POLYNESIAN PINEAPPLE DESSERT RECIPE - (5/5)



Polynesian Pineapple Dessert Recipe - (5/5) image

Number Of Ingredients 9

30 ritz crackers
1/4 cup butter or margarine
4 egg yolks
1/2 cup sugar
2 cups crushed pineapple, undrained
1 3-ounce package lemon gelatin
4 egg whites
1/2 cup sugar
1 cup whipping cream

Steps:

  • Crush or grind crackers into fine crumbs. Mix thoroughly with butter. Set aside 1/4 cup of the crumbs for topping. Press remaining crumbs evenly over bottom of a 9×12-inch glass dish. Bake at 350 degrees for 7 minutes. Set crush aside. Beat eggs yolks, then combine with 1/2 cup sugar and crushed pineapple. Place mixture on medium heat and bring to a boil. Stir constantly. Turn heat to low and continue to stir until mixture is thickened. Add gelatin. Stir immediately until gelatin is completely dissolved. Cool over ice or in the refrigeratr until gelatin starts to thicken. Beat egg whites until foamy. Gradually add 1/2 cup sugar white beating to a soft peak. Carefully fold the beaten egg whites into the pineapple mixture. Pour over the baked crust. Whipe cream,. sweetene to taste, and spread evenly over the pineapple mixture. Sprinkle the 1/4 cup crumb mixture evenly over the whipped cream.

I had this dessert at a dinner recently. I havent actually made it myself, but here's the recipe from the hostess.

1 (20 ounce) can pineapple tidbits
1 (3 3/4 ounce) box vanilla pudding mix
1 (3 ounce) box lemon Jell-O gelatin
1 (4 ounce) carton non-dairy whipped topping
2 cups vanilla cookie crumbs
1/4 cup melted butter

Steps:

  • Drain pineapple, reserve juice.
  • Add water to juice to make 2 cups liquid.
  • Combine pudding mix, gelatin and measured liquid in medium saucepan.
  • Cook, stirring, over medium heat until mixture comes to full boil.
  • Pour into a bowl; chill until thickened.
  • Fold thawed topping into pudding mixture.
  • Meanwhile, combine cookie crumbs and melted butter.
  • Press into 9-inch square baking pan.
  • Bake in 375 degrees oven 8 minutes; cool.
  • Pour pudding mixture into cooled crust.
  • Top with pineapple.
  • Chill about 2 hours until firm.

This recipe is from week six of my food blog, "Travel by Stove." I am attempting to cook one meal from every country on Earth, and American Samoa is my sixth stop. This is a very tasty pineapple dessert with a hint of coconut. It comes together a lot like a calzone.

2 cups drained crushed pineapple
1 cup sugar
1/2 cup milk
1/3 cup cornstarch
1/3 cup reserved juice from crushed pineapple
3 cups flour
2 teaspoons baking powder
1/3 cup butter
1 cup coconut milk
1 pinch salt

Steps:

  • Combine the pineapple, sugar and milk into a saucepan and heat until simmering. Be careful not to boil or the milk will curdle.
  • Now mix the cornstarch with the reserved pineapple juice until it is smooth, and add to the pineapple. Stir until the mixture thickens, then remove from the heat and let cool.
  • Put all of the dough ingredients into a bowl and blend until a dough forms. Divide the dough into five parts, then roll each part into an 8-inch circle.
  • Spread some onto one half of each circle. Fold the other half over the top, stopping about a quarter inch from the edge. Fold the bottom quarter inch over the top edge, then crimp with a fork. Repeat until you've finished all of your pies.
  • Prick a couple of holes in the top and put into a 375 degree oven for 30 to 35 minutes.
