CARIBBEAN STEAK MARINADE
This caribbean steak marinade brings the flavors of the islands to the dinner table in minutes! With only a few ingredients this marinade makes perfect steaks on the grill or in a skillet!

Steps:
- Whisk together the pineapple juice, soy sauce, and garlic.
- Pierce the steaks all over with a fork then place them in a zip top bag, or air tight container and pour the marinade over the steak. Squeeze the air out and seal the bag. Let marinate for 30 minutes, up to overnight. Marinating at least 2 hours will produce the best flavor.
- Heat the grill to medium-high heat. Once hot, place the steaks on the grill and cook 5-7 minutes per side.
- Remove from grill and let rest 5 minutes. Enjoy!

CROCK POT POLYNESIAN BEEF

- In a gallon size ziploc bag, add season salt, paprika, and ground ginger. Shake bag to mix. Add stew meat to seasoning, close bag and shake until all pieces are lightly covered. In a large skillet, add olive oil. Heat pan over medium heat. Once pan is hot, add stew meat. This may require a few batches (it took me 3 batches to do all of the meat). Sear the beef on each side. DO NOT FULLY COOK. Just get a nice sear on it to seal in the flavor. Once meat has a nice color, transfer to crock pot. Repeat with remaining batches. Add to crock pot, garlic, pineapple with juice, bouillon cubes, vinegar, onions and Rotel.. Cook on low for 4 - 6 hours (depending on your crock pot), until beef is cooked through and tender. In a small bowl combine brown sugar, cornstarch, water and soy sauce. Pour this over the beef, stir and cook on high for 30 minutes - 1 hour, or until mixture thickens. Serve over rice or mashed potatoes.

- Combine first 6 ingredients in a large zip-top bag; add steak to bag. Seal and marinate in refrigerator 3 hours, turning once.
- Prepare grill.
- Remove steak from bag, reserving marinade. Place steak on grill rack coated with cooking spray; grill 20 minutes or until desired degree of doneness, turing and basting frequently with the reserved marinade. Let stand 10 minutes before cutting diagonally across the grain into thin slices.

- At least 40 minutes, and up to 2 hours, before cooking, season each steak evenly on all sides with the salt and pepper and refrigerate, uncovered, until time to cook.
- Heat the pan over medium high to high heat until hot, then add the oil.
- Add steak to the hot skillet and let cook 3-4 minutes on the first side without touching it.
- Then flip each steak and turn the heat to low. Spread the crushed garlic on the top of each steak (cooked side) and top with a pat of butter and fresh thyme.
- Cover the pan with a lid and cook 5-10 more minutes until it reaches your desired level of doneness measured by temperature (see chart below.) Before removing from the heat, spoon the melted butter from the pan back over the top of the steak
- Remove from heat, cover with foil, and allow to rest for 15 minutes before serving.
