POMEGRANATE BALSAMIC GLAZED RIBS
These baked pomegranate balsamic glazed ribs are so delicious. St. Louis style ribs marinated in spices, worcestershire, brown sugar, and fresh pomegranate juice then drizzled with balsamic glaze.

- Season the ribs: Using a large bowl, sprinkle salt, pepper, garlic powder, onion powder, smoked paprika, and dried parsley on the ribs. Then use your hands to rub spices into the meat.
- Marinate the ribs: In the same bowl, pour in the worcestershire, pomegranate juice, and sprinkle in the brown sugar. Again, use your hands to massage all the ingredients into the ribs. Cover the bowl with plastic wrap and transfer the bowl into the refrigerator. Allow the ribs to marinate for at least 3 hours or preferably overnight for best results.
- Bake the ribs: Preheat the oven to 350°F. Use a large baking sheet that is lined with aluminum foil on the bottom and pour about 1/2 cup of water onto the bottom of baking sheet. The water will help with moisture. Then fit the baking sheet with a wire rack. The wire rack ensures airflow and crispness on all sides of the ribs. Arrange the sliced ribs on the wire rack, reserve the marinade, and bake the ribs for 30 minutes.
- Baste the ribs: At halfway cooking mark, carefully take baking sheet out and baste the ribs with reserved marinade all over using a cooking brush or spoon. Then bake the ribs again for another 30 minutes or until ribs are cooked through completely.
- Glaze the ribs: Immediately drizzle balsamic vinegar glaze over the ribs while warm. Garnish with pomegranate arils, if desired. Serve ribs alongside your favorite side dishes and enjoy!
BALSAMIC-GLAZED OVEN-BAKED RIBS
Conventional wisdom holds that pork ribs taste best when cooked outdoors on a grill or smoker. Conventional wisdom hasn't experienced the sweet-sour balsamic-glazed St. Louis-cut spare ribs at Animal in Los Angeles. The restaurant's chefs, Jon Shook and Vinny Dotolo, prepare them in a way that most barbecue purists would never order, much less eat: baked in the oven. Here, their recipe has been adapted for the home cook.

- To prepare the ribs, heat the oven to 350 degrees. If the butcher has not removed the membrane on the back of each rack, gently pry it up by sliding a sharp implement (like the tip of an instant-read thermometer) under it, then lifting gently. Grab the membrane with a paper towel and peel it off.
- Spread a 24-inch sheet of heavy-duty aluminum foil, shiny side up, on a work surface. Place one rack on top, rub it all over with oil, and generously season both sides with salt. Place 2 parsley sprigs and 2 garlic cloves under the concave side of the rack and 2 thyme sprigs on top. Wrap the ribs in the foil, pleating the edges to seal well. Repeat with the second rack. Place the rib packets in a large roasting pan.
- Roast the ribs for 30 minutes, then reduce the temperature to 250 degrees. Cook 1 1/2 to 2 hours more, until the meat has shrunk back from the ends of the bones by 1/4 to 1/2 inch and the ribs are tender enough to pull apart with your fingers.
- Meanwhile, prepare the barbecue sauce. Place the balsamic vinegar in a large nonreactive saucepan. Bring to a boil over medium heat and cook until reduced by a third. Add the remaining barbecue sauce ingredients with 1/4 cup water, bring back to a boil, then reduce the heat to low and simmer until thick, 30 to 40 minutes. If the sauce starts to thicken too much, add a little water. The sauce should be highly seasoned; adjust to taste by adding vinegar, brown sugar or salt.
- Remove the ribs from the oven and let cool briefly, then open the foil, being careful of the escaping steam. Transfer the ribs to a baking sheet. Turn on the broiler or raise the oven to 450 degrees.
- Slather the ribs on both sides with the barbecue sauce. Broil the ribs until the sauce sizzles and browns, 2 to 4 minutes on each side. Alternatively, bake in the oven 8 to 12 minutes. Baste with the barbecue sauce and serve at once with any remaining sauce on the side.
POMEGRANATE-BRAISED SHORT RIBS
Add some jewel-like pomegranate seeds before serving -- they give tang and color and make the dish look fancy in a flash.

- Preheat oven to 275 degrees. In a large heavy pot with a tight-fitting lid, heat 2 tablespoons oil over high. Season short ribs with salt and pepper. In batches, brown ribs on all sides. Transfer to a plate, pour off oil, and wipe loose bits out of pot.
- Reduce heat to medium-high and add remaining 3 tablespoons oil to pot. Add onion, garlic, and thyme. Cook, scraping up browned bits with a wooden spoon, until onion is softened, 5 minutes. Add flour and stir to coat. Whisk in pomegranate juice and wine and bring to a boil, stirring frequently. Return ribs to pot, cover, and transfer to oven.
- Bake until ribs are easily pierced with the tip of a paring knife, about 3 hours. With a slotted spoon, carefully transfer ribs to a large platter. Strain liquid into a fat separator, let sit briefly, and return to pot, discarding fat (or, skim off fat with a spoon). Bring to a boil over medium-high and cook until reduced to a sauce-like consistency, 10 minutes. Strain through a fine-mesh sieve, season with salt and pepper, and pour over ribs. Top with pomegranate seeds.

- In a small bowl mix garlic, 3 Tablespoons of thyme leaves, salt, black pepper and olive oil. Pat roast dry with paper towels. Using your hands, spread the rub all over the roast. Let it sit for 1 hour at room temperature.
- While the rub sits, prepare the glaze. In a medium saucepan, add pomegranate juice, thyme sprigs, brown sugar and balsamic vinegar. Cook over medium high heat until it reaches a simmer. After 5 minutes, remove thyme sprigs. Bring to a boil and reduce the glaze until you have 1/2 a cup, about 10-12 minutes. Set aside 1/4 cup of the glaze for serving. The rest will be brushed on the roast during cooking.
- Preheat the oven to 450F. Place roast fat size up on roasting rack placed inside a deep pan. Pour 1 cup of beef broth and 1 cup of water in bottom of the pan (this will reduce smoke while it cooks). Cook roast for 15 minutes at 450F.
- Reduce oven temp to 325F and continue to roast for 40 minutes. Make sure to add more water to the bottom of the pan so the drippings don't burn.
