NO-BAKE CHOCOLATE COCONUT COOKIES
These are super yummy and super easy! The combination of the chocolate, coconut, and oats is wonderful. No baking required! These also freeze well.

Steps:
- Line a baking sheet with waxed paper.
- Mix oats and coconut in a large bowl until thoroughly combined.
- Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

NO BAKE CHOCOLATE PORCUPINE COOKIES
These are a cute and easy recipe to share with children. My mom used to make them when she worked at the elementary school cafeteria..The kids loved them and so did the adults...Theya re still one of my all time favorites to this day.

Steps:
- 1. Blend sugar, cocoa, and milk in a saucepan. Bring to a boil, then add butter and boil for one minute. remove from heat and add, peanut butter, vanilla, coconut, and oatts. Mix together well.
- 2. Using a small ice cream scoop, drop mixture in individual serving sizes onto waxed paper..Cool well before serving.
- 3. I have used both creamy and chunky peanut butter for this recipe with good results on both. I have also used a regular sized ice cream scoop for ADULT sized porions of this cookie and a small ice cream scoop for KIDS sized portions.
COCONUT PORCUPINES
This recipe was in a box of loose recipes I'd cut out of magazines and newspapers. I'm posting it here so it won't get lost.UPDATE: Made these and they are delicious. I used the food processor to chop up pecans. I used coconut to thicken the batter so I could make them into balls and then roll them in coconut. I set the oven at 265° and baked for 30 min. I will bake for 25 min. next time so they will be softer.

- Mix all ingredients except coconut.
- Thicken with coconut and roll into balls.
- Place on parchment paper or lightly greased cookie sheet.
- Cook 30 minutes in slow oven, 250°-275°.
- Makes approximately 18-20.
