Meet the Cook: Necessity was the "mother" of this recipe! I'd already marinated the pork before realizing we were short on kabob vegetables. In place of them, I used apples I had on hand. This has since become one of my most requested dishes. I have prepared these tangy skewers for just the two of us - my husband and I, married only last July, are both in the military - and for friends. -Cheryl Plainte, Minot, North Dakota

3/4 cup barbecue sauce
1/2 cup pineapple juice
1/4 cup honey mustard
1/4 cup packed brown sugar
2 tablespoons soy sauce
2 tablespoons olive oil
1-1/2 pounds pork tenderloin, cut into 3/4-inch cubes
5 medium unpeeled tart apples

Steps:

  • In a large resealable plastic bag or shallow glass container, combine the first six ingredients; mix well. Reserve 1/2 cup for basting and refrigerate. Add pork to remaining marinade and turn to coat. Seal bag or cover container; refrigerate for at least 1 hour., Drain and discard marinade. Cut the apples into 1-1/2-in. cubes. Alternate pork and apples on metal or soaked wooden skewers. , Grill, uncovered, over medium heat, for 3 minutes on each side. Baste with the reserved marinade. Continue turning and basting for 8-10 minutes or until meat juices run clear and apples are tender.

1/2 cup apricot jam
2 tablespoons cider vinegar
1 tablespoon tomato paste
2 tablespoons olive oil, plus more for grill
Coarse salt and ground pepper
1 1/2 pounds (about 1 1/2 inches each) pork tenderloin, halved lengthwise and cut into 16 cubes
1 medium red onion, cut into 8 wedges
1 Granny Smith apple, peeled and cut into 8 wedges

Steps:

  • Heat grill to medium-high. Make the sauce: In a large bowl, combine jam, vinegar, tomato paste, and 1 tablespoon oil. Season with salt and pepper. Set aside.
  • Assemble 4 long skewers, alternating 4 pork cubes with 2 onion wedges and 2 apple wedges on each (begin with pork and end with apple). Roll skewers in remaining tablespoon oil. Season with salt and pepper.
  • Lightly oil grates. Place skewers on grill; cover grill, and cook, turning occasionally, until grill marks are visible, 6 to 8 minutes.
  • Open grill; baste skewers with some sauce, and cook, turning skewers and basting occasionally with more sauce, until pork is no longer pink in the center and is nicely glazed, 4 to 8 minutes more.

1 cup apple jelly
2 tablespoons lemon juice
1 teaspoon cinnamon
2 tablespoons butter
1 lb boneless pork loin, cut into 1-inch cubes
3 apples, seeded and cut into 1 inch cubes
2 tablespoons lemons, juice and zest of
1 pinch salt
1/4 teaspoon white pepper

Steps:

  • Soak skewers in water for 60 mintes or make Recipe #227473.
  • Glaze:.
  • In small saucepan, make glaze by mixing together the jelly, lemon juice and zest, cinnamon and butter. Simmer until well blended.
  • Sprinkle lemon juice, zest and salt and pepper evenly over pork and apple cubes. Thread pork onto skewers and spoon glaze over all.
  • Grill over hot coals 10-12 minutes; turning frequently. Baste frequently.
