beaten
1/4 cup mushroom liquid
1 cup fine cracker crumb

Steps:

  • Panfry bacon in skillet until browned.
  • Remove with a slotted spoon.
  • Saute onion and mushrooms in bacon fat until tender.
  • Remove with slotted spoon and combine with bacon.
  • Season tenderloin pieces.
  • Dip in beaten egg, then roll in cracker crumbs.
  • Brown in remaining bacon fat.
  • Fill a 1-QT casserole dish with alternate layers of the browned tenderloin slices and the browned bacon, onions, and mushrooms.
  • Add the mushroom liquid, cover and bake at 350*F for 30 minutes.
  • VARIATIONS: I most often substitute orange juice or apple juice for the mushroom liquid.

4 thick cut pork chops (frozen)
2 cups long grain or parboiled white rice
two 10.5 ounce cans condensed mushroom soup
three 10.5 ounce cans water (use the empty cans from the soup)
2 tablespoons dry onion soup mix
10 saltine crackers
1 cup shredded cheddar cheese
parsley to garnish

Steps:

  • Preheat your oven to 350 °F.
  • Whisk together the rice, soup, water and soup mix until the lumps in the soup are smoothed out and mixed in. To get three cans of the water, simply fill up the empty mushroom soup cans and use to measure. It also helps clean out the extra soup!
  • Pour into a large deep large lidded casserole dish or Dutch oven like I used. This recipe is too big for a 9x13 usually, with those thick chops.
  • Place your frozen pork chops on top of the rice and gently immerse the chops into the soup and cover it completely so that the pork chops don't dry out.
  • Cover with foil or a lid and cook for 1 1/2 hours OR until the rice is tender and the pork has reached a temperature of 145°F .
  • Remove from the oven and sprinkle the crackers, then the cheese on top. Return to the oven and broil for 2-3 minutes until the crackers are browned and the cheese has melted.
  • Remove and serve.

1 cup uncooked quinoa, rinsed
2 cups low-sodium vegetable or chicken broth
1 ½ tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 (8 ounce) package baby bella mushrooms, sliced
2 cups pulled pork*
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
2 cups shredded mozzarella cheese, divided**
salt and pepper, to taste
¼ cup shredded parmesan cheese***
chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 350ºF. Lightly spray a baking dish (I use a deeper-style 9x9 inch dish but another casserole dish will also work) and set aside.
  • Add the quinoa and broth to a medium saucepan. Bring the mixture to a boil. Give it a stir, cover, then reduce the heat to medium-low / low and let simmer for about 15 minutes, until the liquid is absorbed. Turn off the heat and let the pan sit covered for 5 minutes, then fluff the quinoa with a fork. Transfer the quinoa to a large bowl.
  • Meanwhile, set a medium skillet over medium heat. Add in the olive oil. When hot, add in the onion and cook for about 2 minutes, until it starts to soften. Add in the garlic and cook for 30 seconds, until fragrant.
  • Add in the mushrooms and cook for about 5 to 7 minutes, until the liquid released from the mushrooms has almost all evaporated. Remove from the heat and transfer the mixture to the bowl with the quinoa.
  • Add in the pork, spinach and ½ cup of the mozzarella. Mix until well combined, then taste and season with salt and pepper to your liking.
  • Transfer to the prepared baking dish. Sprinkle the top with the remaining mozzarella and the parmesan.
  • Cover with aluminum foil and bake for 10 minutes. Remove the foil, turn on the broiler and bake for 5 to 7 minutes, until the cheese is golden and bubbly on top. Garnish with fresh parsley before serving.

1½ cups diced onion (bite-sized pieces),
1 tablespoon minced garlic
1 pound Crimini or Button mushrooms, (washed and dried, thinly sliced)
2 teaspoons dried thyme
1 teaspoon dried tarragon
¼ cup medium dry sherry
1½ pounds pork tenderloin, (cut into bite-sized pieces)
⅓ cup vegetable or meat stock
1⅓ cup frozen peas, (thawed)
salt and freshly ground black pepper

Steps:

  • Sauté the onions. Coat the bottom of a large sauté pan (12 inch, at least) with olive oil and place it over medium-high heat. Add the onions and garlic to the pan. Cook, stirring from time to time, until the onions are soft and slightly golden, about 7 minutes.
  • Sauté the mushrooms and deglaze. Add a bit more oil, to be sure the bottom of the pan is well coated, turn the heat to high and add about half of the mushrooms. Once they begin to brown, add the other half, and continue to sauté until they're all golden and tender, about 10 minutes total. Now deglaze the pan by drizzling the sherry over the mushrooms and quickly stirring with a flat-edged spatula, scraping anything that's stuck to the bottom off and back into the mixture. Stir in the tarragon and thyme.
  • Add the pork and cook. Season the pieces of pork with salt and pepper and add them to the pan. Mix and add the stock. Once the pieces are cooked through - about 5 minutes - add the peas.
  • Season and serve. Season generously with salt and pepper to taste. (Here's How to Season to Taste.) Serve over rice, pasta or a toasted baguette.

Steps:

  • Gather the ingredients.
  • Heat the oven to 375 F. Butter a 2 1/2- to 3-quart baking dish.
