Steps:
- Preheat the oven to 375 degrees F. Grease a 9x13 baking pan.
- Combine water, raisins, and shortening in a medium saucepan. Boil over medium heat, covered, for 20 minutes. Remove from heat, remove the lid, and let cool for 10 minutes.
- While the raisin mixture is boiling, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg and cloves in a large bowl.
- Pour the slightly cooled raisin mixture over the dry ingredients and stir with a wooden spoon until mostly combined and moistened (the batter at this point will have the consistency of a paste). Add the beaten eggs and again stir with a spoon, until thoroughly combined. Stir in the chopped walnuts.
- Spread the batter into the prepared pan and bake for 25 to 30 minutes, until deeply browned and a toothpick inserted into the center comes out mostly clean with some moist crumbs attached.
- While the cookies are baking, prepare the glaze by whisking together the powdered sugar and warm water in a small bowl. As soon as you take the pan out of the oven, drizzle the glaze over the cookies and quickly spread into an even layer.
- Cool to room temperature before serving. Store leftovers in an airtight container at room temperature for up to 4 days.

POOR MAN'S COOKIES
In the 1930s, producers of a popular radio program called Jake and Lena invited listeners to write in for this recipe. My mother changed the name from Jake and Lena Cookies to Poor Man's Cookies because they contained no eggs, milk or nuts. Despite the name, the cookies are rich in taste!

POOR MAN'S LOBSTER
This way of preparing Halibut makes it taste just like lobster, especially when dipped in melted butter. The texture is smooth and tender.

Steps:
- In a medium to large pot bring 2 quarts of water, sugar, and salt to a boil.
- Cut halibut into 2-3 large pieces (so it cooks faster) and add to water.
- Boil for about 10 minutes or until halibut is nice and flaky.
- In the meantime, melt butter in a pot, but do not boil.
- Remove halibut from water, squeeze a little fresh lemon on it and serve with melted butter (I like to completely submerge my halibut in the melted butter, much like you would do with lobster).

POOR MAN'S PECAN PIE
THIS IS a recipe my mother-in-law shared with me several years ago. It's easy to make, and most of the ingredients are in everybody's cupboard. And it does really taste like pecan pie. We have it quite often, but it's tradition to have this pie on the menu during the holidays. -Fay Harrington, Seneca, Missouri
