Popovers image

A popular restaurant was noted for the giant popovers they served with their meals. I decided to do the same for special birthdays and other occasions. These popovers soon became family favorites, and they've been one of my specialties for 40 years. -Emma Magielda, Amsterdam, New York

1/2 cup milk, room temperature
1 egg, room temperature
1/2 cup all-purpose flour
1/4 teaspoon salt

Steps:

  • In a bowl, beat all ingredients just until smooth. Pour into four greased muffin cups. Fill the remaining muffin cups two thirds full with water. , Bake at 450° for 15 minutes. Reduce heat to 350° (do not open door). Bake 20 minutes longer or until deep golden brown (do not underbake).

These light, easy puff muffins are equally delightful as breakfast or dessert. For little kids: Let them crack the eggs and help stir the batter. For big kids: Let them measure and stir the ingredients for the popovers and measure and cook the berries.

Baking spray with flour
1 cup whole milk
3/4 cup all-purpose flour
3 large eggs, lightly beaten
1 teaspoon pure vanilla extract
Kosher salt
3 tablespoons unsalted butter, melted
1/4 teaspoon baking powder
1 cup frozen mixed berries
2 tablespoons granulated sugar* (See Cook's Note)
1 tablespoon confectioners' sugar, for dusting, optional* (See Cook's Note)

Steps:

  • Preheat the oven to 400 degrees F. Spray a 12-cup muffin tin generously with baking spray and set aside.
  • Whisk the milk, flour, eggs, vanilla and 1/2 teaspoon salt in a medium bowl until combined. Drizzle in the melted butter while whisking until combined, then let the batter stand for 5 minutes. Whisk in the baking powder, then divide the batter evenly among the muffin cups (a scant 1/4 cup per muffin). Bake until the popovers are puffed and browned around the edges, 20 to 25 minutes, rotating the pan halfway through.
  • While the popovers are baking, bring the berries, 1/2 cup water and granulated sugar to a simmer in a small saucepan over medium heat. Cook until the berries are juicy and soft and the liquid is reduced and thickened, about 10 minutes. Remove from the heat and cover to keep warm.
  • When the popovers are done, turn them out of the pan, using a small spatula if necessary. Arrange 2 popovers on each of six plates and garnish with a dollop of the sauce and a dusting of confectioners' sugar if using.

This recipe is for traditional popovers. They can be served plain, but my family prefers them with raspberry butter.

1 cup all-purpose flour
¼ teaspoon salt
3 eggs
1 cup milk
1 tablespoon unsalted butter, melted
2 tablespoons unsalted butter, chilled

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Spray a popover pan with nonstick cooking spray. Place pan on center rack of oven and preheat for 2 minutes.
  • Blend flour, salt, eggs, milk, and melted butter until it looks like heavy cream, about 1 to 2 minutes.
  • Cut chilled butter into 6 even pieces. Place 1 piece of butter in each cup and place pan back in oven until butter is bubbly (about 1 minute).
  • Fill each cup half full with batter and bake 20 minutes. Reduce heat to 325 degrees F (165 degrees C) and bake for another 15 to 20 minutes.

2 large eggs
1 cup whole milk
1 tablespoon butter, melted
1 cup all-purpose flour

Steps:

  • Using 1/2 teaspoon shortening for each cup, grease the bottom and sides of six 6-oz. custard cups or the cups of popover pan. If using custard cups, place on a 15x10x1-in. baking pan. , In a small bowl, beat eggs; blend in milk and butter. Beat in flour and salt until smooth (do not overbeat). , Fill cups half full. 1 cup all-purpose flour

  • Preheat oven to 450 degrees. Lightly grease and flour a popover tin.
  • In a large bowl, whisk together flour and salt. In a separate medium bowl, whisk together eggs, milk, and 1 tablespoon melted butter. Pour over flour mixture, and fold until just blended.
  • Fill the popover cups two-thirds to three-quarters full.

1 1/2 cups milk
3/4 teaspoon salt
1 1/2 cups all purpose flour
3 tablespoons melted butter

Steps:

  • Warm the eggs by placing them UN-CRACKED in a medium bowl and cover with hot water (as hot as your tap will go). Let them sit for 10 minutes.
  • Preheat the oven to 450°F and move the oven rack to a low position (to prepare for huge popovers!). Grease the popover pan thoroughly inside each cup as well as around the top edges.
  • With your whisk, beat together the eggs, milk and salt until they are combined. The yolks should be completely blended in.
  • Add the flour and whisk until the mixture is frothy and all large lumps are gone. Then quickly stir in the melted butter.
  • Divide the batter between the prepared popover cups. They should be about 3/4 of the way full.
  • Bake the popovers for 20 minutes and then reduce the heat to 350°F. Bake for another 10 or 15 minutes. The popovers will be very golden brown.
  • My preference is to serve immediately and enjoy them warm!

1 Tbsp butter
1 c sifted flour
1/2 tsp salt

Steps:

  • 1. Preheat oven to 400º Thoroughly grease muffin tin or popover pans
  • 2. Place all ingredients in food processor Run on puree for approximately 30 seconds until smooth.
  • 3. Fill each muffin cup 1/2 full of dough. Bake for 40 minutes. Remove from oven and pierce top of each popover with skewer to release steam. Turn off oven and return pan to oven for approximately 5 minutes.
  • 4. May be infuzed with any kind of custard, whip cream or ice cream after allowed to cool.

My Dad and I loved these wonderful puffs of delight. After many years of adjusting this recipe I came up with this. A miniature version. This is in memory of my Dad. Miss you Dad....

3 mini muffin pans
1 c sifted unbleached all-purpose flour
1/2 tsp salt
1 c milk
1 Tbsp butter, melted
2 eggs, slightly beaten
1 tsp vanilla extract

Steps:

  • 1. Get all ingredients together.
  • 2. Preheat oven to 450 degrees. Generously butter the muffin tins, and set aside.
  • 3. In a mixing bowl, stir together the sifted flour and the salt. Wisk in the milk, melted butter, and slightly beaten eggs. Wisk until well blended. The batter should have the consistency of thick cream. Set aside. Give a stir just prior to filling tins.
  • 4. When the oven is preheated place buttered tins into the center of the oven, about 2 minutes. Watch carefully, you don't want the butter to burn. Remove tins after about 2 minutes and fill with batter no more than two-thirds full.
  • 5. Bake in the center of the oven for 15 minutes. Lower oven to 350 degrees and continue to bake 15-20 more minutes or until well risen and rich golden brown. Do not open the oven door. Even if they look done. Brown is good, golden brown is much better. Even if they look like they are done and you still have 10 minutes on the clock. Let them cook. If you don't they will have an eggy texture.
  • 6. You can make it your own. Apple butter or cinnamon butter go great. Instead of vanilla use almond extract. Drizzle with pure maple syrup or honey. Add some shredded cheese. You will just love these, and they are worth the effort. Enjoy.
