POTATO PANCAKES POLISH



Potato Pancakes Polish image

These can be served with sour cream or apple sauce. As a side or appetizer. My Mom made them in a blender but I think grating them is more time consuming but you'll get a better texture. I'm posting these for world tour and because my DH's requesting them!

1 3/4 lbs firm potatoes, peeled
1 large sweet onion, finely grated
1 finely minced garlic clove
1 large egg yolk, lightly beaten
2 tablespoons flour
3/4 teaspoon salt
1 pinch pepper
1 pinch cayenne pepper
1 tablespoon minced fresh parsley
1 large egg white, beaten stiff
vegetable oil or peanut oil

Steps:

  • Finely grate potatoes and rinse with cold water 3 times till water runs clear. Add potato, onion in a large bowl with garlic. Drain and press out as much moisture as possible, using paper towels.
  • Add egg yolk, flour, salt, peppers and parsley. Mix thoroughly.
  • Fold in egg white.
  • In a heavy skillet, pour in 1/4-inch of the oil and heat over high heat. For each pancake, drop in a heaping tablespoon of the mixture and press down with spatula. Brown until crisp on both sides.
  • Enjoyed season with salt and pepper.

This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

1/2 cup all-purpose flour
1/2 cup milk
1/4 cup water (lukewarm)
2 large eggs
2 tablespoons butter (melted)
1/2 teaspoon salt
Optional: 1 tablespoon butter for frying

Steps:

  • Gather the ingredients.
  • In a blender or food processor , combine flour, milk, water, eggs, butter, and salt and process until smooth.
  • Transfer batter to a pitcher. Cover the pitcher with plastic wrap and let rest for 30 minutes so liquid can be absorbed by the flour.
  • Heat a crepe pan or small skillet over medium heat and lightly coat with butter. Using a 2-ounce ladle, spoon 1 portion of batter into pan.
  • Immediately rotate pan and swirl batter until it covers the entire bottom of the pan. Cook until crepe is lightly brown or spotted brown on underside. Flip and cook second side until it is light brown.
  • Remove crepe to waxed paper or parchment paper and repeat with remaining batter. You may need to recoat the pan with butter as you cook crepes.
  • Place 2 heaping tablespoons of savory filling or sweet filling on each naleśniki. Fold sides in first and then fold bottom up, rolling away from yourself, similar to an egg roll or burrito.
  • Filled naleśniki should then be pan-fried in butter over medium-high heat or baked in a buttered casserole dish at 350 F until the filling is set.

This recipe adapted from www.kwestiasmaku.com gives instructions on how to prepare naleśniki. If meant to be eaten as a dessert, you can add a teaspoon of sugar, but that's only optional.

1 cup (120g) flour
2 eggs
1 cup (240 ml) milk
3/4 cup (180 ml) water (preferably carbonated)
pinch of salt
1 tsp sugar, optional
3 tbsp butter or vegetable oil

Steps:

  • Add flour, eggs, milk, water, and salt in a large bowl then mix with a hand mixer until you have a smooth, lump-free batter.
  • At this point, mix in the butter or the vegetable oil. Alternatively, you can use them to grease the pan before frying each pancake.
  • Heat a non-stick pan over medium heat, then pour in the batter, swirling the pan to help it spread.
  • When the pancake starts pulling away a bit from the sides, and the top is no longer wet, flip it and cook shortly on the other side as well.
  • Transfer to a plate. Cook the remaining batter until all used up.
  • Serve warm, with the filling of your choice.

3/4 cup strawberry jam
2 cups frozen sliced peaches, thawed

Steps:

  • Beat eggs until foamy.
  • Add milk, flour, salt and sugar. Beat well.
  • Melt 1 teaspoon butter in a 9-inch skillet, tilting to cover entire bottom.
  • Pour 1/4 of egg mixture into hot skillet, covering the surface evenly. Cook until firm enough to roll.
  • Slip pancake from skillet onto clean cloth.
  • Spread with jam and peaches and roll up.

  • Peel and finely grate the potatoes either in a food processor or using a grater. Add the salt and stir well.
  • Place the mixture in a strainer and put on top of a bowl for a minute or two. Stir a little but do not squeeze all the water out. The mixture should still be moist.
  • Slowly pour the water out being careful not to get rid of the white starchy mixture that will have accumulated at the bottom of the bowl. Place 1 tablespoon of this mixture back intothe potato. Alternatively add 1 tablespoon of plain flour into the potato mixture.

Then, flip the pancakes and cook on the second side for 2-3 minutes, until golden. Remove the pancakes from the pan to a paper towel lined plate.
  • Repeat the process with the remaining dough, adding more oil as necessary. (You can keep the finished pancakes on a plate in a 200⁰F oven to stay warm while you cook the rest. But, the pancakes are best crisp and fresh from the pan. So if you can serve them straight from the pan, do so.)
