Steps:
- Peel the potatoes, and cut them into batons that are about the length and width of your index finger.
- Preheat a deep pot of oil to 325 degrees F.
- For the first fry, deep fry potatoes in the oil for 5 to 6 minutes, or until a light golden color. Do not over load fryer. Fry in 3 batches if necessary. Remove the potatoes using a slotted spoon, and allow them to cool to room temperature.
- Raise the temperature of the oil to 375 degrees F.
- For the second fry, deep-fry the potatoes for 2 minutes, or until crispy. Remove potatoes, and transfer into a colander or bowl. While still hot, salt the potatoes.
- Serve with favorite dipping sauce.

Baked Pommes Frites (french fries or chips) are crispy on the outside and tender on the inside and make a great combo to those burgers on the grill.

Steps:
- Preheat oven to 450 degrees F (232 degrees C)
- Wash and scrub potatoes well.
- Cut potatoes in 1/4 inch lengthwise slices then in long slices (Do not peel as the skin makes them more crispy and adds flavor and nutrients)
- Submerse potatoes into cold water and rinse about 3 times until water runs clear. (If you plan on cooking potatoes later then keep in cold water and put into fridge until ready to bake) This step keeps the potatoes from turning brown due to oxidation.
- Drain and dry potatoes very well in towel
- In large bowl add potatoes, olive oil and salt and toss to coat.
- Line baking sheet with parchment paper or aluminum foil to reduce mess and clean up time and place potatoes in a single layer on baking sheet.
- Place baking sheet of potatoes into oven and cook for about 60 minutes or until golden brown. (Toss potatoes gently every 10-15 minutes so it browns evenly.)
- Serve Baked french fries plain or with ketchup, malted vinegar or our special zesty mayonnaise dip on the side. Enjoy!

POMMES FRITES - TRADITIONAL BELGIAN FRIES
Steps:
- Make sure after your potatoes are peeled and cut that they are dried.
- Heat up your oil to 320 degrees
- Add in your potatoes, when the sound changes to what sounds like a babbling brook, take them out. This should take about 5 to 7 minutes.
- Put potatoes in colander to cool for a couple hours. Toss a few times to get air around them.
- DO NOT EAT THEM YET.
- Once completely cooled, heat your oil up to 350 degrees
- Add in the cooled potatoes.
- Again wait for the sound to change this won't take as long the second time.
- Drain, sprinkle with some salt and dig in, dip them into your homemade mayonnaise for a real traditional Belgian frites experience!

- 1. Preheat the air fryer to 380°F 2. Remove the French Fries from the bag and empty into a medium to large bowl 3. Pour 1 teaspoon olive oil over the top of the French Fries and toss the fries to coat them with the oil, then sprinkle with salt 4. Place an even layer of fries into the air fryer tray 5. Cook the fries at 380°F for 10 minutes 6. - Trim ends and sides of potatoes to form a rectangle. Cut potatoes into 1/4-inch sticks about 3 inches long. Put potatoes in bowl and cover with water. Heat about 3 inches of oil in large heavy pot to 325 degrees. Drain potatoes and dry thoroughly. Drop potatoes, about 1 cup at a time, into hot oil and fry for 5 to 6 minutes until tender and just starting to turn brown. Remove from oil with slotted spoon and drain on paper towels. Let cool. Heat oil to 375 degrees. Fry potatoes in batches as before for about 1 to 2 minutes until crisp and brown. Remove from oil with slotted spoon and drain on paper towels. Sprinkle with salt, if desired and serve immediately.

- Place oil into a large 3-5 quart pot over medium heat with a deep frying/candy thermometer attached. Heat oil to 375 degrees F. Open French Fry bag and have a deep frying sieve ready to assist getting the French fries in and out of the oil. Have a large plate nearby lined with a paper towel to drain the French Fries alone with a large bowl to toss the French Fries with the Pommes Frites seasoning.
- To prepare the Pommes Frites seasoning, place both Parmesan cheeses, garlic, Cajun seasoning, parsley and salt into a medium bowl. Stir to combine and set aside.
- Prepare the Cajun Remoulade while oil is coming up to temperature. Place Thousand Island Dressing, mayonnaise, Worcestershire sauce, garlic, Dijon, Creole Seasoning, lemon juice, paprika, salt and pepper into a large mixing bowl. Stir to combine. Place into a serving dish that will be used to dip the Pommes Frites in.
- When oil has come up to temperature, carefully place fries into oil, in 2 batches. Use sieve to stir French fries while they cook. Cook fries for 3-4 minutes, until crisp and starting to turn golden brown. Carefully remove fries with sieve directly onto the paper towel lined plate. Let drain for 30 seconds then transfer to the large bowl. Immediately toss cheese mixture over fries and stir to coat. Transfer Pommes Frites to a serving dish lined with parchment paper. Serve with Cajun Remoulade.
