Steps:
- Bring water to a boil in a medium saucepan. Stir in rice and cover. Remove from heat and let stand 5 minutes. Fluff with a fork and drain any excess water.
- Heat oil in a large skillet over medium heat. Stir in rice and soy sauce; heat briefly then transfer rice to a bowl.
- Scramble the eggs in the same skillet, then stir in rice. Stir in ginger and green onions; heat through and serve.

SLOW COOKER POOR MAN'S STEW
A budget friendly meal that costs less than $2 per serving! This recipe is Whole30 and Paleo compatible, and you can make it in the Slow Cooker, Instant Pot, OR Dutch Oven!

- Heat a medium sized skillet over medium heat. Add the beef to the skillet, using a spatula to turn the meat and break it apart as it cooks. Transfer the cooked meat to the slow cooker.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your slow cooker and use a large spoon to mix everything together. Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours. If using frozen peas, add them in the last 30-45 minutes so that they cook through but aren't mushy. Test to make sure the vegetables are cooked through and tender, then season to taste with salt and pepper and serve.
- Set your Instant Pot to Sauté mode. Add the beef and cook for about 5 minutes, breaking it apart and turning with a spatula as it cooks.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your Instant Pot. Cover and turn to High Pressure for 15 minutes. Allow for a Natural Pressure Release (do nothing and allow the pressure to naturally dissipate) for at least 10 minutes, then turn the steam release valve. Carefully open the Instant Pot.
- If using frozen peas, stir them into the stew now. Set the Instant Pot back to Saute mode and cook together, stirring occasionally, for about 10 minutes.
- Season to taste with salt and pepper and serve.
- Place your dutch oven on the stovestop and turn the heat on the burner to medium. Add the ground beef. Cook for about 5-6 minutes, using a spatula to turn the meat and break the pieces apart as it cooks.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your dutch oven. Stir together. Bring to boil, then lower the heat, cover, and simmer for about 45 minutes, opening and stirring occasionally.
- If using frozen peas, stir them into the stew the last 10-15 minutes.
- Season to taste with salt and pepper and serve.

LAZY MAN'S CABBAGE ROLL
We LOVE cabbage rolls, sadly, I don't always have the time to make them the way Grandma always made them. This is the next best thing to them without all the work of making individual cabbage rolls.

- Preheat oven to 350°F.
- Chop cabbage into large pieces.
- Put one layer into greased baking dish.
- You can use just hamburger if you prefer. Brown meat and onion.
- Add salt and pepper if desired.
- Mix rice into meat.
- Put meat mixture on top of cabbage layer.
- Mix the soup and water together and then pour on the top.
- Bake at 350F for at least 1 hour.

POOR MANS GROUND BEEF PEPPER STEAK
Great on Pinneapple rice ! I Use brown rice and pinneapple chunks in my rice cooker using all the juice from can and adding water to reach desired amount and sprikle in a little red pepper. OOPS, I think thats another recipe ! LOL

- 1. Mix ground beef, salt and pepper in bowl.
- 2. Shape into 8 patties.
- 3. Brown quickly on both sides in butter in skillet.
- 4. Remove patties to hold platter.
- 5. Combine green peppers, onion, garlic and soy sauce in skillet.
- 6. Cook, stirring constantly for 2 to 3 minutes.
- 7. Arrange on platter with patties.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
- In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

- Drain Meat.
- Add sauce, mushrooms, carrots, seasonings, rice & water.
- Bring to a slight boil.

- In a large skillet, gently saute all the veggies, garlic, and the herbs, stirring occasionally, until your vegetables are tender and the onions are translucent. It will take about 6-8 minutes. Transfer the cooked veggies into a large bowl and allow them to cool completely.
- Once they’ve cooled, add in the beef and peas. Here is your chance to play with your food! Get into the bowl with your hands, really dig in, and start kneading everything together, including salt and pepper and half of the beaten egg, reserving the other half for the pastry crust. Make sure everything is good and mixed up and evenly incorporated.
- Shape your beef mixture into a log (as close as you can get) and place it in the center of the rolled out pastry sheet, finish shaping into a log if necessary, and brush the edges with the reserved egg. Roll it up, tucking the ends inside like a giant burrito, brush the sealed pastry log with beaten egg everywhere you can see, place it on a baking sheet seam down, and lightly brush the top with the remainder of the beaten egg.
