Originally known as 'Pouding Chomeur,' this is a favorite French-Canadian dessert that originates from the Province of Quebec. And for good reason - it is quick, easy, and oh so delicious!

1 ½ cups all-purpose flour
1 tablespoon baking powder
½ cup white sugar
¼ cup vegetable oil
1 egg
1 cup milk
2 cups brown sugar
1 ½ cups hot water
2 tablespoons butter, melted

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Whisk the flour and baking powder together in a small bowl.
  • Beat the white sugar, oil, and egg together in a bowl until smooth. Stir in the flour mixture alternately with the milk. Pour into a 9-inch square pan. Dissolve the brown sugar in the hot water, then pour stir in the melted butter. Drizzle the syrup over the pudding.
  • Bake in the preheated oven until the pudding firms and becomes golden brown on top, about 40 minutes.

These poor man's cookies are an old family recipe - spiced bar cookies with plump raisins and chopped walnuts.

2¼ cups water
1½ cups raisins
8 tablespoons vegetable shortening
3 cups all-purpose flour
1½ cups sugar
1½ teaspoons baking soda
¾ teaspoons baking powder
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
2 eggs (slightly beaten)
½ cup coarsely chopped walnuts
1 cup powdered sugar
3 tablespoons warm water

Steps:

  • Preheat the oven to 375 degrees F. Grease a 9x13 baking pan.
  • Combine water, raisins, and shortening in a medium saucepan. Boil over medium heat, covered, for 20 minutes. Remove from heat, remove the lid, and let cool for 10 minutes.
  • While the raisin mixture is boiling, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg and cloves in a large bowl.
  • Pour the slightly cooled raisin mixture over the dry ingredients and stir with a wooden spoon until mostly combined and moistened (the batter at this point will have the consistency of a paste). Add the beaten eggs and again stir with a spoon, until thoroughly combined. Stir in the chopped walnuts.
  • Spread the batter into the prepared pan and bake for 25 to 30 minutes, until deeply browned and a toothpick inserted into the center comes out mostly clean with some moist crumbs attached.
  • While the cookies are baking, prepare the glaze by whisking together the powdered sugar and warm water in a small bowl. As soon as you take the pan out of the oven, drizzle the glaze over the cookies and quickly spread into an even layer.
  • Cool to room temperature before serving. Store leftovers in an airtight container at room temperature for up to 4 days.

In the 1930s, producers of a popular radio program called Jake and Lena invited listeners to write in for this recipe. My mother changed the name from Jake and Lena Cookies to Poor Man's Cookies because they contained no eggs, milk or nuts. Despite the name, the cookies are rich in taste!

1 cup shortening
1 cup packed brown sugar
1/2 cup sugar
1/4 cup water
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoons salt
2 cups rolled oats

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Beat in water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in oats., Drop dough by tablespoonfuls onto greased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Allow to stand 2 minutes before removing to a wire rack to cool.

2 cups sifted all-purpose flour
1 ½ teaspoons baking soda
½ teaspoon salt
1 cup white sugar
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
1 ½ cups raisins
1 cup water
½ cup cold water
¼ cup shortening

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • Sift together the flour, baking soda and salt. Add sugar, cinnamon, nutmeg, and allspice; set aside.
  • In a saucepan, combine raisins and 1 cup water. Bring to a boil, then reduce heat and simmer for 15 minutes. Remove from heat and stir in 1/2 cup cold water and shortening.
  • Add raisin mixture to flour mixture; stir until well blended. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes.

1/4 cup salt
1 pound halibut
1/2 cup butter ((sweet cream works great))
1 lemon

Steps:

  • In a medium to large pot bring 2 quarts of water, sugar, and salt to a boil.
  • Cut halibut into 2-3 large pieces (so it cooks faster) and add to water.
  • Boil for about 10 minutes or until halibut is nice and flaky.
  • In the meantime, melt butter in a pot, but do not boil.
  • Remove halibut from water, squeeze a little fresh lemon on it and serve with melted butter (I like to completely submerge my halibut in the melted butter, much like you would do with lobster).

3 eggs
1 cup sugar
1 cup old-fashioned oats
3/4 cup dark corn syrup
1/2 cup sweetened shredded coconut
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 unbaked pastry shell (9 inches)
Whipped topping and toasted sweetened shredded coconut, optional

Steps:

  • In a large bowl, combine the first seven ingredients. Pour into pastry shell. , Bake at 375° for 15 minutes; reduce heat to 350°. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack. Garnish with whipped topping and toasted coconut if desired.

1 cup shortening (Crisco)
1 -2 lb raisins (and or 1 lb. diced dates)
1 teaspoon salt
2 cups boiling water (1/2 cup brandy can be used)
4 cups flour
1 teaspoon baking soda
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup walnuts (coarsely chopped)

Steps:

  • Boil sugar, shortening, raisins, salt, and water (do not boil dates). Add dry ingredients, dates and walnuts to the boiled mixture. Bake at 325* in (2) 8"x8"x2" pans or in (1) 13"x9"x2" pan for 60-75 minutes. Allow to cool and divide into 4 "loaves". Wrap well and store. Serve sliced and plain or with hard sauce. This cake will stay moist for many months, but keeps best when moistened with rum or brandy.
