POOR MAN'S POTATOES "PAPAS A LO POBRE"



Poor Man's Potatoes

One of our favorite Malaga style potato recipes has to be papas a lo pobre! Similar to the home fries we grew up eating at brunch in the United States, these thinly sliced potatoes are cooked with onion and green pepper to give it flavor.

Number Of Ingredients 7

4-6 medium sized potatoes
2 onions
2 green peppers
3 cloves of garlic
olive oil
salt
pepper

Steps:

  • Wash and peel your potatoes and chop them into thin slices.
  • Chop up the onions, green peppers, and garlic
  • In a large skillet add a good amount of olive oil and cook the potatoes over low heat until they begin to soften. Make sure to continue moving the potatoes carefully so they don't fry.
  • When you see that the potatoes begin to soften, add the green peppers, onions and garlic
  • Continue cooking until the potatoes, peppers and onions are all very soft.
  • Drain the excess olive oil
  • Add salt and pepper to taste
  • Serve and enjoy as a side dish!

Steps:

  • Fry bacon until crisp; drain well and crumble. Cook onion in 2 tablespoons bacon fat until soft but not browned. Add potatoes and milk; heat. Taste to correct seasonings. Sprinkle crumbled bacon in each bowl as served.

With artichokes, olives and roast peppers these loaded Patatas a lo Pobre are a flavoursome spin on a traditional Spanish dish.

½ kilogram baby potatoes (I chose Baby Red and Baby Creams)
¼ cup good quality olive oil
1 red onion (finely chopped)
½ teaspoon smoked paprika
1 teaspoon dried oregano
¼ cup roasted red peppers from a jar (preferably in oil)
½ cup artichoke hearts (jarred or canned) (sliced )
⅓ cup Kalamata olives (pitted)
¼ cup vegetable stock (or vegan chicken-style stock)
pinch sea salt
crack black pepper
¼ cup parsley (finely chopped)

Steps:

  • Cut the potatoes in to halves
  • Put the potatoes in a large pot and cover them with cold water by at least 2 inches. Turn on the heat up high and bring the water to a boil. Reduce the heat to low and continue to cook the potatoes for 7-8 minutes or until almost cooked through. Gently drain and set aside.
  • In a heavy-bottomed pan, heat the olive oil on low.
  • Add the onion and cook for 1 minute and then stir in the paprika and oregano.
  • Place the potatoes, cut side down, in the pan.
  • Season the potatoes with sea salt and black pepper
  • Sprinkle the sliced peppers over the potato and then the artichoke hearts.
  • Throw in the pitted olives and pour in the stock and cook on low for 20 minutes.
  • The dish is ready when the potatoes can be pierced with a fork but still hold their shape. Sprinkle with fresh parsley to serve.

6 cups chicken broth
6 green onions
30 oz frozen shredded hash browns
1 teaspoon salt
1/2 teaspoon black pepper
1 cup heavy cream
1 cup grated cheddar cheese
**Extra green onions and grated cheddar cheese for topping

Steps:

  • Pour chicken broth into pressure cooker, then add green onions, hash browns, salt and pepper.
  • Lock lid and set to high pressure for 5 minutes.
  • When time is up, let sit for 5 minutes then release all remaining pressure.
  • Turn onto sauté or simmer setting and stir in heavy cream.
  • Sprinkle in cheddar cheese, stirring constantly to break up any chunks. Continue stirring until all cheese is melted and soup has thickened up.
  • Serve sprinkled with extra cheddar cheese and sliced green onions.

I serve this soup on a blustery winter's night to warm the soul and body, but most of all, we use it whenever someone is feeling ill in our house. I find that it is easier on the tummy than chicken noodle soup and despite how weird it sounds, it tastes fantastic. Couldn't be easier, either. Try it, I think you will be pleasantly surprised.

1 cup yellow cornmeal (not a cornmeal mix) or 1 cup white cornmeal (not a cornmeal mix)
4 cups chicken broth (homemade stock is preferable but low sodium low fat canned is fine)

Steps:

  • In a medium stockpot, bring chicken broth to a simmer.
  • Slowly stir in cornmeal and simmer, stirring often for about 30 minutes or until smooth with a creamy texture.
  • This also makes a great soup-base for other soups. You can make it as thin or as thick as you like by adjusting the amount of cornmeal.
  • This soup is bland until you add your favorite spices or seasonings. We start with it like this -- perfect for sick days.
