LIMA BEAN AND PORCINI SOUP

- In a soup pot, combine celery, carrot, onion, garlic, olive oil and salt. Cover and cook over low heat, stirring occasionally, until soft, about 10 minutes. Add lima beans, barley, 8 cups water, bones, porcini, thyme and bay leaf, and bring to a boil. Reduce heat to medium-low and simmer, uncovered, until beans are tender, about 1 1/2 hours.
- Discard thyme sprigs and bay leaf. Remove bones, remove meat from bones, chop meat and return meat to soup. Taste and add salt if needed. Ladle soup into bowls and season with pepper. Garnish with shallot and parsley, and serve.

- Bring stock and 1/2 cup water to a boil in a small pan. Add porcini. Let stand until soft, about 20 minutes. Remove porcini with a slotted spoon; coarsely chop. Set aside. Strain soaking liquid through cheesecloth; set aside.
- Heat oil in a medium pan over medium-high heat. Add onion, garlic, salt, and pepper. Cook, stirring occasionally, until onion is translucent, about 3 minutes. Add white mushrooms; cook, stirring occasionally, until tender, about 5 minutes. Stir in porcini, tomatoes, rosemary, soaking liquid, and beans. Bring to a boil. Reduce heat to medium; simmer until cooked through, about 15 minutes. Remove cooked rosemary; discard. Garnish with fresh rosemary sprigs.

- If using fresh mushrooms, wash and slice them. If using dried soak them in hot water to cover for 30 minutes, then drain the mushrooms (reserve and strain that lovely soaking liquid for making soups!). Squeeze them to remove excess liquid.
- Heat the olive oil in a large skillet over medium high heat. Add the leeks and saute for about 6 minutes, until they are wilted and tender. Add the mushrooms and saute for about 8 minutes. If using fresh mushrooms they will brown slightly, and become tender. If using reconstituted dry mushrooms they won’t brown, but they will become tender.
- Add the tomatoes, beans, tarragon, and salt and pepper and bring to a simmer, stirring frequently, for 5 minutes. Add the balsamic vinegar and stir to deglaze the pan, meaning pull up any little bits stuck to the bottom of the pan. Stir in the harissa, if using, and cream and allow to heat through for another minute.

- In a large soup pot, cover the cranberry beans with 3 quarts of cold water. Add 1 tablespoon of kosher salt, the bundle of thyme sprigs and the bay leaves. Bring to a simmer and cook over moderate heat until the beans are tender, about 40 minutes. Drain the beans and discard the thyme sprigs and bay leaves.
- Meanwhile, in a large bowl, pour 4 cups of boiling water over the dried porcini and let stand until the mushrooms are soft, about 15 minutes. Remove the mushrooms and squeeze them dry over the bowl; reserve the soaking liquid. Coarsely chop the mushrooms.
- Preheat the oven to 375°. Position a rack in the top third of the oven. Slowly pour the mushroom soaking liquid into a large saucepan, discarding the last bit of gritty liquid. Add the porcini, leeks, butter and 2 teaspoons of salt. Bring to a simmer and cook over moderate heat until the leeks are very tender and the liquid has thickened slightly, about 35 minutes. Remove from the heat. Stir in the crème fraîche, 2 teaspoons of the chopped thyme, 2 teaspoons of the chopped marjoram and the reserved beans. Season with salt and pepper. Transfer the bean mixture to a 9-by-13-inch baking dish.
- In a small bowl, toss the panko with the olive oil and the remaining 1 teaspoon each of chopped thyme and marjoram; season with salt and pepper. Sprinkle the panko over the beans. Bake for about 40 minutes, until the beans are bubbling and the panko is browned. Remove the cassoulet from the oven and let stand for 5 minutes. Spoon into warm bowls and serve.
