COMFORTING POOR MAN'S SHEPHERD'S PIE

Comforting Poor Man's Shepherd's Pie image

I got this recipe from a friend of mine years and years ago. It's one of my DH's favorites. It's been a while since I made it though, so I'm guessing at the time to bake.

Provided by Color Guard Mom

Categories     Potato

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 3

10 potatoes (for mashing)
1 lb ground beef
1 (10 ounce) can creamed corn

Steps:

  • Make mashed potatoes using the 10 potatoes. I boiled my potatoes, drain and then mash wtih butter and milk to a smooth consistency.
  • While the potatoes are cooking, brown the ground beef until thoroughly cooked. Drain and rinse off grease.
  • Grease a casserole or baking dish with butter or spray with Pam.
  • Once potatoes are mashed, line the bottom and sides of the casserole dish with a little under 2/3 of the potatoes. Make it look like a crust.
  • Mix together the ground beef and creamed corn. Pour into the casserole as the filling.
  • Top the filling with the remaining mashed potatoes, spreading to the sides and having it meet the "crust".
  • Bake in a 400 degree oven until the top is lightly browned - about 30 to 45 minutes.

GRANDMA'S POOR MAN'S PIE

Grandma's Poor Man's Pie image

This is an even simpler recipe that I grew up with (I've looked at the other recipes for Poor Man's Pie and Sugar Cream Pie - the other name for this type pie.) My grandmother's recipe was a 2-2/3-3 formula. It was called Poor Man's Pie because farmers always had the ingredients handy.

Categories     Dessert     Quick & Easy     Phyllo/Puff Pastry Dough

Number Of Ingredients 8

One 9-inch pie crust
1/2 cup granulated sugar
1/2 cup light brown sugar
1/4 cup all-purpose flour
Dash of salt
12 ounces of evaporated milk
2 Tbsp unsalted butter, cut into small pieces
1/4 tsp cinnamon

Steps:

  • Preheat the oven to 375°F (160°C). Put the sugars, flour, and salt into the crust and gently mix by hand, ensuring that there are no clumps of flour. Drizzle the milk over the sugar mixture, but do not mix the milk with the sugar. You can add vanilla or almond flavoring if desired (instead of cinnamon). Dot the top of the pie with the pieces of butter and sprinkle the cinnamon over the top. Bake for 45 to 50 minutes. Remove from the oven and allow to set for at least 30 minutes before serving.

I searched this out originally for a friend who wanted to recreate a pie from her childhood. Now I'm posting it for a request on the boards. I haven't made it, so let me know what you think about it.
