375 g elbow macaroni
1/2 recipe braised pork shoulder with onion (see Braised Pork Shoulder With Onions)
1/2 cup 15% cooking cream or 1/2 cup 35% cream
1 cup grated parmigiano-reggiano cheese
1 cup grated mozzarella cheese
salt and pepper

Steps:

  • With the rack in the middle position, preheat the oven to 200 °C (400 °F).
  • In a large pot of salted boiling water, cook the pasta until al dente. Drain and oil lightly. Set aside.
  • Coarsely chop the pork and place in a large saucepan with the braising liquid. Add the cream and bring to a boil. Let reduce for about 5 minutes. Add the pasta and parmesan and stir to combine. Season with salt and pepper. It is normal that the preparation seems liquid.
  • Pour into a 33 X 23-cm (13 x 9-inch) or a 3 liters (12 cups) baking dish. Cover with the mozzarella cheese. Bake for about 30 minutes or until the cheese begins to brown. Let rest for 10 minutes.

This is my Mom's pork noodle casserole. The added sour cream gives it a little twist on the usual version. The added red pepper and corn give it color and flavor. You can add and subtract any vegetables in this versatile recipe. This is one of my favorite comfort food recipes.

2 cups egg noodles
cooking spray
3 tablespoons butter
¼ cup chopped onion
¼ cup chopped celery
¼ cup chopped carrots
¼ cup chopped red bell pepper
2 (10.75 ounce) cans condensed cream of chicken soup
½ cup sour cream, or more to taste
2 cups shredded Cheddar cheese
1 (8 ounce) can whole kernel corn, drained
3 cups cubed cooked pork
1 teaspoon salt
¼ teaspoon ground black pepper
½ cup dry bread crumbs

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Melt the butter in a skillet over medium heat. Stir in the onion, celery, carrots, and red bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the noodles, cream of chicken soup, sour cream, Cheddar cheese, corn, and cooked pork, then season with salt and black pepper. Transfer mixture into the prepared baking dish. Sprinkle bread crumbs on top.
  • Bake in the preheated oven until bubbly, 30 to 35 minutes.

1 package Smithfield Boneless Pork Shoulder Seasoned Carnitas
8 ounce pasta
1 Tablespoon olive oil
1 red bell pepper (sliced)
1 green bell pepper (sliced)
2 cups heavy cream
1/2 cup sour cream
1/4 cup parmesan cheese
1 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon paprika

Steps:

  • Prepare seasoned carnitas according to package directions. Set aside. Bring water in a large pot to a boil and cook pasta until al dente.
  • In a medium-sized skillet over medium-high heat add olive oil. Add peppers and saute until tender. Set aside on a plate.
  • Add heavy cream, sour cream, parmesan cheese, chili powder, cumin, and paprika to the skillet. Whisk and let simmer until it starts to thicken. Add pork and peppers to the sauce and toss until coated and heated through.
  • Serve with optional toppings.

1 1⁄2 cups chopped yellow onion
4 (1⁄2-inch-thick) bone-in pork rib chops
1 teaspoon salt, divided
1 teaspoon ground black pepper, divided
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 1⁄2 cups whole milk
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh rosemary
3⁄4 cup shredded whole milk mozzarella cheese
8 ounces cavatappi pasta, cooked
2 tablespoons Japanese bread crumbs (panko)
1⁄4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 375°. Spray a 2 1⁄2-quart baking dish with nonstick cooking spray. Set aside. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add onion; cook, stirring occasionally, until lightly browned, 5 minutes. Remove from pan. Add remaining 1 tablespoon oil to pan. Sprinkle pork chops with 1⁄2 teaspoon salt and 1⁄2 teaspoon pepper. Add pork chops to pan; cook until browned, approximately 3 minutes per side. Remove from pan. Set aside. Add butter to pan; melt over medium heat. Add flour; cook, whisking constantly, 1 minute. 1 (12 ounce) box tri-color spiral pasta (or any macaroni)
1 cup cooked pork, cubed
2 tablespoons margarine
1 onion, chopped
1/2 lb mushroom, sliced
2 celery ribs, sliced
1 green pepper, cut into strips
1 (2 ounce) can sliced black olives, drained
1/2 lb spicy cheese, grated (herb harvati or another cheese with peppers in it)
1 1/2 cups 1% low-fat milk
2 eggs
paprika

Steps:

  • Preheat oven to 350-degrees F.
  • Prepare macaroni according to package directions, drain, put macaroni in bowl.
  • In skillet, melt margarine.
  • Add onion, green pepper, mushrooms and celery.
  • Cook until vegetables are tender (10 minutes).
  • Add pork and black olives.
  • Remove from heat.
  • Add pork/vegetable mixture to macaroni.
  • Mix milk, eggs and cheese together in measuring cup or bowl.
  • Add to macaroni/vegetable mixture.
  • Pour mixture into 3-quart casserole.
  • Sprinkle casserole with paprika.
  • Bake for 30-45 minutes.

1 ½ cups uncooked rotini pasta
5 (1 1/2 inch thick) boneless pork chops, cut into bite size pieces
1 ½ cups crispy rice cereal
1 teaspoon seasoned salt
1 teaspoon garlic powder
1 teaspoon onion powder
2 (10.75 ounce) cans condensed cream of mushroom soup
2 (15 ounce) cans green beans
½ cup mayonnaise
2 cups shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a medium pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Fill a large saucepan halfway with water and bring to a boil over high heat. Add the pork and boil for 7 to 10 minutes. While this is cooking, place the rice cereal squares, seasoned salt, garlic powder and onion powder in a resealable plastic bag and crush the cereal to crumbs; set aside.
  • Place the pork, mushroom soup, green beans, mayonnaise, pasta and 1 cup of the cheese into a 9x13 inch baking dish. Mix this well, then cover with the remaining cheese. Top off with the crushed cereal mixture, covering everything completely.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until heated throughout.

8 ounces uncooked macaroni (about 2 cups)
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon ground mustard
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
2 1/2 cups shredded sharp cheddar cheese (divided)
2 cups pulled pork

Steps:

  • Cook the macaroni in boiling salted water following package directions. Drain and rinse in a colander.
  • Heat the oven to 350 F (180 C). Butter a 2 1/2- to 3-quart baking dish.
  • Meanwhile, heat butter in a saucepan over medium heat. Add the flour and continue cooking for 2 minutes, stirring or whisking constantly. Gradually add the milk, whisking to blend thoroughly. Cook, stirring, until thickened and smooth.
  • Stir in the ground mustard, salt, and freshly ground black pepper. Add 2 cups of sharp cheddar cheese and cook, stirring, until melted.
  • Combine the drained macaroni with the cheese sauce, blending well.
  • Heat the pulled pork on the stovetop or in the microwave until hot (or as package directs if you use purchased).
  • Spoon the macaroni and cheese mixture into the baking dish. Top with the pulled pork. Sprinkle the pulled pork with the remaining cheddar cheese.
  • Bake for about 20 to 25 minutes, or until the casserole is hot and the cheese has melted.
