This recipe is absolutely delicious. It is very summery recipe since you can grill and enjoy a nice summer afternoon. I got this recipe from the Publix Family Style Magazine Summer 2010 edition. I have made the recipe once and cant wait to make it again. It is very good and can be made pretty quickly!

3/4 cup pineapple juice (sweetened or unsweetened)
2 tablespoons honey
1 tablespoon dijon-style mustard
1 tablespoon soy sauce
1 1/2 teaspoons cornstarch
1 garlic clove, minced
12 chicken thighs (skinned if desired) or 12 chicken drumsticks (skinned if desired)
salt
fresh ground pepper

Steps:

  • For the sauce, in a small saucepan combine pineapple juice, honey, mustard, soy sauce, cornstarch and garlic. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 1 more minute. Remove from heat. Transfer half of the sauce to a bowl; cover and set aside.
  • Sprinkle chicken with salt and pepper. For charcoal grill arrange medium-hot coals around drip pan. Test for medium heat above the pan. Place chicken on grill rack over drip pan. Cover; grill until chicken is no longer pink or 165 degrees Farenheit, brushing frequently with remaining sauce during the last 5 minutes of grilling. (For gas grill preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above.).
  • Note: If you do not have cornstarch on hand, you can substitute with 3 Tsp of all purpose flour.

8 ounces boneless skinless chicken breast
Salt ((to taste))
1/8 teaspoon white pepper
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
¼ cup all purpose flour
¼ teaspoon baking powder
⅛ teaspoon salt
⅛ teaspoon paprika
⅛ teaspoon turmeric
½ cup cold club soda ((or beer))
4 cups canola oil for frying
2 cloves garlic ((minced))
½ cup button or cremini mushrooms ((sliced))
¼ cup bamboo shoots ((julienned))
½ cup red bell pepper ((julienned))
2 teaspoons Shaoxing wine
4 cups napa cabbage ((shredded))
1 tablespoon soy sauce
1 teaspoon dark soy sauce
¼ teaspoon salt
¼ teaspoon sugar
½ teaspoon sesame oil
1 teaspoon oyster sauce
Freshly ground white pepper
1 cup snow peas ((ends trimmed and cut in half lengthwise))
¾ cup hot chicken stock or water
1 tablespoon cornstarch ((mixed with 1 tablespoon water))

Steps:

  • Carefully split the chicken breast into two thinner pieces that are roughly the same size. Sprinkle the salt, white pepper, onion powder, and garlic powder on both sides of the chicken breast, and set aside.
  • Make the batter by mixing all of the batter ingredients in a bowl until combined. Do not overmix! Meanwhile, heat 4 cups of canola oil in a small wok or cast-iron frying pan until it reaches 350 degrees F. Use a candy thermometer to check the temperature, because you don't want to burn the batter before the chicken is cooked.
  • Dip both of the chicken breasts into the batter and fry until golden brown (about 2-3 minutes on each side), turning the chicken pieces often in the oil. Set the fried chicken aside on a wire rack to drain off any excess oil.
  • If you are unsure whether or not the chicken is done, you can cut into one of the pieces to make sure the juices are no longer pink. However, the chicken is cut thin, so it's relatively easy to cook it until it's just done. This is important for achieving a tasty chicken dish.
  • Heat your wok over high heat, and add 1 tablespoon of the frying oil to your wok. Add the garlic, mushrooms, bamboo shoots, and red bell peppers, and stir-fry for 30 seconds. Add in the Shaoxing wine, followed by the napa cabbage. Continue to stir-fry for 30 seconds, and stir in the soy sauces, salt, sugar, sesame oil, oyster sauce, and white pepper.
  • Next, add the snow peas and give everything a quick stir. Add the hot chicken stock. Let the sauce come to a boil, and add the cornstarch/water mixture. Stir-fry for another 30 seconds until the sauce has thickened enough to coat a spoon.
  • Transfer the vegetable mixture to a plate. Slice the chicken into 1½-inch wide pieces, and place on top of the bed of vegetables. Serve immediately with white rice!

3 tablespoons low sodium soy sauce
3 tablespoons sugar
2 tablespoons rice wine vinegar
1 tablespoon cornstarch
1 tablespoon canola oil
1 lb boneless skinless chicken breast, cut into 1/2-inch pieces
1 tablespoon minced peeled fresh ginger
2 carrots, thinly sliced
1/2 lb snow peas, trimmed
1/4 cup slivered almonds
1 (8 ounce) can water chestnuts, drained
1 (8 ounce) can pineapple chunks in juice, drained

Steps:

  • In a bowl, combine the ketchup, soy sauce, sugar, vinegar, and cornstarch.
  • Heat 2 teaspoons oil in a large nonstick skillet over med-high heat.
  • Add in chicken; cook, stirring occasionally, until cooked through, 5-6 minutes; remove chicken from skillet and reserve.
  • Add remaining 1 teaspoon oil, ginger, and carrots to the skillet; cook, stirring occasionally, until the carrots begin to soften, about 2 minutes.
  • Stir in the snow peas, almonds, water chestnuts, pineapple, and reserved chicken.
  • Cook, stirring often, 3-4 minutes; add the ketchup mixture; bring to a boil and cook, stirring constantly, until thickened, about 1 minute.
  • Serve over brown rice or rice noodles.

1/2 teaspoon garlic powder
1/2 teaspoon nutmeg
1 teaspoon paprika
4 boneless skinless chicken breasts
reserved pineapple juice
1/4 cup soy sauce
1 tablespoon brown sugar
1 (14 ounce) can pineapple chunks, drained and juice reserved
1/4 cup pitted black olives (optional)

Steps:

  • Mix together first 5 ingredients.
  • Arrange chicken in a greased roasting pan; sprinkle with spice mixture.
  • Sir together pineapple juice, soy sauce, and sugar in a small bowl.
  • Drizzle over chicken.
  • Cover and bake in a preheated 375* oven for about 45 minutes to 1 hour until tender.
  • Scatter pineapple and olives (if using) over chicken.
  • Bake, uncovered, for about 5-10 minutes until heated through.

2 pounds boneless skinless chicken breasts
1 cup barbecue sauce
1 cup crushed pineapple, undrained
1 medium onion, chopped
3/4 cup frozen pepper strips, thawed
1/4 cup sweetened shredded coconut
1 tablespoon minced garlic
1 tablespoon reduced-sodium soy sauce
1 teaspoon salt
1 tablespoon cornstarch
1/4 cup water
6 hoagie buns, split
Minced fresh cilantro, optional

Steps:

  • In a 3- or 4-qt. slow cooker, combine the first nine ingredients. Cook, covered, on low 3-4 hours or until a thermometer reads 165°. Remove chicken; cool slightly., Meanwhile, in a small bowl, mix cornstarch and water until smooth; gradually stir into cooking juices. Cook, covered, on high 15-20 minutes or until sauce is thickened. Shred chicken with two forks. Return to slow cooker; heat through., Serve with buns and, if desired, sprinkle with cilantro. 2 teaspoons paprika
2 teaspoons salt, divided
6 boneless chicken breasts
1/4 cup butter
3/4 cup brown sugar
1 tablespoon cornstarch
1 teaspoon ground ginger
3/4 cup pineapple juice
1/4 cup vinegar
2 tablespoons soy sauce
1 cup pineapple tidbits
1 small green bell pepper, julienned

Steps:

  • Preheat oven to 400 degrees.
  • Combine flour, paprika and 1 teaspoon salt in a resealable bag. Add chicken and seal tightly. Shake until coated.
  • Heat butter in an ovenproof skillet over medium-high heat. Add chicken and cook until lightly browned on both sides about 10 minutes.
  • Mix brown sugar, cornstarch, ginger and remaining salt in a medium saucepan. Stir in pineapple juice, vinegar and soy sauce. Add pineapple tidbits and bell pepper.
  • Spoon sauce over chicken. Place chicken in over and bake chicken, basting occasionally with pineapple mixture for 30 minutes or until chicken is cooked through or sauce is thickened up.

1 cup thousand island dressing (I recommend Thousand Island Dressing)
1 cup orange marmalade
2 tablespoons onion soup mix (I recommend Copycat Lipton's Onion Soup Mix)

Steps:

  • Arrange chicken thighs in greased 9 x 13 inch pan.
  • Combine remaining 3 ingredients in small bowl. Pour over chicken. Bake, covered, in 350ºF (175ºC) oven for about 1 1/2 hours, turning chicken halfway through cooking time, until no longer pink inside. Remove cover for last 15 minutes to thicken sauce if desired.
  • **For OAMC: place all ingredients into a large ziploc bag. Label and Freeze. TO serve: Defrost overnight, dump ingredients into baking pan and cook until done, about 1 1/2 hours.**.
  • I think this would also work in a crockpot as well.
