I've made these often for Sunday dinner, and they are delicious! There's nothing like homemade rolls to top off a meal.

Yield 1-1/2 dozen.

Number Of Ingredients 10

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 teaspoon plus 1/4 cup sugar divided
1 cup warm milk (110° to 115°)
1/2 cup shortening
1-1/2 teaspoons salt
1 egg, beaten
3-3/4 to 4 cups all-purpose flour
Melted butter
Poppy seeds

Steps:

  • In a large bowl, dissolve yeast in water. Add 1 teaspoon of sugar; let stand for 5 minutes. Beat in milk, shortening, salt, egg and remaining sugar. Add enough flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch the dough down. Turn onto a lightly floured surface; divide into 18 pieces. Shape into balls. Place in greased muffin cups. Cover and let rise until doubled, about 30 minutes. , Brush tops with butter; sprinkle with poppy seeds. Bake at 375° for 11-13 minutes or until golden brown. Remove from pans to wire racks.

A real Polish poppy seed roll is actually baked in a loaf, then sliced and served, but here I tried to do individual rolls instead, as well as tweak a few other things. So, while not 100% authentic, these were 100% amazing.

½ cup whole milk, warmed
2 teaspoons active dry yeast
1 ½ cups all-purpose flour, divided, or more as needed
2 large egg yolks
3 tablespoons white sugar
3 tablespoons unsalted butter, melted
½ teaspoon kosher salt
⅛ teaspoon pure vanilla extract
3 tablespoons unsalted butter
¼ cup milk
¼ cup honey
3 tablespoons white sugar
2 tablespoons water
1 ½ cups poppy seeds
3 tablespoons powdered sugar, or as needed
1 teaspoon milk, or as needed

Steps:

  • Combine warm milk, yeast, and 1/2 cup of flour for dough in the bowl of a stand mixer and whisk to combine. Let sit until a "sponge" forms, about 30 minutes.
  • Add egg yolks, sugar, melted butter, salt, and vanilla extract to the "sponge" and whisk until combined. Add remaining 1 cup flour and mix using a dough hook attachment on low speed, scraping down the bowl occasionally with a spatula, until a soft, smooth, slightly elastic dough forms, about 5 minutes. Add more flour and continue to knead if the dough seems too wet and sticky.
  • Remove dough from the bowl and knead by hand, checking consistency, about 1 minute, adding a little more flour if necessary.
  • Transfer the dough to a lightly greased bowl. Toss to coat, cover, and let rise in a warm spot until doubled in size, about 2 hours.
  • While the dough is rising, add butter, milk, honey, sugar, and water to a saucepan and place over medium-high heat; bring to a simmer. Add poppy seeds and cook, stirring, until the mixture thickens up to a spreadable texture, about 5 minutes. Turn off the heat and allow to cool to room temperature before using, 20 to 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone baking mat (such as Silpat®).
  • Once the dough has risen, transfer to a lightly floured surface and use your hands to roll into a log shape, about 15 inches long. Switch to a rolling pin and roll the dough out into a 10x18-inch rectangle, about 1/8-inch thick.
  • Spread cooled filling over top, leaving about 1 1/2 inches of dough exposed on the longer side that you'll be rolling towards. Brush the exposed edge of dough very lightly with water.
  • Roll up the dough and filling toward the edge you just brushed, finishing with the seam on the bottom. Seal the ends and use your hands to shape the roll as evenly as possible. If you have lots of excess dough on either end, it can be trimmed off.
  • Cut the roll into 8 even pieces and lay flat on the prepared baking sheet. If possible, tuck any seams under the dough spiral as it's placed down. Let sit for 5 minutes.
  • Bake in the center of the preheated oven until well-browned, 20 to 25 minutes. Transfer to a cooling rack and allow to cool to room temperature.
  • While rolls are cooling, combine powdered sugar and milk in a bowl for glaze. Brush warm rolls with the glaze and serve.

Orange Sable Dough
1/3 cup poppy seeds

Steps:

  • Bring dough to room temperature. Place between two 12-by-14-inch pieces of parchment; roll out to an 8-by-12-inch rectangle. Transfer to a baking sheet; chill 30 minutes.
  • Transfer dough to a clean work surface. Remove top piece of parchment; sprinkle poppy seeds over top. Using bottom parchment to support dough, fold bottom edge to meet middle. Fold over 2 more times, forming a 1-inch-tall rectangle. Wrap; chill at least 2 hours.
  • Heat oven to 350 degrees. Line 2 baking sheets with parchment. Remove parchment from dough, and cut into 1/4-inch-thick squares. Place on baking sheets, spaced 2 inches apart.
  • Bake cookies until edges turn light golden, about 15 minutes. Transfer to a wire rack to cool. Bake or freeze remaining dough. Store in an airtight container up to 2 weeks.

These sweet spiral rolls are packed full of poppy seeds which add a delicious nutty flavour and a slightly crunchy filling.

1 cup warm water (110°F)
1 tbsp active dry yeast
1/4 cup granulated sugar, divided
1 cup milk (2%), scalded
1/2 cup salted butter, melted and divided
1 tsp salt
4 large eggs, separated
5-6 cups all-purpose flour
1 1/2 cups poppy seeds, ground
1/3 cup liquid honey
2 tbsp grated orange peel
1 tsp vanilla

Steps:

  • In the bowl of a stand mixer, combine water and 1 tsp of sugar, stirring to dissolve. Sprinkle yeast on top. Let stand until foamy, about 10 minutes.
  • Using the flat beater, stir in the milk, 2 tsp of sugar, 1/4 cup melted butter, salt, egg yolks and 1 egg whites; stir until blended.
  • Add 3 cups flour and beat thoroughly.
  • Change stand mixer attachment to a dough hook. Add remaining flour mixture. Using low speed, beat just until dough comes together and forms a ball, about 5 minutes. If dough is too sticky, gradually beat in additional flour until dough comes together and forms a ball. Using greased hands, shape dough into a ball. Transfer dough to an oiled bowl; turn dough to coat with oil. Cover with plastic wrap. Let dough rise in a warm draft-free place until doubled in volume, about 45 minutes.
  • Meanwhile, cover poppy seeds with boiling water, let stand for 1 hour, drain well. Beat 2 of the remaining egg whites to stiff peaks; set aside. Combine well drained poppy seeds with honey, orange peel and vanilla; fold in the egg whites. Set poppy seed filling aside.
  • Punch down and allow to double in volume, about 30 minutes.
  • Grease two 9x13 inch baking pans and line with parchment paper.
  • Divide dough in half. Roll half the dough into a 12x18 inch rectangle. Brush with 2 tbsp melted butter. Cover with half of the poppy seed filling, leaving a 1/2 inch boarder along the outside edge. Starting with a long side, roll up jelly-roll fashion. Cut across roll in 1-inch thick slices and arrange, cut-side-up, in one of the prepared pans. Repeat procedure with remaining dough.
  • Cover lightly and let rise in a warm place until almost doubled, about 1 hour.
  • Preheat oven to 350°F.
  • Bake for 35 - 40 minutes or until browned on top. Let cool in pan for 5 minutes, transfer to a cooling rack.
  • Brush tops with orange glaze and cool completely.

Tender, soft, sweet yeast bread swirled with a creamy homemade poppy seed filling. Growing up, my mother and aunts always made this Eastern European bread for Easter and Christmas. Looks complicated, but is easy enough to make for an Old-World treat. I like it best after the second day.

½ pound poppy seeds
¾ cup white sugar
1 tablespoon butter, melted
1 teaspoon lemon juice
½ cup hot milk
1 (.25 ounce) package active dry yeast
½ cup warm water (100 degrees F/38 degrees C)
2 tablespoons white sugar
2 cups all-purpose flour, or more if needed
½ teaspoon salt
¼ cup butter
1 egg, separated - white reserved

Steps:

  • Place poppy seeds into a food processor and process until seeds are ground, about 1 minute.
  • Mix poppy seeds with 3/4 cup sugar, 1 tablespoon melted butter, lemon juice, and hot milk in a bowl; stir to combine. Cover poppy seed filling and refrigerate while making bread (filling will set up and thicken as it chills).
  • Mix yeast with water and 2 tablespoons sugar in a small bowl. Allow to stand until the yeast forms a creamy layer.
  • Whisk flour with salt in a bowl; use a pastry cutter to cut 1/4 cup butter into the flour mixture until the mixture resembles coarse crumbs.
  • Pour yeast mixture and egg yolk into flour mixture and stir to make a soft dough.
  • Turn dough out onto a floured work surface and knead until smooth and slightly springy, about 5 minutes. If dough is too sticky, knead in more flour, about 2 tablespoons at a time.
  • Cut dough into 2 equal pieces. Roll each piece out into a 12x16-inch rectangle.
  • Spread half the poppy seed filling over each rectangle, leaving a 1-inch border. Fold the 1-inch border back over the filling on all sides and press down.
  • Pick up the shorter side of a dough rectangle and roll it like a jelly roll; repeat with second rectangle. Pinch ends together or tuck ends under to prevent filling from leaking out.
  • Line a baking sheet with parchment paper; place rolls seam sides down on the baking sheet and allow to rise in a warm place until doubled, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg white in a bowl until frothy; brush the rolls with beaten egg white.
  • Bake in preheated oven until dark golden brown on top, 30 to 40 minutes. Remove from oven and cover rolls with a clean kitchen towel until cool to keep crust soft. Cool completely before slicing.

1 pound poppy seeds (about 2-1/2 cups)
1/2 cup chopped almonds
2 tablespoons butter
3/4 cup sugar
1/2 cup chopped candied citron
1 large egg
1/4 cup chopped candied orange peel
1/4 cup honey
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
2 large egg whites
DOUGH:
2 packages (1/4 ounce each) active dry yeast
1/4 cup warm water (110° to 115°)
4 to 4-1/2 cups all-purpose flour
1 cup confectioners' sugar
1/2 teaspoon salt
3/4 cup cold butter
1/2 cup sour cream
2 large eggs, room temperature
2 large egg yolks, room temperature
2 teaspoons grated lemon zest
1 teaspoon vanilla extract
GLAZE:
1 cup confectioners' sugar
1 tablespoon lemon juice

Steps:

  • Place poppy seeds in a small saucepan and cover with water. Bring to a boil. Remove from the heat; let stand until cool. Strain through a fine mesh strainer., Place poppy seeds and almonds in a food processor; cover and process until blended. In a large skillet, melt butter. Add sugar and poppy seed mixture; cook and stir over low heat for 10 minutes. Remove from the heat. Transfer to a large bowl; cool to room temperature. , Stir in the citron, egg, orange peel, honey, lemon zest and vanilla. In a small bowl, beat egg whites on high speed until stiff peaks form. Gradually fold into poppy seed mixture; set aside., In a small bowl, dissolve yeast in warm water; let stand for 5 minutes. In a large bowl, combine 3 cups flour, confectioners' sugar and salt; cut in butter until crumbly. Add the sour cream, eggs, egg yolks, lemon zest, vanilla and yeast mixture; mix well. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Divide dough in half. Roll each portion into a 14x12-in. rectangle. Spread poppy seed filling over each rectangle to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seams to seal and tuck ends under. , Place loaves seam side down on greased baking sheets. Cover and let rise until doubled, about 45 minutes., Bake at 350° for 30-35 minutes or until golden brown. Remove from pans to wire racks. Cool for 15 minutes. Combine glaze ingredients; drizzle over loaves.

  • Butter twenty-four 1/3-cup nonstick muffin cups. Turn dough out onto floured surface; knead briefly until smooth and elastic, about 3 minutes. Divide dough into 4 equal portions. Place 1 dough portion on work surface; cover and chill remaining dough. Roll out 1 dough portion on floured surface to 13x11-inch rectangle (about 1/8 inch thick). Cut rectangle lengthwise into 6 strips, each scant 2 inches wide. Stack strips atop one another, forming 6 layers and pressing slightly to adhere. Cut strips crosswise into 6 equal stacks, each about 2 inches long. Place 1 dough stack, 1 cut side down, into each muffin cup (dough will fan out slightly and fill muffin cups as dough rises). Bake until rolls are golden brown, switching top and bottom baking sheets halfway through baking, about 25 minutes. Transfer pans to rack and cool rolls 5 minutes. Remove rolls from pans and cool on racks. Serve warm or at room temperature. (Can be prepared 1 week ahead. Wrap in aluminum foil and freeze. If desired, rewarm thawed wrapped rolls in 350°F oven about 10 minutes.).
