I found this recipe on Pinterest and had to try it. This is an easy dish with alot of flavor. Enjoy!

Number Of Ingredients 6

1 1/2 lbs boneless skinless chicken thighs
1/2 cup Dijon mustard
1/4 cup maple syrup
1 tablespoon rice wine vinegar
salt and pepper
rosemary

Steps:

  • Preheat oven to 450 degrees.
  • Mix together dijon mustard, maple syrup and rice wine vinegar.
  • Place chicken in an oven proof baking dish and sprinkle with Salt and Pepper. Pour the mustard mixture over them, turning the thighs in the mixture so they are fully coated.
  • Bake for 40 minutes or until the meat is cooked (155 degrees). Halfway through baste the chicken with the sauce.
  • Let the chicken rest for 5 minutes before serving. Then sprinkle with fresh rosemary. Enjoy!

My mom used to make this for all of us and I still make it today. It is one of our favorites and it's cheep to make. I don't know for sure how long it takes to make--times are a guess.

1 lb hamburger meat
1 egg, beaten
cracker, crumbled finely
salt and pepper
oil

Steps:

  • Heat a small amount of oil in your pan for frying.
  • Mix up meat and salt and pepper form into patties.
  • Dip in the egg.
  • Roll in cracker crumbs.
  • Place in the oil and cook until needing to be flipped then flip and finish until desired doneness.
  • Can be topped with mushroom soup for gravy or you can make a milk gravy.
  • Other substitutions are adding garlic powder or onion soup mix or Worcestershire sauce.

Making due with what is in my pantry, meeting the cheesy taste buds of my hungry family. Also, satisfies the 'starving people' staying after service for a church business meeting or just sharing a 'family' time together.

1 large chicken breasts, boneless and skinless
2 large yellow onions
4 Tbsp evoo
1 box rigatoni pasta, uncooked
1 can(s) 10 oz. 90% low fat campbell's cream of chicken soup
1 can(s) 15 oz campbells cream of chicken soup
2 tsp salt and fresh ground pepper to taste
16 oz milk, 2%
4 Tbsp parsley flakes
POOR MAN'S CHICKEN ALFREDO

Steps:

  • 1. DICE AND SAUTE onions in large iron fry pan with EVOO REMOVE
  • 2. CUBE AND SAUTE chicken breast using the same fry pan (adding additional EVOO, if necessary)
  • 3. BOIL pasta to taste
  • 4. MIX 2% milk and BOTH cans of cream of chicken soup to pot, stirring until clumps are gone and soup is hot
  • 5. GENTLY MIX Together all ingredients, EXCEPT THE SOUP (I use my hands starting at the bottom of the bowl so as not to tear up pasta), in a 4 quart Anchor glass dish (optional): ADD the COOKED pasta, sauted onion, chicken, salt and pepper, parsley, Parmesan Cheese POUR hot soup back and forth accross the top.
  • 6. Preheat oven to 325. Bake for 1/2 hour. Enjoy the fragrance of a country kitchen
  • 7. OPTIONS: Add frozen peas for color and to satisfy veggie need. Serve with fresh baked biscuits

1/2 c dijon mustard or dijon honey mustard
1/4 c maple syrup
1 Tbsp rice wine vinegar
6 chicken thighs (1-1/2 pds)
salt and pepper

Steps:

  • 1. Preheat oven to 450 degrees.
  • 2. Mix Dijon mustard, maple syrup and rice wine vinegar together in a bowl.
  • 3. Place chicken thighs in oven proof dish salt and pepper chicken. I always spray my dish with cooking spray to help in cleaning later or line with foil saves you a lot of clean up.
  • 4. Pour mustard, maple, vinegar mix over the the thighs. Turning the thighs over so they are fully coated.
  • 5. Put in oven and bake for 40 minutes or until a meat thermometer reads 155 degrees. I find that a meat thermometer is essential in cooking because it allows me to check for doneness without cutting into the meat and losing its precious juices.
  • 6. Let the chicken rest for 5 minutes before serving.
  • 7. Plate the chicken , making sure to spoon some sauce over the top. Sprinkle with sliced green onions, or rosemary or other fresh herbs of your choice.
  • 8. I serve with jasmine Thai rice.. and steamed broccoli .. It is every bit as good as it sounds and looks.
  • 9. Going to try this on some pork chops and see how it goes.. bet it will b just as good.

1 - large tomato
1/2 - finely diced sweet onion
1 - pot of coffee
1 tablespoon(s) vanilla
1 tablespoon(s) cinnamon
1/3 cup(s) molasses
1/4 cup(s) sweetener (your choice: sugar, honey, karo syrup, brown sugar, fructos, splenda, even maple syrup!)
1 - full pot of cooked rice
2 pound(s) (or more) of chicken (how many are you feeding?)

Steps:

  • Preheat oven to 375 degrees. Place chicken in a deep roasting pan (at least 2 1/2 inches)with a lid.
  • cover the meat with: vanilla, cinnimon, molasses, sweetner, onion, finely diced tomato, and enough coffee to cover the meat.
  • Cover and place in oven for two hours. (now's a good time to get your rice going)
  • Remove meat from "sauce", let cool, de-bone and skin.
  • Shred cooled meat with fork or fingers (if the meat is cooked well enough this should be easy)
  • mix shredded meat back into "sauce" mixture, and re-heat over stovetop or in microwave.
  • Serve over rice.
