Steps:
- Wash nopalitos, watch for small thorns, use potato peeler to smooth over and remove sprouting thorns. Cut nopalitos into small cubes, wash again, drain. Set aside.
- Brown steak in oil after you have cut it into 1/2 inch cubes. Use large skillet. Remove cubes with slotted spoon as they brown. Add onions, green peppers and garlic; saute stirring often, until tender. Add nopalitos to mixture, cook 3 minutes. Sprinkle chili powder over mixture; cook and stir one minute.
- Return meat to skillet; add tomatoes, water, salt and oregano; bring to boiling. Lower heat; cover; simmer 30 minutes, stirring occasionally.
- Drain beans, reserving about half the liquid. Add beans and reserved liquid to skillet; simmer, uncovered, 15 minutes.

- Heat oil in a skillet over medium heat. Add potatoes and carrots; cook and stir until potatoes are tender, about 10 minutes.
- Stir cactus, chili powder, garlic, fenugreek seeds, coriander, and cumin into the potato mixture. Cook, stirring frequently, until cactus is softened, about 5 minutes. Add pinto beans; cook, stirring gently, until just heated through, about 3 minutes.

- Combine ground beef and onion in a large skillet over medium heat; cook and stir until beef is browned, about 5 minutes.
- Transfer beef and onion to a slow cooker. Stir in diced tomatoes, black beans, corn, nopales, tomato paste, chili powder, sugar, chipotle pepper, garlic powder, cumin, salt, and pepper.
- Cook on Low until flavors combine, about 4 hours.

PONDFROGS PRICKLY PEAR CACTUS CHILI
who'da thought prickly pear cactus plants would be delicious! I tried cactus chili at a restaurant and loved it. they taste a bit like green beans. I tried to duplicate it at home and think I came pretty close. my 14 yr old son loves it!I I can't find fresh cactus (flat pad nopales) in my area but I did find some already prepared in a jar at a grocery store in the mexican food isle. if you use fresh you need to clean/cook them first (you can google how to prepare fresh cactus). this chili is not very spicy so if you like it hot use more chili powder. I like v8 vegetable juice and fresh tomatoes but can be made with tomato juice and diced canned tomatoes. it's a very simple recipe that can be altered easily for taste preferences. I am thinking I may try it with ground turkey or chicken sometime. I think it would also be good with no meat for a vegetarian meal. freezes well. makes a large pot.

- brown ground beef with diced onion in pan. drain fat and place meat into large pot. if using jarred cactus drain/dice into bite-sized pieces and add to cooked meat. add diced fresh tomatoes (or can of diced tomatoes). add all other ingredients. stir well. simmer on stovetop or oven set at 325 degrees for a couple of hours stirring frequently. can also be placed in crockpot set at low and cooked until ready. if using fresh vegetables allow for additional cooking time.
