Steps:
- . Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. 2. Place all ingredients into a sangria pitcher. 3. Refrigerate and let stand 2 hours before serving. 4. For an individual serving, pour sangria over ice, top with fruit garnish. 5. Finish each serving with a splash of Cava Spanish Sparkling Brut. * This cocktail can be made with freshly squeezed juice from a POM Wonderful pomegranate or by using POM Wonderful 100% Pomegranate Juice. To juice the pomegranate, cut it in half (as you would a grapefruit) and juice using a citrus reamer or a juicer. Pour mixture through a cheesecloth-lined strainer or sieve. One POM Wonderful pomegranate will produce about ½ cup of juice.

- So here’s the deal: You may or may not want to add simple syrup. It will depend on the sweetness of your wine/fruit and your own preferences. I don’t have much of a sweet tooth but I still preferred my sangria with the full amount of simple syrup to balance out the harshness of the brandy. To make simple syrup, combine equal parts sweetener and hot water. Whisk until the sweetener has mixed into the water.
- Juice two of the blood oranges with a citrus juicer (or just squeeze the blood orange halves to extract the juice). Slice the remaining blood orange into thin rounds, then slice them through the middle to create half moons.
- In a pitcher, combine the blood orange juice, blood orange slices, pomegranate arils and brandy. For best flavor, let the fruit marinate in this mixture for a few hours, covered and chilled in the refrigerator. (Don’t worry, it’ll be great right away if you need it now.)
- When you’re ready to serve, pour in the sparkling rosé. Add simple syrup to taste. Use a ladle to divide the sangria and fruit into glasses.

- Rosé sangria. You’ll want to double up on this inventive rose-tinted sangria. Use nectarines or peaches as well as strawberries for a summery twist, and garnish with a sprig of mint for an extra dose of freshness.
- White wine sangria. Swap red for white and embrace this honey-coloured, elderflower-laced party punch. Scatter a few edible flowers on top before serving for a final flourish.
- Frozen sangria slushie. Who’d have thought a simple scoop of raspberry sorbet could take your standard sangria to something a little bit special? Our frozen raspberry sangria uses just a few ingredients and takes minutes to make.

- Juice one of the oranges into a large pitcher. Cut the other orange in quarters, thinly slice, and set aside.
- To the orange juice, add the wine, pomegranate juice, orange liqueur, brandy (or cognac), lemon juice and sugar. Stir until the sugar is dissolved. Stir in the apples, orange slices and pomegranate arils. Refrigerate overnight or at least a few hours before serving. Serve in wine glasses. (Ice is optional; I prefer it without as it dilutes the flavor.)
- Note: Spanish wines, like Garnacha or Tempranillo, are great for sangria. Any merlot, pinot noir, malbec, or red zinfandel would also work well — really, as long as the wine tastes good on its own, it will work. And you don’t need to spend a lot – something in the $10-$15 price range is perfect.

STRAWBERRY POMEGRANATE SANGRIA - SALLY'S BAKING ADDICTION
From sallysbakingaddiction.com
Estimated Reading Time 5 mins
- Place the sliced strawberries and arils in a large pitcher. Add wine and pomegranate juice. Allow to sit in the refrigerator for 6 – 24 hours. Taste; if you’d like it to be sweeter, add 1-2 Tablespoons granulated sugar, honey, or agave.
- Pour the sangria with fruit into glasses and add a splash of club soda to each glass (this unsweetened fizz is excellent with the sangria!). Garnish with a strawberry, if desired. Feel free to add ice to your glasses of sangria. Do not add ice directly to the pitcher – this waters the sangria down. Which, clearly, we don’t want! Cheers.
